A comforting creamy white bean soup with smoky thick-cut bacon, tender vegetables and fragrant herbs-it's warming coziness in a bowl.

12 ounces apple smoked bacon, chopped into small pieces
1 tablespoon olive oil
1 tablespoon butter
1 onion, small dice
2 carrots, small dice
2 celery stalks, small dice
4 cloves garlic, pressed through garlic press
2 teaspoon Italian seasoning
Pinch or two sea salt
1/2 teaspoon cracked black pepper
6 (15 ounce) cans small white beans (or navy beans), drained and rinsed
4 cups chicken stock, hot
2 tablespoons flat-leaf parsley, chopped
1 teaspoon lemon zest
2 tablespoons lemon juice

Steps:

  • Place a large Dutch oven, or heavy bottom pot, over medium-high heat.
  • Once the pot is hot, add in a small drizzle of olive oil, and the chopped bacon; crisp the bacon completely until nice and brown, then remove with a slotted spoon, drain it on some paper towel, and set it aside for a moment; reserve about 1 tablespoon of the bacon fat, and set that aside for a moment, as well; wipe out the pot, and return it to medium-high heat.
  • Next, add back into the pot the bacon fat, along with the olive oil and the butter, and allow them to melt together.
  • Once butter is melted and sizzling, add in the diced onion, carrots and celery, and allow them to soften and saute for about 5 minutes.
  • Next, add in the garlic, and once it becomes aromatic, add in about 2/3 of the reserved, crisped bacon, as well as the Italian seasoning, the sea salt and the pepper, along with the white beans, and stir to combine.
  • Now add in the hot chicken stock, stir, and allow the soup to gently simmer for about 40-45 minutes, partially covered with lid.
  • About half way through the cooking process, mash the beans a little bit with the back of your spoon, or with a potato masher, to break up the beans a little bit and release their natural starch to thicken the soup.
  • After about 40 minutes, turn the heat off and finish the soup by adding in the chopped parsley, the lemon zest and the lemon juice.
  • Serve the soup with some nice, crusty bread to dip, and garnish with some of the remaining crisped bacon.

Steps:

  • Add vegetable broth and beans, bring to a boil, reduce heat and simmer for 15 minutes to combine all of the flavors together.
  • Stir in the spinach and continue to simmer until the spinach wilts, about 2 minutes

This is from Oneota Community Food Coop in Decorah Iowa. I picked it up with a bad of bulk mixed beans. I posted a photo of the bean mixture so you could see all the different beans and grains in it.

2 cups dry 18 bean soup mix
2 quarts water
1 ham hock
1 1/4 teaspoons salt
1/2 teaspoon pepper
1 large onion, chopped
1/4 chili powder
1 pint tomatoes
1 garlic clove, minced
3 tablespoons lemon juice

Steps:

  • Wash the beans and place in a Dutch oven.
  • Cover with water and soak overnight.
  • Drain the beans and add the water, ham hock, salt and pepper.
  • Cover and bring to a boil.
  • Reduce heat and simmer 1 1/2 hours until beans are tender.
  • Add the remaining ingredients.
  • Simmer 30 minutes more, stirring occasionally.
  • Remove ham hock from the soup.
  • Remove from bone, chop and return meat to the soup.
  • Serve with your favorite homemade bread.

2 ounces thinly sliced prosciutto
1 yellow onion, quartered lengthwise
1 celery stalk, quartered crosswise
1 carrot, quartered crosswise
2 cloves garlic, peeled and lightly crushed
1 bay leaf
1 quart chicken stock
Finely ground sea salt, preferably gray salt
2 tablespoons extra-virgin olive oil
1/2 cup freshly grated Parmesan, optional
6 slices country-style bread, each 3/4-inch thick
Extra-virgin olive oil

1 tablespoon minced garlic
1/4 to 1/2 teaspoon red pepper flakes

Steps:

