This is always a hit when I make it for dinner parties and Boxing Day dinner because the chicken is always fall-off-the-bone juicy and people love the glaze. People always go for seconds! You may quarter 2 chickens instead if you aren't able to get just legs from your butcher, but I find the legs are juicier and save money. Serve this dish with fragrant rice and dilled carrots or roasted asparagus.

8 large chicken legs
1 tablespoon salt
1 cup honey
1 cup orange juice with pulp
½ cup unsalted butter, at room temperature
7 sprigs fresh rosemary, finely chopped
2 oranges, zested
2 cloves garlic, minced
ground black pepper to taste

Steps:

  • Sprinkle chicken with salt and place in a large glass or plastic bowl.
  • Whisk together honey, orange juice, butter, rosemary, orange zest, and garlic. Pour orange mixture over chicken; cover with plastic wrap and refrigerate at least 1 hour or overnight.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Place chicken legs in a single layer in a roasting pan; pour orange mixture over chicken.
  • Roast for 30 minutes in the preheated oven; reduce temperature to 325 degrees F (160 degrees C). Baste chicken with pan juices every 20 minutes until chicken is a deep orange brown color, no longer pink at the bone, and juices run clear, about 90 minutes. An instant-read thermometer inserted into the thickest part of the meat near the bone should read 165 degrees F (74 degrees C).

One of my favorite recipes! The combination of paprika and mustard powder really offsets the sweetness of the orange juice. I tend to eyeball when cooking, so if you cook more breasts or use a large pan, make extra sauce to baste with. I'll frequently use extra glaze when baking just so there's plenty to pour over rice once it's done!

1/2 cup red-wine vinegar
1/4 cup molasses
4 bone-in skinless chicken breast halves (8 ounces each)
Coarse salt and ground pepper

Steps:

  • Preheat oven to 400 degrees. Squeeze oranges to yield 3 cups of juice. In a large skillet, combine juice, vinegar, and molasses. Boil over high heat, skimming foam occasionally, until mixture is reduced to 1/2 cup, 10 to 15 minutes. Reserve half the glaze for serving.
  • Place chicken on a rimmed baking sheet lined with aluminum foil. Season generously with salt and pepper, and brush with glaze.
  • Bake chicken, brushing with glaze twice, until juices run clear when pierced, 35 to 40 minutes. Serve hot with reserved glaze.

5 -6 navel oranges (enough to get 3 cups fresh-squeezed juice)
1/2 cup red wine vinegar
1/2 cup molasses
4 boneless skinless chicken breast halves

  • Preheat oven to 400 degrees Fahrenheit, and cover a rimmed baking sheet with foil.
  • Squeeze the oranges until you have 3 cups of juice.
  • In a large skillet, combine the juice, molasses and vinegar and bring to a boil over high heat, skimming foam periodically.
  • Boil until you have only about a half cup of thick glaze.
  • This takes 10-15 minutes.
  • Set half the glaze aside in a separate container for serving with the chicken.

1 (5 1/2 lb) whole chickens
1 small orange
1 teaspoon salt, divided
1 small red onion, cut into 8 wedges
1 bay leaf
1/4 teaspoon thyme
1/4 teaspoon black pepper
1 tablespoon honey
1 tablespoon orange juice
1/2 teaspoon Dijon mustard
1 pinch salt

Steps:

  • Heat oven to 425°F.
  • Remove giblets and neck from chicken.
  • Rinse chicken inside and out with cold running water; drain well.
  • Pat dry with paper towels.
  • Grate 1/2 teaspoons rind from orange and set aside.
  • Cut orange into quarters.
  • Sprinkle ½ teaspoons salt inside cavity of bird.
  • Stuff chicken with onion, orange quarters, bay leaf, and thyme.
  • Place on rack in large foil-lined roasting pan.

1 cup fresh orange juice
3/4 cup balsamic vinegar
1/2 cup mild-flavored (light) molasses
2 tablespoons grated orange peel
6 garlic cloves, pressed
2 teaspoons hot pepper sauce
8 skinless boneless chicken breast halves

Steps:

  • Whisk orange juice, vinegar, molasses, orange peel, and all but 1 teaspoon garlic in medium saucepan. Bring to boil over medium-high heat. Reduce heat to medium and simmer until reduced to 2 cups, about 10 minutes. Stir in pepper sauce. Cool marinade to room temperature.
  • Place chicken in 11x7x2-inch glass baking dish. Pour marinade over. Refrigerate at least 4 hours and up to 1 day.

  • Wash and dry chicken breasts, trimming off any fat or sinew.

3 1/2 lbs chicken pieces (breast, wings, etc.)
1 tablespoon hot sauce (use less for a more mild flavor)
2 tablespoons apple cider vinegar
4 tablespoons Dijon mustard
1/4 cup molasses

Steps:

  • Preheat oven to 400°F.
  • Whisk together in a small bowl the molasses, mustard, vinegar, and hot sauce.
  • Completely cover the chicken in mustard glaze mix.
  • Place the chicken skin side down in a 10x15 inch baking pan.
  • Pour remaining glaze over chicken.
  • Sprinkle with the salt and pepper.
  • Roast chicken on top rack in oven for about 40 minute.
  • Or until the juices run barely clear when you prick the chicken.
  • Remove the pan from the oven.
  • And turn the broiler on high turn the chicken pieces over and baste the chicken with pan drippings.
  • If there is a lot of pan drippings or fat that has been rendered out, spoon out some before broiling.
  • To prevent flare ups.
  • Broil, basting the chicken and rotating the pan for even browning.
  • Until fully browned, and has a nice glossy look, about 8 minute.
  • Drizzle any pan drippings left over the chicken before serving.
