½ (16 ounce) package frozen green beans, defrosted
1 tablespoon bacon bits
½ teaspoon hickory smoked salt, or to taste
1 pinch garlic powder, or to taste

Steps:

  • Heat oil in a pan over medium heat until shimmering. Add sesame seeds and cook for 1 minute; watch carefully as seeds burn quickly. Add green beans, bacon bits, smoked salt, and garlic powder. Cook and stir until beans are hot, about 3 minutes.

Sautéed Green Beans with Smoky Shallots image

Tender green beans topped with smoky sauteed shallots instead of bacon. This vegetarian (and vegan!) side is a welcome addition to the holiday table.

Number Of Ingredients 7

2 pounds fresh green beans (ends trimmed)
1/4 cup + 2 teaspoons coconut oil* (divided (can also use vegetable oil or canola oil))
2 pounds shallots (peeled and sliced thin)
1 teaspoon smoked paprika
1/2 teaspoon kosher salt + more to taste
1/4 teaspoon freshly ground black pepper + more to taste
1/4 teaspoon red pepper flakes

Steps:

  • Bring a large pot of water to a boil. Add green beans and cook for one minute. Lift the beans out of the water and plunge them into a bowl of ice water to cool and stop the cooking. Drain and set aside.
  • Set a large saute pan over medium-high heat. Add coconut oil. When melted and shimmering-hot, add shallots. Cook, stirring occasionally, until tender and starting to turn golden, about 10 minutes. Add the smoked paprika, salt, and pepper. Stir and cook until the shallots are well-browned, 2-4 additional minutes. Transfer to a paper-towel-lined baking sheet to drain the excess oil. Set aside.
  • Allow the saute pan to cool enough so you can wipe out the excess oil. Return to the stove over medium heat. Add 2 teaspoons coconut oil. When hot, add the blanched green beans, red pepper flakes, and a pinch of salt and pepper. Cook, stirring occasionally, until heated through, 1-2 minutes. Taste and add additional salt and pepper if desired. Transfer to a platter and top with smoky shallots. Serve.

200g brown rice
3 tbsp extra virgin rapeseed or olive oil
200g spring greens or chard (trimmed weight), washed and roughly chopped
3 garlic cloves , finely sliced
400g can butter beans , rinsed and drained
½ tsp cumin seed
1 tsp smoked paprika
natural yogurt , to serve (optional)

Steps:

  • Rinse the rice in cold running water until it runs clear. Bring a large pan of water to the boil, cook the rice for 20-25 mins, then drain.
  • Place a wide, lidded pan over a medium heat with 2 tbsp oil. Add the greens, salt and pepper and cook, with the lid on, stirring frequently, until the greens are lightly steamed and wilted, about 4-5 mins. Add the garlic and cook until fragrant, then add the butter beans and cook, stirring, until heated through. Add the remaining oil, then the cumin seeds and smoked paprika. Stir until evenly combined and serve over the cooked rice with a dollop of yogurt, if you like.

1 large onion, chopped

8 cups coarsely chopped assorted greens (such as kale, mustard greens, and collard greens; about 8 ounces)
1 15-ounce can cannellini (white kidney beans), drained
Grated Manchego or Parmesan cheese (optional)

Steps:

  • Heat oil in heavy large pot over mediumhigh heat. Add onion and sauté until soft and beginning to brown, about 6 minutes. Add garlic; stir 1 minute. Add tomatoes with juice and paprika; stir 1 minute. Add broth and greens; bring to boil, stirring often. Reduce heat to medium-low, cover, and simmer until greens are wilted and tender, stirring occasionally, about 15 minutes. Stir in beans and simmer 1 minute to heat through. 1 pound fresh green beans (aka string beans, ends trimmed)
2 tablespoons unsalted butter
2 cloves garlic (minced)
½ teaspoon kosher salt (+ more for seasoning the boiling water)
¼ teaspoon ground black pepper
1 teaspoon lemon zest - Optional

Steps:

  • Place 6 cups of water and 2 tablespoons salt in a large pot over medium-high heat. Bring it to a boil.
  • Meanwhile, fill a large bowl with ice and water. Line a sheet pan with a few sheets of paper towel. Set them aside.
  • Carefully add the green beans into the boiling water. Cook until crisp and tender, 5 minutes.
  • Using a slotted spoon or a spider strainer, transfer the green beans into the ice water. Let them cool to room temperature completely for about 5 minutes. Drain and then transfer on to the sheet pan lined with paper towels. Dry as much as you can.
  • Melt the butter in a large skillet (10 or 12 inch) over medium heat. Add the garlic and cook, stirring constantly, 30 seconds.
  • Add in the green beans and gently stir to make sure they are coated with the butter and garlic mixture. Sautee, turning often, for 2-3 minutes or until green beans are softened but still tender.
  • If preferred, toss in the lemon zest at the last minute. Transfer the beans on a plate and serve.