  • Cook the beans: Rinse the beans, place in a saucepan, and add cold water to cover by 2 inches. Bring to a boil, cover, and remove from the heat. Let stand for about 20 minutes, then drain.
  • Return the beans to the saucepan along with the prosciutto, onion, celery, carrot, garlic, and bay leaf. Pour in the chicken stock and then add water as needed to cover the beans by 2 inches. Slowly bring to a simmer over medium-low heat. (If you heat them too fast, the skins may break.) Adjust the heat to maintain a bare simmer and cook, uncovered, until the beans are almost tender, 20 minutes or longer, depending on the age of the beans. Add salt, to taste, and continue cooking until the beans are tender but not mushy, about 20 minutes longer. Remove from the heat and let the beans cool in the liquid.
  • Meanwhile, make the bruschetta: Preheat a stove-top grill pan. Place the bread slices in a single layer on the grill pan and toast until each side is crisp and has grill marks, about 6 minutes. (You can also toast the bread in a 500 degrees F oven on a baking sheet.) Remove from the pan and lightly brush the bread slices on both sides with olive oil, then season lightly with salt. Let cool.
  • Strain the cooled beans and other solids through a sieve, reserving the liquid. In a food processor, puree the beans and solids in batches with 3 1/2 cups of the cooking liquid and 2 tablespoons olive oil. Using a rubber spatula, push the solids through a fine mesh sieve into a clean large saucepan (you should have about 6 cups of soup in the saucepan). Season, to taste, with salt and pepper, then bring to a simmer over medium heat, stirring occasionally.
  • Meanwhile, in a small skillet over high heat, warm the 1/4 cup olive oil. Turn on the fan above your stove. Add the garlic to the skillet and cook, stirring occasionally, until it begins to turn brown. Add the red pepper flakes and cook for a few seconds, then add the basil. Cook until basil wilts.
  • To serve, ladle the hot soup into warmed bowls. Top the soup with the basil mixture. Serve bruschetta with each bowl, adding Parmesan, if desired.

2 cans (28oz - 800 grams) cannellini beans or white beans, drained
1 medium-size onion, diced
1 celery stalk, diced
1 large carrot, diced
1-2 garlic cloves, diced or pressed
1 cup (7 oz - 200 grams), frozen spinach * ((optional))
2 medium-size potatoes, peeled and cut into chunks
1 Tbsp olive oil, plus more for serving
1 Tbsp tomato paste
1/3 cup (80 ml) white wine ()
1 sprig rosemary (or 1 Tbsp of chopped fresh leaves/1/2 tsp of dried)
2 cups (500 ml) vegetable broth or hot water ()
1/2 tsp paprika ((optional))
1/2 tsp fine salt, plus more to taste
1/8 tsp black pepper, plus more to taste

Steps:

  • Warm the olive oil in a large pot over medium heat. Once the oil is shimmering, add the diced onion, carrot, and celery. Cook, stirring often, until the onion has softened and is turning translucent, about 5 minutes.
  • Add the garlic, beans, tomato paste, potatoes, rosemary (whole sprig, chopped, or dried, whatever it's easier for you) and paprika (if you use it). Cook stirring frequently, about 1 minute.
  • Add the wine, stir well and let it simmer until it has evaporated, cooking for another minute.
  • Then add the frozen spinach, the vegetable broth and a good pinch of salt and pepper. Raise the heat and bring the mixture to a boil, then cover the pot, reduce heat and cook gently for 15 minutes.
  • When the potatoes are soft and the soup is thick and creamy, remove the pot from heat, then remove the sprig rosemary*. Taste and season with salt and pepper. (I usually add a pinch of salt at the beginning + 1/2 tsp later. You might need more salt, depending on your vegetable broth and on your personal preferences.)*
  • Divide into bowls, drizzle with olive oil or extra virgin olive oil, and more freshly ground black pepper if you like. Serve with crusty whole grain bread and, if you don't keep it vegan, add freshly grated parmesan cheese for extra flavor. Enjoy!

1 lb pork
1 large onion (for the soup)
2 large carrots
1 1/2 cup white beans
qt boiled water
2 tbsp salt (adjust to taste)

2 bay leaves (optional)

Steps:

  • Cut pork into 2-inch cubes. Slice one of the onions into rings and place directly on top of the pork. Press down on the onions lightly to squeeze out some of their juice. Place in the fridge to marinate overnight.
  • Take the pork out of the refrigerator. Remove the onions and throw them away. In an oiled soup pot over medium heat, sear the sides of the pork until they brown.
  • Add the diced onions and sliced carrots. Sauté until the veggies turn golden brown.
  • Add the white beans, bay leaves and boiled water. Lower the heat to a simmer and cook for an hour and a half. Season with salt and pepper. Note: You may need to add more water, as the beans tend to absorb liquid.

Steps:

  • Heat the oil in a large pot over medium-high heat.
  • Add the onion, garlic and saute for 2-3 minutes, or until the onion softens.
  • Then, add the carrots and celery and cook for 4- 5 minutes, stirring often. Stir in the beans, tomato paste, sprinkle the seasonings, and add the bay leaves.
  • Pour the broth and bring to a boil, then let the soup simmer for 15-20 minutes.

