BAKED POTATO CROQUETTES

- For the baked potato croquettes: Preheat the oven to 350 degrees F. Wash and bake the potato on a rimmed baking sheet or large pot, until fork tender, about 45 minutes. Cool and put through a ricer in a large bowl. Add the butter, bacon, sour cream, milk, green onion, salt, pepper. Mix together and form 4 balls. Place 1 piece of cheese in the center of each ball.
- For the egg wash: Whisk the egg and milk together in a shallow bowl. Place the flour in a second shallow bowl. Roll the balls in the flour and then the egg wash, then again in the flour.
- For frying: Heat the canola oil to 350 degrees F in a deep fryer or large pot. Deep fry the croquettes in batches in the oil until golden brown and hot in the middle, 3 to 4 minutes.
TWICE BAKED POTATOES

- Preheat the oven to 350 degrees F. Prepare a small casserole dish by spraying with canola spray.
- Pierce the potatoes all over with a fork. Place in the microwave and cook on medium, turning once, until the potatoes are soft, about 20 minutes. Set aside to cool, about 5 minutes.
- Cut off the top third of the cooked potatoes. Scoop out the insides and place into a medium bowl. Add the green onions and mash together. Add the garlic, bacon, 1 cups cheese, salt, pepper and sour cream. Mix together well.
- Nestle the hollowed out potatoes in the prepared dish. Evenly divide the potato mixture among the potato shells and top with the remaining 1/4 cup cheese. Place the potatoes into the oven and cook, about 20 minutes. Remove from the oven and serve immediately.
TWICE BAKED POTATOES

- Preheat the oven to 400 degrees F.
- Place the potatoes directly on the rack in the center of the oven and bake for 30 minutes. Pierce each potato in a couple spots with a fork and continue to bake until tender, about 30 minutes more. Remove potatoes from the oven, and turn the heat down to 375 degrees F.
- Hold the potato with an oven-mit or towel, trim off the top of the potatoes to make a canoe-like shape. Reserve the tops. Carefully scoop out most of the potato into a bowl. Take care to leave enough potato in the skin so the shells stay together. Mash the potato lightly with fork along with 2 to 3 tablespoons of the butter and sour cream. Stir in the scallion, nutmeg, and season with salt and pepper, to taste. Season the skins with salt and pepper. Refill the shells with the potato mixture mounding it slightly. Sprinkle the cheese on top of the potato filling. Brush the reserved top with the remaining butter and season with salt and pepper.
- Set the potatoes and lids on a baking sheet, and bake until heated through, about 20 minutes. Serve immediately.

TWICE BAKED POTATOES
Easy and good. Feel free to add any ingredients or spice that you like. I like to make extras, freeze wrapped in foil and add the cheeses later when potatoes are thawed and reheated.

- Preheat oven to 350°F.
- Clean and scrub baking potatoes.
- Pierce skin with a fork once or twice.
- Bake at 350°F 1 hour or until tender.
- Let potatoes cool slightly.
- Cut baked potatoes in half and scoop out within 1/4 inch of edge.
- Mash with milk, green onions, s&p, and butter.
- Stuff shells with mashed potato.
- Sprinkle tops with cheeses (and bacon if used).
- Place on a baking sheet and bake at 350° for 15 minutes or until cheese is melted.
- Serve with sour cream.

- Microwave (or bake in oven at 400 for 1hr) the potatoes until done.
- Allow to cool a bit.
- Slice about a 1" strip of the skin off the top of each potato.
- Carefully scoop out the pulp, placing in a large bowl, and leaving potato shells intact.
- Mash the potato pulp along with the margarine.
- Add milk, sour cream, cheese, salt and pepper; combining well.
- Spoon the mixture back into the potato shells, piling high.
- Top with the crumbled bacon or bacon bits.
- Bake at 400 for 15 minutes.
TWICE COOKED BABY POTATOES

- Boil potatoes about 15 minutes or until just tender, and drain.
- Coat with olive oil and let cool until cool enough to handle.

- Preheat the oven to 400 degrees F.
- Place the potatoes on a baking sheet. Rub them with the canola oil and bake for 1 hour, making sure they're sufficiently cooked through.
- Slice the butter into pats. Place in a large mixing bowl and add the bacon bits and sour cream. Remove the potatoes from the oven. Lower the heat to 350 degrees F.
- With a sharp knife, cut each potato in half lengthwise. Scrape out the insides into the mixing bowl, being careful not to tear the shell. Leave a small rim of potato intact for support. Lay the hollowed out potato shells on a baking sheet.
- Smash the potatoes into the butter, bacon and sour cream. Add the cheese, milk, seasoned salt, green onions and black pepper to taste and mix together well. (IMPORTANT: If you plan to freeze the twice-baked potatoes, do NOT add the green onions.)
- Fill the potato shells with the filling. I like to fill the shells so they look abundant and heaping. Top each potato with a little more grated cheese and pop 'em in the oven until the potato is warmed through, 15 to 20 minutes.
CRISP TWICE-ROASTED POTATOES
This is my new favorite way of doing potatoes. I've tried different kinds but have found the red-skinned potato to work best. The recipe is from A New Way To Cook by Sally Schneider.

- Preheat the oven to 375 degrees.
- Pierce the potatoes in several places and place on a baking sheet and roast until very tender, about 1 hour.
- While the potatoes are still hot,smash them lightly, one by one, with the bottom of a glass until they are about 1/2-inch thick.
- Lightly brush the top with olive oil and put back into the oven to roast again for about 45 minutes.
- Flip occasionally and brush the other side with olive oil.
- When they are brown and crisp, remove from the oven and sprinkle with salt and pepper and serve.
- If you would like to do this ahead of time, you can roast the small potatoes and lightly smash them, then let them cool to room temperature.
- They can now be refrigerated or frozen.
- If you freeze them, thaw slightly and then continue with the second baking in the oven as directed.
TWICE COOKED POTATO CROQUETTES
I made these little croquettes for a Christmas brunch one year with ham and mini frittatas. They were yummy!

- Mix the mashed potatoes with the cheese and scallions. The potatoes that I make typically have sour cream and/or cream cheese. If you prefer the rich flavor please add a little of each to the mixture (if it is not already there in the left overs).
- Roll the potato mixture into 2 inch round balls.
- Mix Flour, Panko Crumbs, salt, and Pepper in a shallow bowl. In another shallow bowl, whisk eggs.
- Roll each potato croquette in the egg mixture and then in the bread crumb mixture to coat evenly. Shake off the excess. I like to use one hand for wet and one hand for dry to avoid washing my hands after every croquette.
- Heat a saute pan with 1.5 inches of olive oil over medium-high heat. When oil is hot (but not smoking) -- you can tell by placing the handle of a wooden spoon into the middle of the pan -- if the bubbles rise but don't smoke, the heat is perfect.
- Add Croquettes and fry until golden brown on the outside. Place on paper towel covered strainer to remove the excess oil. Cook in batches to keep the temperature high and oil clean.
- Enjoy with a crisp sour cream and chive sauce.
- Note - I've wanted to try this recipe with some bacon in the mixture or crumbled on top to serve but just haven't done it yet. Let me know if it tastes good!
