Steps:
- Rinse cucumber and peel it. Chop to tiny bite size pieces (about ¼ to ½ inch). If you prefer you may even grate it. Grated cucumbers let out moisture so make sure you use only greek yogurt if you want to grate them. Otherwise cucumber raita becomes runny.
- Also fine chop coriander and mint leaves (optional).
- Deseed the green chilli and chop. (optional)
- Whisk chilled yogurt in a large mixing bowl.
- Add chopped cucumber, green chilies, coriander leaves, mint leaves and salt. Mix all of them.
- Taste test and add more salt if needed. Drizzle cumin powder, ground black pepper & chaat masala (optional).
- Serve cucumber raita as a side in an Indian meal. It is usually eaten with Vegetable biryani or chicken biryani.
- Cucumber raita is best served fresh but can be chilled for a few hours.

- Mint-Cucumber Raita. If you're wondering how to use up all that mint that's grown like crazy in your garden, here's an idea for you: Chop it into a raita.
- Chatpata Channa Raita. Whether it's a side dish or a vegetarian entree, this chickpea-and-yogurt dish is intriguing because it's a little out of the norm.
- Avocado Raita. If you're craving guacamole but not in the mood for Mexican, avocado raita is right up your alley. It's the Indian version of guacamole and could be the starting point for a fusion sort of meal.
- Palak Ka Raita. Raitas can be incredibly simple dishes, but Indian cuisine is so often generously spiced that it only makes sense to add a magnitude of flavor via some aromatic ingredients.
- Seasoned Eggplant Raita. There's something about charred eggplant that takes this particular raita to the next level. It's almost a combination of baba ganoush, the Middle Eastern spread, and Indian raita, and it works in so many ways: as a dip with pita chips, over some simple basmati rice, or as a topping for any form of spicy and hot meat entree.
