This is a nicely scaled down dish for two, can be scaled up too. Using angel hair pasta makes the "crust" special. From TOH. It also freezes well before baking

3 ounces angel hair pasta
1 egg, beaten
1/4 cup grated parmesan cheese
1/3 lb pork sausage (bulk, or turkey)
1/4 cup onion, chopped
1/2 cup tomato sauce
1/3 cup sour cream
1/2 teaspoon italian seasoning
1/2 cup part-skim mozzarella cheese, shredded

Steps:

  • Cook pasta according to package directions, drain.
  • In a small bowl combine the pasta, egg and parmesan cheese. Press onto the bottom and up the sides of a 7 inch pie plate or shallow 2 cup round baking dish coated with non stick spray. Set aside.
  • Crumble sausage into a small skillet, add onion. Cook until no longer pink, drain. Stir in tomato sauce, sour cream and italian seasoning. Spoon into crust.
  • Bake uncovered at 350 for 15-20 minutes or until heated through. Sprinkle with mozzarella, bake until cheese melts and serve immediately.

1 lb Italian sausage
1 tablespoon of minced garlic
1 (16 ounce) jar Ragú® Pasta Sauce (Hearty or Mushroom)
1 cup parmesan cheese
2 medium eggs
1 tablespoon italian seasoning
1 -8 ounce ricotta cheese
1 -8 ounce goat cheese
1 -16 ounce angel hair pasta
2 cups shredded mozzarella cheese

Steps:

  • 1. Brown Italian sausage and garlic in skillet and drain.
  • 2. Mix cooked and drained sausage mixture with Ragu in the large skillet. Cook low until heated through.
  • 3. Beat eggs and add Parmesan cheese in a large bowl.
  • 4. Add cooked and drained pasta (slightly cooled as to avoid eggs setting up) and toss well to coat.
  • 5. Spread pasta mixture on the bottom and up the sides of a 2 - 9 inch deep dish pie plate. Press to form the shape of a pie crust.
  • 6. Sprinkle half of the Italian seasoning on pasta mixture on each 9" pie.
  • 7. Mix ricotta and goat cheese and spread evenly on each pie over the top of pasta mixture.
  • 8. Top each pie with 1/2 the Italian sausage and sauce mixture.
  • 9. Sprinkle each pie with 1 cup mozzarella cheese.
  • 10. Bake in preheated 350 degree oven for 25 minutes - until cheese is melted and lightly browned.
  • 11. Let stand for 5 minutes to cool, then cut into wedges to serve.

2 tablespoons olive oil
6 boneless skinless chicken thighs, finely chopped
Salt and freshly ground pepper
1/2 cup finely chopped shallots
1 tablespoon minced garlic
2/3 cup dry white wine
2 teaspoons finely chopped fresh rosemary leaves
4 cups Marinara Sauce, recipe follows
1 pound linguine
1/2 cup freshly grated Parmesan
1/2 cup extra-virgin olive oil
2 small onions, finely chopped
2 garlic cloves, finely chopped
2 stalks celery, finely chopped
2 carrots, peeled and finely chopped
1/2 teaspoon sea salt, plus more to taste
1/2 teaspoon freshly ground black pepper, plus more to taste
Two 32-ounce cans crushed tomatoes
2 dried bay leaves

Steps:

  • Heat the oil in a heavy large skillet over medium-high heat. Add the chicken, season with salt and pepper, and cook until the juices evaporate and the chicken is golden, about 10 minutes. Add the shallots and garlic and saute until tender, about 2 minutes. Add the wine and stir to scrape up any brown bits on the bottom of the skillet. Add the rosemary and mix well. Add the Marinara Sauce and bring to a simmer. Reduce the heat to medium-low and simmer gently until the flavors blend, about 10 minutes.
  • Meanwhile, bring a large pot of salted water to a boil. Add the linguine and cook until al dente, stirring occasionally, about 8 minutes. Drain, reserving 1 cup of cooking liquid. Add the linguine to the ragu and toss to coat, adding some reserved cooking liquid to moisten. Transfer the pasta to a large serving bowl. Sprinkle with Parmesan and serve.
  • In a large casserole pot, heat the oil over a medium-high flame. Add the onions and garlic and saute until the onions are translucent, about 10 minutes. Add the celery, carrots, and 1/2 teaspoon each of salt and pepper. Saute until all the vegetables are soft, about 10 minutes. Add the tomatoes and bay leaves, and simmer uncovered over low heat until the sauce thickens, about 1 hour. Remove and discard the bay leaf. Season the sauce with more salt and pepper, to taste.

A rich, versatile meat sauce: serve it Bolognese-style with spaghetti or use it as a base for lasagne or moussaka

1 tbsp olive oil
1 onion, halved and finely chopped
1 celery stick, finely diced
1 large carrot, finely diced
600g pack minced beef steak
3 tbsp tomato purée
2 garlic cloves, finely grated
2 tsp fresh thyme leaves
150ml red wine (or use extra beef stock)
500ml beef stock
400g spaghetti
50g grated parmesan, plus extra to serve (optional)

Steps:

  • Heat the oil in a large pan and add the onion, celery and carrot. Fry over a medium heat for 10 mins, stirring now and then, until softened and starting to colour.
  • Stir in the mince and cook, breaking up any clumps of meat with a wooden spoon, until browned.
  • Add the tomato purée, garlic and thyme, and cook for 1-2 mins more. Pour in the wine, if using, and increase the heat to boil off most of the alcohol. Reduce the heat, stir in the stock and season. Cover with a tight-fitting lid and leave to cook gently for 1 hr-1 hr 15 mins until the meat is tender and the sauce has thickened.
  • Remove the lid and continue cooking for 15 mins. Meanwhile, cook the pasta following pack instructions. Reserve a mugful of the cooking water, then drain the spaghetti and add to the ragu with the Parmesan. Toss well and add a little pasta water to help the sauce coat the spaghetti. Serve with a side salad and extra cheese, if you like.
