QUICK AND EASY CRANBERRY RELISH
This Quick and Easy Cranberry Relish is full of fresh and zippy flavors and will easily become a favorite for your holiday meals, potlucks, parties, and more!

Steps:
- Rinse cranberries and pick out any soft ones and discard. Drain and place into a food processor.
- Cut the orange into 8 sections, leaving the peel on. Cut the peeled and cored apple into 8 sections as well. Transfer to food processor.
- Pulse fruits in the food processor until everything is minced into small pieces. Be careful not to over pulse.
- Stir in sugar. Transfer to a serving bowl and let sit 30 minutes before serving.

- Pick over berries and remove the mushy ones. Place cranberries in a colander and wash under cold running water. Allow to drain for a few minutes. In a large bowl, combine cranberries, sugar, water, orange and zest. Cover with plastic wrap and punch a few holes. Microwave on high for 5 minutes. Stir well and microwave for an additional 10 minutes. There should be some broken berries and some should remain whole surrounded by liquid. All of the sugar should have dissolved and the liquid should be slightly thick. If not, return it to the oven and cook 5 minutes longer. The relish will set as it cools. Transfer to a decorative jar or relish dish and chill.

This is a very easy way to make cranberry sauce. Try to use orange juice if possible, it really brings out "life" to the cranberry sauce. This is a fantastic recipe for cranberry sauce, I make it all the time for holidays, you can prepare this well in advance even days ahead, cover and refrigerate. If you are doubling the recipe then make in two separate microwave-safe bowls, don't double the recipe into one bowl or it will overflow in the microwave.

- Combine all ingredients in a 3-qt microsafe bowl; mix well.

- Transfer to serving bowl and chill for 3-4 hours.
