2 pounds skinless, boneless chicken breast halves - cut into strips
1 (10.75 ounce) can condensed cream of mushroom soup
1 cup sour cream
½ (8 ounce) package cream cheese, softened
2 cloves garlic, minced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place chicken in an ungreased 9x13 inch baking dish. In a medium bowl combine the soup, sour cream, cream cheese and garlic. Mix well and pour mixture over chicken.
  • Bake uncovered in preheated oven for 1 hour.

1 cup sour cream
¼ cup mayonnaise
2 tablespoons lemon juice
2 teaspoons Worcestershire sauce
1 ½ teaspoons salt
1 teaspoon paprika
½ teaspoon garlic powder
¼ teaspoon pepper
3-4 boneless, skinless chicken breasts (about 2 lbs. total)
¾ cup crushed Ritz crackers (about 15 whole crackers or half of a sleeve)
2 tablespoons salted butter, melted
2 tablespoons Parmesan cheese
Optional garnish: chopped fresh herbs such as parsley, basil or thyme

Steps:

  • Whisk together sour cream, mayonnaise, lemon juice, Worcestershire sauce, salt, paprika, garlic powder and pepper. Add the chicken to the sour cream mixture and toss to coat. Cover and marinate in the refrigerator for at least 1 hour (or overnight).
  • Preheat oven to 375°F. Spray a large baking dish or rimmed baking sheet with cooking spray (about 9 x 13-inches or any other size dish that comfortably holds your chicken).
  • Remove the chicken from the sour cream mixture and place in the prepared baking dish. Discard marinade.
  • In a small bowl, combine cracker crumbs and melted butter. Press buttered cracker crumbs on top of each chicken breast. Sprinkle with Parmesan.
  • Bake, uncovered, for 35-45 minutes or until chicken reaches an internal temperature of 165°F. Garnish with fresh herbs and serve.

2 large potatoes, diced small
2 1/2 lbs chicken pieces
3 tablespoons butter

  • Bring large pot of water to boil & add salt.
  • Add potatoes & cook until tender, about 15 minutes, then drain & set aside.

  • Add chicken, skin side down, & brown well, rotating & turning pieces as necessary, 10-15 minutes, then remove chicken from skillet & set aside.

1/2 cup chopped fresh scallion, plus more for garnish

Steps:

  • Bring a large pot of water to a boil and add salt. Add the potatoes and cook until tender, about 15 minutes. Drain and set aside.
  • Meanwhile, put the butter in a deep skillet or flameproof casserole, preferably nonstick. Turn the heat to medium-high and wait a minute or so, until the butter melts. Add the chicken, skin side down, and brown it well, rotating and turning the pieces as necessary, 10 to 15 minutes. Remove the chicken from the skillet and set aside. Drain all but 3 tablespoons of the fat.
  • Reduce the heat to medium-low and add the garlic, scallion, and dill. Cook, stirring occasionally, until the garlic is softened and the mixture fragrant, about 1 minute. Add the potatoes to the skillet and stir to coat with the herb mixture; add the chicken pieces and stir again. Turn the heat to low and stir in the sour cream.
  • Season to taste with salt and pepper and simmer very gently for another 10 minutes. Garnish with scallion and dill and serve.

1 teaspoon threebe (Greek herb)

1 whole chicken or to taste chicken breast
2 -3 large potatoes, cut into wedges
1 1/2 cups chicken stock
1/3 cup fresh lemon juice
3 -5 cloves garlic (more is better)

3 -4 cloves garlic, crushed and finely minced
8 -10 ounces sour cream

Steps:

  • Mix olive oil, lemon juice, garlic, threebe, salt and pepper well & let stand 10 minutes; pour over chicken.

  • Bake at 400F for ~ 1 hour or until done. Serve with potatoes.
  • Arrange potatoes in glass baking dish (multiple layers).
