{OVEN-BAKED} RANCH CHICKEN TENDERS

These Oven Baked Ranch Chicken Tenders are baked in the oven instead of fried. These chicken tenders are marinated with ranch dressing, giving this homemade chicken tender recipe incredible flavor! They're a total crowd pleaser.

12 chicken tenders
1 cup ranch dressing
1 Tbsp milk
1 cup Bisquick, or some other complete baking mix
1/2 tsp RawSpiceBar's Smoked Paprika
1/2 tsp salt
1/2 tsp black pepper
4 Tbsp olive oil

Steps:

  • In a large zippered bag, pour in ranch dressing and milk. Add in all 12 chicken tenders, zip up the bag (squeezing out all excess air), and shake or massage the bag until all tenders are coated with ranch dressing. Allow to marinate for 15 minutes to 30 minutes.
  • Preheat oven to 475 degrees and line a large baking dish with foil (9x13 or 9x11 dish). Drizzle 2 Tbsp of oil over the bottom of the pan.
  • In a large zippered bag, add Bisquick, RawSpiceBar paprika, salt, and black pepper. Add marinated chicken tenders into the bag, zip up, and shake until all tenders are coated.
  • Place chicken flat in the baking dish, making sure none of the tenders are touching each other. Drizzle 2 Tbsp of oil over the tops of the chicken.
  • Bake for 8-10 minutes (or until the underside of the chicken is golden brown), then carefully flip the chicken over, and bake for another 9-10 minutes.
  • Serve with extra ranch, barbecue sauce, or any other sauce if desired.

1 bay leaf
4 whole peeled garlic cloves
3/4 teaspoon whole black peppercorns
1/2 lemon
2 quarts ice cubes
1/2 cup buttermilk
1/4 cup pickle juice
2 1/2 cups all-purpose flour
1/2 cup cornstarch
1 1/2 teaspoons garlic powder
1 1/2 teaspoons onion powder
1 teaspoon paprika
Kosher salt and freshly ground black pepper, for seasoning
4 eggs, beaten
3 cups panko breadcrumbs
1 cup cornstarch
1 1/2 tablespoons dried oregano
1 1/2 tablespoons garlic powder
1 1/2 tablespoons onion powder
1 tablespoon paprika
Kosher salt and freshly ground black pepper, for seasoning
1/2 cup fajita seasoning
1 1/2 teaspoons garlic salt
1 1/2 teaspoons chili powder
1 tablespoon superfine sugar
1 tablespoon freshly ground black pepper
3/4 teaspoon kosher salt
1/4 teaspoon cayenne pepper
24 chicken tenders (about 2 2/3 pounds), tendons removed
Canola oil, for deep frying
Buttermilk Ranch Dipping Sauce
1 cup mayonnaise
1/2 cup sour cream
1/2 cup buttermilk
3 tablespoons chopped fresh dill
2 teaspoons sugar
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon paprika
1/2 teaspoon kosher salt
4 to 5 turns fresh ground black pepper
Pinch of cayenne pepper

Steps:

  • Make the brine: Combine the water, salt, sugar, bay leaf, garlic, pepper and lemon in a large stock pot and bring to a boil over high heat. Reduce the heat and let simmer until fragrant, 2 to 3 minutes.
  • When done, remove from the heat, add the ice cubes and stir until the liquid is chilled. Add the buttermilk and pickle juice. Stir well then pour enough brine over the chicken tenders in a large bowl to submerge them. Cover and refrigerate for 2 hours.
  • Make the seasoned flour: Combine the ingredients in a medium bowl and mix well.
  • Make the panko breading: Take half of the panko breadcrumbs and pulse in a food processor until fine. Combine with the remaining ingredients in a medium bowl. Mix well and set aside.
  • Make the seasoning: Combine the ingredients in a small bowl, mix well and set aside.
  • Prepare the chicken tenders: Remove the chicken tenders from the brine and pat dry. Set up a breading station with the seasoned flour, egg wash and panko breading. Working with 1 or 2 tenders at a time, lightly coat in the seasoned flour, dip in the egg wash, then place in the panko breading. Cover the tender in the breading then firmly press the tender flat with your palm to an even 1/4 inch thick. Flip and press again as needed to achieve even thickness and breading.
  • Preheat 3 to 4 inches of oil in a Dutch oven to 350 degrees F. Working in batches, fry the chicken tenders, turning occasionally, until golden brown all over and cooked through, 5 to 7 minutes. Remove from the oil to a paper towel-lined plate to drain. Season the tenders evenly all over with the seasoning and serve with the dipping sauce.
  • In a medium bowl, whisk together all of the ingredients until well combined and creamy in texture. Cover and refrigerate until ready to serve, up to 5 days.

