Provided by Michelle Miller

Categories     Breakfast

Time 45m

Number Of Ingredients 14

4 poblano peppers (*choose large peppers)
4 eggs
2 cups pepperjack cheese (shredded)
4 Jones Dairy Farm Golden Brown Pork Sausage Patties
2 tablespoons avocado oil
1 onion (chopped)
1 can diced tomatoes (14 ounce)
1 jalapeno (diced, seeded if desired (to reduce heat))
1 cup water
1 teaspoon oregano
1 teaspoon cumin
2 cinnamon sticks (or 1 teaspoon cinnamon)
2 bay leaves
1 teaspoon sea salt

Steps:

  • Start by blanching the poblanos. Boil water in a large pot, and then add the peppers for about 10 minutes, until they are soft when pierced with a fork. I like to put the lid on my pot to keep them from floating, but you can also just flip them over half way through.
  • Preheat oven to 425º F.
  • Remove the chiles from the boiling water, and make a lengthwise slice. Don't cut the pepper in half - you just want to be able to stuff the inside of the pepper. If your chiles are really hot, of you don't want these to be too spicy, you can use a spoon to remove the seeds.
  • Make some scrambled eggs, and brown the Jones Dairy Farm Golden Brown Pork Sausage patties. Cut the patties in half and set aside.
  • Add the chile relleno sauce to a baking dish, and then add the peppers into the dish. Stuff the peppers with 1/4 of the cheese, 1 scrambled egg, and 1 sausage patty (two 1/2s) each. Top the dish with extra cheese.
  • Bake the chile rellenos for 15 minutes, or until cheese is melted and bubbling. If you make your chiles ahead of time and the sauce has cooled or chilled before baking, then cover the dish with foil and cook for 15 minutes, and then remove the foil and cook for another 10-15 minutes, until the sauce is bubbling and the cheese has begun to bubble and brown.

CHILE RELLENO BREAKFAST

Chile Relleno Breakfast image

I've been making this for so long I don't remember where the recipe came from. The recipe calls for Monterey Jack Cheese but you can use Pepper Jack, Cheddar or a combination of cheeses. You can also add chopped fresh jalapenos, black olives, hot sauce....what ever suits you. Buen Provecho!

Time 40m

Yield 4 serving(s)

Number Of Ingredients 12

4 flour tortillas (7-inch)
1 1/2 tablespoons butter, melted
2 cups monterey jack cheese, shredded
1 tablespoon flour
1/4 teaspoon salt
1/4 teaspoon pepper
6 eggs, lightly beaten

  • Preheat the oven to 325°F.
  • Lightly grease four 10-ounce custard cups.
  • Brush both sides of each tortilla with the melted butter.
  • Nestle each tortilla into one of the custard cups - forming "bowls".

CHILES RELLENOS IN TOMATO BROTH

Chiles Rellenos in Tomato Broth image

Provided by Food Network Kitchen

Categories     side-dish

Time 1h6m

Yield 4 servings

Number Of Ingredients 16

8 poblano chile peppers (4 1/2 to 5 inches long)
12 ounces muenster cheese, cut into 8 sticks (about 3 1/2 by 1 inch)
1 1/2 pounds tomatoes, cored and chopped
1 small onion, chopped
2 cloves garlic, chopped
3 tablespoons extra-virgin olive oil
2 whole cloves
7 black peppercorns
2 small bay leaves
1 cinnamon stick
1 sprig fresh cilantro, plus leaves for garnish
4 cups low-sodium chicken broth
Kosher salt
Vegetable oil, for frying
6 large eggs, separated
All-purpose flour, for dredging

Steps:

  • Preheat the broiler. Place the chiles on a foil-lined broiler pan; broil, turning, until the skins char, about 8 minutes. Place in a bowl, cover with plastic wrap and let cool, about 10 minutes.
  • Peel the chiles. Slice each open lengthwise, about 1/2 inch from the top to 1 inch from the bottom. Remove the seedpod, then rinse to flush out any remaining seeds. Blot dry, inside and out, with paper towels. Carefully stuff each chile with a stick of cheese.
  • Puree the tomatoes, onion and garlic in a blender until smooth. Heat the olive oil in a large skillet over high heat until almost smoking. Add the tomato puree, cloves, peppercorns, bay leaves, cinnamon stick and cilantro sprig and fry, stirring, until thick, 5 to 6 minutes. Add the broth, reduce the heat and simmer until thickened but still brothy, 25 to 30 minutes. Season with salt. Strain, discarding the solids, and keep warm.
  • Preheat the oven to 350. Line a baking sheet with paper towels. Heat 1 to 1 1/2 inches of vegetable oil in a large pot over medium-high heat until a deep-fry thermometer registers 360. Beat the egg whites, 2 tablespoons water and 1 teaspoon salt with a mixer until stiff but not dry. Beat the yolks in a separate bowl until combined, then gently fold them into the whites.
  • Overlap the sides of the slit in the chiles to enclose the cheese, then dredge in flour, working with two chiles at a time. (Coat any tears with flour.) Using tongs, dip and roll the chiles in the egg mixture to coat. Fry in the hot oil until golden, 2 to 3 minutes per side. Transfer with a large skimmer or 2 spatulas to the paper-towel-lined baking sheet, letting the excess oil drip back into the pot. Repeat with the remaining chiles and egg mixture. Place in the oven on the lined baking sheet to cook off any excess oil, about 5 minutes.
  • Ladle the tomato broth into 4 shallow bowls; place 2 chiles in each. Garnish with cilantro.

