My Aunt Bobra's famous banana bread recipe. This recipe took her years to get just right. It's delicious with a high quality berry jam. Optional additions include raisins, walnuts, cashews, sunflower seeds, chopped dates, and dried cranberries.

¾ cup whole wheat flour
¾ cup all-purpose flour
1 teaspoon baking soda
½ teaspoon kosher salt, or to taste
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
½ cup butter, softened
½ cup white sugar
1 egg
1 teaspoon vanilla extract
3 ripe bananas
¼ cup plain yogurt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan. In a bowl, whisk together the whole wheat flour, all-purpose flour, baking soda, kosher salt, cinnamon, and nutmeg.
  • Mash together the butter and sugar in a mixing bowl until creamy; beat in the egg and vanilla extract with an electric beater. In a third bowl, mash the bananas with the yogurt until smooth. Mix the flour mixture into the butter mixture in several additions, alternating with the banana mixture until the batter is smooth. Pour into the prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted into the center of the banana bread comes out clean, 50 to 60 minutes. Let the bread cool in the pan for 10 minutes, then finish cooling on a cooling rack.

Nonstick cooking spray
4 medium-ripe bananas, mashed (1 2/3 cups)
2 large eggs
1 cup granulated sugar
1/2 cup coconut oil, melted
3 tablespoons plain yogurt
1 teaspoon rum extract
1 teaspoon pure vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon fine salt
4 tablespoons (1/2 stick) unsalted butter
1/2 cup dark brown sugar
1/4 cup spiced rum
1 teaspoon finely grated orange zest
Vanilla ice cream, for serving, optional

Steps:

  • Preheat the oven to 350 degrees F. Spray a 9-by-4-inch loaf pan with cooking spray.
  • Combine the bananas, eggs, sugar, coconut oil, yogurt, and rum and vanilla extracts in a medium bowl and stir.
  • Whisk together the flour, baking powder and salt in a large bowl.
  • Make a well in the center of the dry ingredients. Pour the wet ingredients into the dry ingredients and stir until the flour is incorporated and the batter is smooth. Pour the batter into the prepared loaf pan and bake until golden brown and a skewer inserted into the center of the loaf comes out clean, about 1 hour. Remove from the oven and set aside while you make the glaze.
  • Melt the butter in a saucepan over medium heat. Add the brown sugar and 1/2 cup water and stir. Cook until the sugar dissolves, and then continue cooking another 3 to 5 minutes over low heat until the mixture bubbles around the edges. Turn off the heat and carefully (to prevent flaming) stir in the rum and the orange zest.
  • Slowly pour half of the glaze over the banana bread, allowing it to seep into all the surfaces. Wait until the glaze has been absorbed, about 30 minutes, and then turn the loaf out of the pan.
  • Slice and serve with vanilla ice cream, and the remaining glaze.

Steps:

  • Set oven to 350 degrees F. Line the bottom of a loaf pan with parchment paper.
  • Sift together the flour, baking soda, cinnamon and salt. Beat sugar and eggs with a whisk until light and fluffy, about 10 minutes. Drizzle in oil. Add mashed bananas, creme fraiche, and vanilla. Fold in dry ingredients and nuts. Pour into a lined loaf pan and bake for about 45 minutes to 1 hour.

I made this yesterday from the recipe on the All-Bran packet. I just love this banana bread! It has a great taste and is low fat and high fibre! Perfect for morning tea or a snack. I like mine with just a little jam or peanut butter spread and served warm.

1 cup all-bran cereal
3/4 cup whole wheat flour
2 teaspoons baking powder
1/4 teaspoon bicarbonate of soda
1/4 cup 1% low-fat milk or 1/2 teaspoon powdered dry milk
1/2 cup caster sugar
1 egg
2 tablespoons water
1 cup mashed banana (approx 2 bananas)

Steps:

  • Preheat oven to 180 degree C.
  • Combine dry ingredients and add egg, water, milk and banana.
  • Mix until well combined.
  • Spoon into a greased loaf tin.
  • Bake in oven for 30-45 minutes or until cooked when tested.
  • Note- the original recipe says to cook for 45 minutes but mine was done at 30 minutes, so I suggest testing at 30 minutes so it dosn't overcook.

1/2 cup melted unsalted butter or vegetable oil, plus more for greasing pan
1 3/4 cups all-purpose flour (see Cook's Note)
1 cup toasted pecans, chopped
1/2 cup granulated sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
Fine salt
1/4 teaspoon freshly grated nutmeg
2 large eggs, lightly beaten
1/4 cup buttermilk, sour cream or yogurt
1/2 cup light brown sugar, lightly packed
1 teaspoon pure vanilla extract
4 soft, very ripe, darkly speckled medium bananas, mashed (about 1 1/2 cups)

Steps:

  • Preheat the oven to 350 degrees F. Lightly butter one 9-by-5-inch loaf pan.
  • Whisk together the flour, pecans, granulated sugar, baking soda, cinnamon, 1/2 teaspoon salt and nutmeg in a large bowl. Whisk together the eggs, melted butter, buttermilk, brown sugar and vanilla in a medium bowl; stir in the mashed bananas. Fold the banana mixture into the flour mixture until just combined (it's OK if there are some lumps).
  • Pour the batter into the buttered pan and lightly tap the pan on the counter to evenly distribute the batter. Bake until browned and a toothpick inserted into the center comes out completely clean, about 1 hour. Let the bread cool for 10 minutes in the pan, then turn out onto a rack to cool completely.

  • Preheat oven to 325.
  • Spray a 9x5 loaf pan (preferably glass) with nonstick spray.
  • Mash bananas in a medium bowl. You should have about 1 cup.
  • Beat in sugar, egg, and melted butter.
  • Stir in flour, salt, and soda just until moistened.

5 tablespoons butter, cubed
1 cup packed brown sugar, divided
1-1/2 cups mashed ripe bananas
3 tablespoons dark rum
1-1/2 cups all-purpose flour
1/4 cup ground flaxseed
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
2 eggs
1/3 cup fat-free plain yogurt
GLAZE:
1/3 cup confectioners' sugar
1 tablespoon butter, melted
1 tablespoon dark rum

Steps:

  • In a small saucepan, melt butter. Stir in 1/2 cup brown sugar and bananas. Bring to a boil. Reduce heat; simmer, uncovered, for 3-4 minutes or until slightly thickened. Remove from the heat. Stir in rum; set aside to cool., In a large bowl, combine the flour, flax, baking soda, salt, and cinnamon. In another large bowl, whisk the eggs, yogurt, banana mixture and remaining brown sugar. Stir into dry ingredients just until moistened., Transfer to a 9x5-in. loaf pan coated with cooking spray. Bake at 350° for 50-55 minutes or until a toothpick inserted in the center comes out clean.
