- Heat 1 tbsp olive oil in a large frying pan with a lid and brown 2 chopped chicken breasts for 5-8 mins until golden.
- Remove and set aside. Tip in the 1 diced onion and cook for 3-4 mins until soft.

- In a large, heavy-bottomed pot over medium-high heat, add 1 tablespoon oil. Add the chicken, season lightly with salt and pepper, and brown on both sides, about 7 minutes, working in batches if necessary. Remove the chicken to a plate. Add the remaining tablespoon of oil and the onions, peppers, and celery, and cook until the vegetables are soft, about 5 minutes. - Combine Worcestershire, tomato paste, ketchup and 1/2 teaspoon Cajun or Creole spice mix in bowl; set aside.
- Bring 3 quarts lightly salted water to boil in large saucepan over high heat. Add rice and cook, stirring occasionally, until just tender, about 12-15 minutes. Drain rice in fine-mesh strainer and rinse.