1 yellow onion, chopped
1 large carrot, chopped
1 (10 ounce) can golden corn, drained
salt and pepper to taste
5 cups chicken broth
1 (15.5 ounce) can white beans
1 cup diced fresh tomatoes
1 teaspoon dried thyme
1 teaspoon dried summer savory
1 teaspoon dried parsley

Steps:

  • Heat oil in a large stock pot over medium-high heat. Saute garlic and onion until tender, approximately 5 minutes. Stir in carrot and corn, season with salt and pepper, and cook another 2 to 3 minutes. Pour in chicken broth, beans, tomatoes, thyme, savory, and parsley, and bring to a low boil. Reduce to a simmer, cover, and cook approximately one hour.
  • Separate soup into 2 equal portions, and allow to cool to room temperature. Once cooled, puree half of the batch in a blender or food processor until smooth. Return both batches to the stockpot, and heat until warmed through. Adjust seasoning with salt and pepper as needed. Serve hot.

8 slices Center Cut Bacon, chopped
3 cups (340g) White Onion, diced (about 2 large onions)
1 pound Ground Chicken (97/3)
3 cans (15 oz each) White Kidney Beans, undrained
16 oz jar Salsa Verde
4 cups Low Sodium Chicken Broth
10 cloves Garlic, peeled and roughly chopped
1 tablespoon Ground Cumin
1 tablespoon Ground Coriander
1 tablespoon Dried Oregano
4 Corn Tortillas, chopped

Steps:

  • Add the onion and bacon to an Instant Pot, pressure cooker, or soup pot at room temperature. Turn the sauté function on or use a medium-high heat to cook until slightly brown, about 12-15 minutes. The bacon shouldn't be crispy.
  • Add the ground chicken and break apart to fully cook. Be sure to use any juices from the chicken to deglaze the pot as it cooks.
  • Once the chicken is cooked, add the remaining ingredients and stir everything together.
  • Seal and pressure cook for 20 minutes with quick release pressure. Or bring to a boil before reducing to a simmer for about 30 minutes on the stovetop until the soup thickens.
  • Salt and pepper to taste. Top with cilantro, avocado, jalapeño, and sour cream or fat free Greek yogurt. Serve with tortilla chips, if desired.

2 cans (28oz - 800 grams) cannellini beans or white beans, drained
1 medium-size onion, diced
1 celery stalk, diced
1 large carrot, diced
1-2 garlic cloves, diced or pressed
1 cup (7 oz - 200 grams), frozen spinach * ((optional))
2 medium-size potatoes, peeled and cut into chunks
1 Tbsp olive oil, plus more for serving
1 Tbsp tomato paste
1/3 cup (80 ml) white wine ()
1 sprig rosemary (or 1 Tbsp of chopped fresh leaves/1/2 tsp of dried)
2 cups (500 ml) vegetable broth or hot water ()
1/2 tsp paprika ((optional))
1/2 tsp fine salt, plus more to taste
1/8 tsp black pepper, plus more to taste

Steps:

  • Warm the olive oil in a large pot over medium heat. Once the oil is shimmering, add the diced onion, carrot, and celery. Cook, stirring often, until the onion has softened and is turning translucent, about 5 minutes.
  • Add the garlic, beans, tomato paste, potatoes, rosemary (whole sprig, chopped, or dried, whatever it's easier for you) and paprika (if you use it). Cook stirring frequently, about 1 minute.
  • Add the wine, stir well and let it simmer until it has evaporated, cooking for another minute.
  • Then add the frozen spinach, the vegetable broth and a good pinch of salt and pepper. Raise the heat and bring the mixture to a boil, then cover the pot, reduce heat and cook gently for 15 minutes.
  • When the potatoes are soft and the soup is thick and creamy, remove the pot from heat, then remove the sprig rosemary*. Taste and season with salt and pepper. (I usually add a pinch of salt at the beginning + 1/2 tsp later. You might need more salt, depending on your vegetable broth and on your personal preferences.)*
  • Divide into bowls, drizzle with olive oil or extra virgin olive oil, and more freshly ground black pepper if you like. Serve with crusty whole grain bread and, if you don't keep it vegan, add freshly grated parmesan cheese for extra flavor. Enjoy!

3 quarts water
1 ham bone, Smoked or 1 hock (Smoked)
2 tablespoons parsley, Chopped
1 cup onion, Finely Chopped
1 clove garlic, Minced
2 cups celery & tops, Finely Chopped
1 1/2 teaspoons salt
1/2 teaspoon pepper

Steps:

  • Cover beans with water in large pot or soup kettle and soak overnight.
  • Rinse beans well and return to pot with ham bone and 3 quarts of water.
  • Simmer, uncovered, for 2 hours.
  • Add parsley, onions, garlic, celery and tops, salt and pepper.
  • Simmer, uncovered, for 1 hour or until vegetables are tender.
  • Remove ham bone, dice the meat, and add meat to soup.
  • Serve hot.
