2 pounds ground beef
1/2 cup chopped onion
1 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon pepper
1 loaf (1 pound) French bread
1/4 cup butter, softened
2 cups sour cream
2 tomatoes, seeded and diced
1 large green pepper, diced
3 cups shredded cheddar cheese

Steps:

  • In a skillet, brown ground beef and onion. Drain. Add salt, garlic powder and pepper. , Cut bread lengthwise in half; butter both halves and place on baking sheets. Remove meat mixture from heat; stir in sour cream. Spoon onto the bread. Sprinkle with tomatoes, green pepper and cheese. , Bake at 350° for 20 minutes or until the cheese is melted (bake longer for crispier bread).

1 pound ground beef
1 cup sliced fresh mushrooms
1 small green pepper, finely chopped
1 small onion, finely chopped
1 envelope ranch dip mix
3/4 cup sour cream
1 loaf (about 8 ounces) French bread
2 cups shredded part-skim mozzarella cheese

Steps:

  • Preheat broiler. In a large skillet, cook beef, mushrooms, pepper and onion over medium-high heat until beef is no longer pink, breaking up beef into crumbles, 8-10 minutes; drain. Stir in dip mix and sour cream., Cut French bread horizontally in half; place halves on a baking sheet, cut side up. Broil 3-4 in. from heat until lightly toasted, 1-2 minutes. Remove from broiler., Spoon beef mixture over bread. Sprinkle with cheese. Broil until cheese is lightly browned, 1-2 minutes longer. To serve, cut each into 3 pieces.

1 pound lean ground beef (90% lean)
1/4 cup chopped onion
1/4 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper
1 teaspoon Worcestershire sauce
1 can (4 ounces) sliced mushrooms, drained
1 cup sour cream
1/4 cup butter, softened
1 loaf (1 pound) French bread, cut in half lengthwise
2 medium tomatoes, thinly sliced
1 medium green pepper, cut into rings
1 cup shredded cheddar cheese

Steps:

  • In a skillet, brown beef with onion. Drain. Season with the garlic powder, salt, pepper and Worcestershire sauce. Place it with the buttered side up on a baking sheet; broil until light golden brown. , Reset oven to 375°. Spread bread with ground beef mixture. Top with the tomatoes, pepper rings and cheese. 1 bunch watercress, cleaned
1 crusty baguette
2 tablespoons extra-virgin olive oil
2 tablespoons butter
1 1/2 pounds, 1-inch thick sirloin or strip steak, very thinly sliced, no more than 1/4-inch thick
Salt and freshly ground black pepper
1 cup all-purpose flour
1 small onion, peeled
1 1/2 cups beef stock
1/3 cup sour cream
1 tablespoon lemon juice
2 to 3 tablespoons freshly chopped dill

Steps:

  • Chop watercress and reserve.
  • Cut baguette into 4 pieces and split but do not separate.
  • Heat a large skillet over medium to medium high heat with 2 tablespoons extra-virgin olive oil and butter.
  • Pat sliced meat dry. Season the meat with salt and pepper and coat in flour. Shake off excess then add to very hot pan. Grate the onion directly into the meat. Cook meat 5 to 6 minutes, turning occasionally. Add stock to pan and cook to thicken 1 minute, stir in sour cream, a tablespoon of lemon juice and dill. Season the sauce with pepper. Remove from heat. Pile meat into cut baguette and top with cress.

2 cups sourdough starter
10 tablespoons water
1 ½ teaspoons olive oil
1 teaspoon salt
1 tablespoon white sugar
1 tablespoon active dry yeast
4 cups all-purpose flour, or more if needed
2 teaspoons cornmeal
2 cups boiling water
1 egg yolk
1 tablespoon milk

Steps:

  • Place the sourdough starter, water, olive oil, salt, sugar, yeast, and flour in that order into the pan of a bread machine, set the machine on the dough cycle, and start the machine.
  • After the machine has finished its cycle, turn the dough out onto a floured surface, and knead several times; mix in more flour if the dough is very sticky. Cut the dough in half, and roll each piece of dough out into a rectangle about 8 by 12 inches and 1/2-inch thick. Roll the rectangles into loaves the long way, pinch the seams, and taper and pinch the ends of the loaves.
  • Line 2 baking sheets with parchment paper, and sprinkle paper with cornmeal. Place the loaves gently onto the prepared baking sheets, cover loosely with plastic wrap, and let rise in a warm place until doubled, about 30 minutes.
  • Place a large baking stone onto the center rack of oven, and place a baking dish onto a lower rack. Preheat oven to 375 degrees F (190 degrees C). Carefully pour boiling water into the baking dish.
  • Remove plastic wrap from loaves, and slash several 1/2-inch deep cuts into each loaf with a sharp knife. Whisk egg yolk and milk together in a small bowl until thoroughly mixed, and brush the loaves with the egg yolk mixture.
  • Place the loaves into the preheated oven on top of the baking stone, and quickly spray the inside of the oven 4 or 5 times with a water-filled spray bottle. Shut oven door; wait 1 minute, and spray again; repeat twice more, spraying the oven 4 times with water at 1-minute intervals.
  • Bake about 15 minutes, and remove the water-filled baking dish. Continue to bake until the bread is browned and the loaves make a hollow sound when thumped, about 15 more minutes. Remove bread to cool on racks.

Great served with a tossed salad. A real guy pleaser if you serve it with a stein of cold beer! NOTE: Times shown below do not include marinating time. DO marinate this overnight -- it really makes for a great tasting steak sandwich!!

1 cup beer (preferably dark, but any beer will do)
1/3 cup vegetable oil
1 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon pepper, course ground
4 1/2 lbs flank steaks
2 tablespoons butter
1/2 teaspoon paprika (we use Smoked Spanish Paprika)
4 cups sliced onions
12 ounces sour cream
1 teaspoon horseradish (more or less, to taste)
12 slices French bread (Thick cut, we buy whole loaves and slice, on the diaganol, into 3/4-inch slices)

Steps:

  • Combine beer, oil, garlic powder, salt and pepper. Place Flank Steak in marinade. (A gallon Ziploc bag works great). Refridgerate overnight, turning occassionally.
  • In a skillet, melt butter; add paprika and a dash of salt, then add onions and saute until tender. In a small saucepan, mix sour cream and horseradish and heat on low until sour cream is warm.
  • Drain steak and barbeque (or broil) 5 - 7 minutes per side for medium rare. Cover and let rest for 10 minutes before slicing.
  • Toast French Bread slightly. (I toast them under the broiler with door slightly open , but you have to WATCH carefully. Don't think you can do anything else, or you'll forget about them and have burned toast!).
  • Slice meat very thin across the grain, and on an angle. Pile meat on toast, cover with onions, some sour cream and a sprinkle of paprika, then top sandwich with other toast.

1 1/2 lbs lean ground beef or 1 1/2 lbs ground buffalo meat
2 tablespoons grated onions
1 1/2 cups grated medium sharp cheddar
1 cup sour cream
1 tablespoon Worcestershire sauce
salt & pepper
2 medium tomatoes, chopped
1 green bell pepper, seeded and chopped (can substitute red, yellow, or orange if you don't like the green)

Steps:

  • Preheat oven to 350 degrees F.
  • Slice the bread in half lengthwise, then lightly butter the bread and wrap in foil.
  • Bake at 350 degrees F for 15 minutes.
  • Brown the ground beef and drain the excess fat.
  • Add the onion, and cook until the onion is transparent.
  • Remove from the heat and add the sour cream, worcestershire sauce, salt and pepper.
  • Remove the bread from the oven and spread the meat mixture on each half.
  • Arrange the chopped tomatoes and chopped bell pepper on top of the meat mixture and top with the grated cheese.
  • Place back in the oven and bake only until the cheese is melted.
  • Serve hot.
  • Note: sauteed sliced mushrooms would also be good in this!