1/2 cup all-purpose flour
1/4 cup milk
1 pinch cayenne pepper
4 large eggs
Kosher salt and freshly ground black pepper
2 cups panko breadcrumbs
Vegetable oil, for shallow frying
Honey mustard, spicy ketchup and/or ranch dressing, for serving

Steps:

  • Cut the chicken lengthwise into 3/4-inch-wide strips. Put the flour in a shallow dish. Whisk the milk, cayenne, eggs and a pinch of salt and pepper in another shallow dish until combined. Put the breadcrumbs in a third shallow dish.
  • Dredge the chicken fingers in the flour, shaking off the excess, then dip into the egg mixture, and finally coat with the panko breadcrumbs, pressing to help adhere well. Set aside on a piece of wax paper or a baking sheet.
  • Heat about 1/2 inch of oil in a large skillet over medium-high heat. Working in batches, fry the chicken fingers, turning occasionally, until golden brown and cooked through, about 3 minutes. Transfer the chicken fingers to a paper towel-lined plate to drain and season with salt. Serve with honey mustard, spicy ketchup and/or ranch dressing for dipping.

4 bone-in, skin-on chicken breasts
2 tablespoons olive oil, plus more for drizzling
Kosher salt and freshly ground black pepper
1 small onion, finely chopped
1 garlic clove, minced
1 1/2 cups long-grain white rice
One 1-ounce package ranch seasoning powder
1/2 teaspoon ground turmeric
1 cup chicken broth
2 ounces cream cheese, cubed
1 tablespoon fresh lemon juice
2 scallions, thinly sliced
1 1/2 cups frozen peas and carrots, thawed
1/4 cup crushed ranch-flavored or plain corn chips

Steps:

  • Preheat the oven to 400 degrees F. Line a rimmed baking sheet with parchment paper.
  • Drizzle the chicken breasts with olive oil and sprinkle all over with salt and pepper.
  • Put the chicken on the lined sheet pan skin-side up and roast until an instant-read thermometer reads 165 degrees F, 25 to 30 minutes.
  • In the meantime, turn the heat to medium-low on a braiser or high-sided skillet with a lid. Add the olive oil and onion and cook, stirring, until slightly softened, about 2 minutes. Add the garlic and let cook until the garlic is fragrant, about 30 seconds to a minute. Add the rice, ranch seasoning and turmeric and stir to coat. Add the chicken broth and 2 cups of water. Increase the heat to medium-high and bring to a brisk simmer. Simmer 2 minutes, then add the cream cheese, lemon juice and one scallion. Stir to incorporate.
  • Cover the pot and let cook until the rice is tender, 8 to 12 minutes. Remove from the heat, then uncover; fluff the rice, then stir in the peas and carrots. Replace the lid to keep warm until the chicken is done (the residual heat will gently cook the peas and carrots). Remove the chicken from the oven and arrange the chicken on top of the rice skin-side-up.
  • Sprinkle with the crushed chips and the remaining scallions and serve.

Steps:

  • Preheat the oven to 400 degrees F.
  • For the chicken: Season the chicken breast strips with the salt and pepper. Sprinkle with the flour and toss to coat on all sides.
  • In a small baking dish, combine the Greek yogurt and chipotle powder if using. Whisk to combine. In a second small baking dish, combine the breadcrumbs, garlic powder and mustard powder. Coat each chicken strip in the yogurt mixture and then the breadcrumb mixture. Place the strips on a wire rack set over a rimmed baking sheet. I was looking for an easy, healthy way to fix chicken fingers that my 4 yo would like. This is what I came up with. Very mild ranch/chili flavor. If you like hotter, please add more hot sauce and or cayenne pepper. If you chose to do this on boneless breasts, increase cook time to 30 mins. Note: Prep time does not include marinade time.

1/4 cup fat free ranch dressing
1/4 cup skim milk
1 teaspoon hot sauce (to taste)

1 white wrap (whole wheat or tomato)
2 Tbsp ranch dressing
1 slice onion pull the rings apart
1/4 c shredded lettuce
1/4 c chopped tomato
1/4 c shredded cheddar cheese (or your favorite cheese)

Steps:

  • 1. Lay wrap flat and spread ranch dressing on the wrap. Put lettuce tomato and onion on the lower portion close to the bottom because you have to wrap this like a burrito. Lay cut up chicken fingers and shredded cheddar or your favorite cheese on top of lettuce mound. Fold like a buritto tucking everything in then roll. EAT IT UP You can also heat these on a grill if you like.