CHILE RELLENO SQUARES- BREAKFAST VERSION

Chile Relleno Squares- Breakfast Version image

A friend made this for breakfast at our MOPS meetings (Mothers of Preschoolers). They were always a hit!! Very YUMMY but not low fat! I make them every year for our Christmas morning relative open house (if you have kids, you know what I mean- all the grandparents and friends stop by to bring the kids something...). Not a big hit with the kids but the adults love it- and it is REALLY EASY!. Of course, it could be made for dinner as well. However, this tastes nothing like authentic Chile Rellenos. Yummy- but not authentic. PS- Not spicy unless you substitute in another kid of chile for the diced green canned chilies.

Provided by kda949

Categories     One Dish Meal

Time 1h10m

Yield 8-10 serving(s)

Number Of Ingredients 7

10 eggs
16 ounces cottage cheese
1 lb grated monterey jack cheese (about 2 cups??)
1/2 cup flour
1 teaspoon baking powder
2 (7 ounce) cans diced green chilies
1/2 cup butter (I would not substitute with margarine)

Steps:

  • In a 13x9 in baking dish, place the stick of butter.
  • Place dish in the oven and set to 350 degrees (the butter will melt while the oven preheats).
  • Meanwhile, beat eggs in a large bowl.
  • Blend in- by hand- cottage cheese and grated cheese. Add flour, baking powder and green chilies.
  • Remove the baking dish from the oven once the butter has melted and add the egg mixture- no need to stir. Cover with foil. If the oven has not yet preheat, wait until then, otherwise --
  • Bake 45 mins at 350. Remove foil and bake an additional 15 minutes.
  • Optional- serve with sour cream and salsa.

CHILES RELLENOS BREAKFAST STRATA WITH OPTIONAL CHORIZO

Chiles Rellenos Breakfast Strata with Optional Chorizo image

Fluffy eggs seasoned with smoked paprika and a little cayenne, melty cheese, smoky green chilies ... overnight breakfast strata + chiles rellenos = a match made in heaven.

Provided by Kare for Kitchen Treaty

Time 1h10m

Number Of Ingredients 16

2 5- ounce cans whole green chilies (I use mild, but feel free to use a hotter variety if that's what you prefer)
1 1/2 cups shredded cheddar cheese (I use medium)
1 cup shredded monterey jack cheese
6 eggs
2 cups whole milk
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon smoked paprika (plus a little more for sprinkling on top)
1/8 teaspoon cayenne pepper
8 slices white sandwich bread (crusts removed)
If making one half-size vegetarian/one half-size meaty strata (add)
1/2 pound chorizo sausage
If making a full-on meaty strata (add)
1 pound chorizo sausage
Optional toppings
Salsa (avocados, sour cream, chives, fresh cilantro, fresh diced tomatoes)

Steps:

  • In a medium bowl, toss together the cheddar and monterey jack cheese. Set aside.
  • In another medium bowl, beat the eggs, milk, smoked paprika, cayenne, salt, and pepper until thoroughly combined.
  • Lay the chilies on a cutting board and cut them in half.
  • Select the version you're making below and continue.
  • Full-on veggie version
  • Grease an 8" x 8" baking pan with butter or non-stick cooking spray.
  • Lay half the chilies flat in the bottom of the baking dish (about 6 chili halves). Lay four slices of bread over the chiles. Pour half the egg mixture over the top of the bread and chilies. Top with half the cheese. Repeat layers: chilies, bread, eggs, and cheese. Sprinkle evenly with a few quick dashes of smoked paprika.
  • Continue to "Refrigerate overnight and then bake" step below.
  • Brown 1/2 pound chorizo in a medium saute pan over medium heat until cooked through. Drain. Set aside.
  • One half-size veggie version/one half-size meaty version
  • Grease two approximately 4" x 8'' baking pans/casserole dishes with butter or non-stick cooking spray.
  • Lay half the chilies in the bottom of the baking dish (about 3 chili halves each). Lay four slices of bread over the chiles (2 slices of bread per dish). Sprinkle half of the sausage over the meaty version. Top each with about 1/2 cup of the egg mixture. Sprinkle about 1/3 cup of cheese onto each. Repeat layers: chilies, bread, sausage on the sausage version, the rest of the eggs divided evenly between, and the remaining cheese. Sprinkle with a couple of pinches of smoked paprika.
  • Continue to "Refrigerate overnight and then bake" step below.
  • Brown 1 pound chorizo in a medium saute pan over medium heat until cooked through. Drain. Set aside.
  • Full-on meaty version
  • Grease an 8" x 8" baking pan with butter or non-stick cooking spray.
  • Lay half the chilies flat in the bottom of the baking dish (about 6 chili halves). Lay four slices of bread over the chiles. Sprinkle on half the browned chorizo. Pour half the egg mixture over the top of the bread, chilies, and sausage. Top with half the cheese. Repeat layers: chilies, bread, sausage, eggs, and cheese. Sprinkle evenly with a few quick dashes of smoked paprika.
  • Continue to "Refrigerate overnight and then bake" step below.
  • Refrigerate overnight and then bake
  • Cover tightly and refrigerate overnight, or for at least three hours.
  • In the morning, uncover and bake at 325 degrees for 40 - 50 minutes, until the strata is puffy, golden, and no longer jiggles in the middle.
  • Serve with optional toppings if desired.

CHILE RELLENO PANCAKES

Chile Relleno Pancakes image

This tasted and felt just like a chile relleno, which isn't surprising, as we used the same ingredients. Not only did it taste the same, but I think it's easier to eat, since we don't have to worry about eating around the seedpod and stem. If you love chile rellenos as much as I do, you'll love these pancakes.

Provided by Chef John

Yield 4

Number Of Ingredients 17

4 medium poblano chile peppers
1 tablespoon olive oil
½ cup diced onions
3 cloves garlic, minced
salt to taste
2 cups marinara sauce
1 ¼ cups chicken broth, or more as needed
4 teaspoons chili powder, or to taste
1 teaspoon dried oregano
freshly ground black pepper to taste
1 pinch cayenne pepper, or to taste
½ teaspoon ground cumin
¼ teaspoon ground cinnamon
5 large eggs
6 ounces Monterey Jack cheese, cubed
4 tablespoons all-purpose flour
1 teaspoon olive oil, or as needed

Steps:

  • Char peppers over an open flame, turning often, until skin is black and they are almost soft. Wrap peppers in a few paper towels and then in a kitchen towel. Let steam in the towel for at least 15 minutes.
  • While peppers rest, heat 1 tablespoon olive oil in a saucepan over medium-high heat. Add onions, garlic, and a big pinch of salt; saute until onions turn translucent, 3 to 4 minutes. Stir in marinara sauce, 1 1/4 cup chicken broth, chili powder, oregano, pepper, more salt, cayenne, cumin, and cinnamon; bring to a simmer. Reduce heat to medium-low and simmer, stirring occasionally, for 30 minutes. Add more chicken broth for a thinner sauce if desired. Taste and adjust seasonings if needed. Keep warm until needed.
  • Remove the charred skin and seedpods from the peppers and rinse out the loose seeds. Slice the pepper into 1/4-inch strips.
  • Crack 2 whole eggs into one bowl, and then separate 3 more eggs, with the whites going into another bowl, and the yolks going into the first bowl with the whole eggs.
  • Whisk until the bowl of whole eggs and yolks with a pinch of salt until light and airy. Gradually whisk in flour and set aside. Whisk the whites into soft peaks and use a spatula to fold the whites into the yolk mixture. You don't have to be too gentle, but the batter should end up light and foamy.
  • Heat 1 teaspoon olive oil over medium heat, and place down a pepper-shaped or round-shaped layer of the batter, about 1/4-thick, using about 1/8 of the batter for each pancake.
  • Cover the surface with sliced pepper and cheese cubes and spoon and spread another 1/8 of the batter over the top, covering up as much of the peppers and cheese as possible, going all the way to the edges.
  • Cover and cook until the bottom is golden brown, 3 to 4 minutes, before flipping over. Cover and cook the second side until golden brown, or until the batter is cooked though, and the cheese inside has melted, 3 to 4 minutes.
  • Ladle sauce onto a plate or into a shallow bowl and top with a chile relleno pancake.
