flavorful steamed gluten with a nice outside crust, topped with wild mushroom white wine reduction. the sauce can be made with whatever mushrooms you have around or swapped with something else if you don't like mushrooms. I'd suggest something a little creamy and earthy or umami-y. you could play around a little with the spices but I don't recommend changing much else, so far I've found that even little swaps like using tomato paste instead of tomato sauce ruins the texture. if you manage to make this work on the BBQ or similar please comment

1/2 cup vegetable broth (I use mushroom Better Than Bouillon)
2 tablespoons tomato sauce (a smooth marinara or pizza sauce will do)
1 1/2 tablespoons soy sauce
1 tablespoon olive oil
1/2 teaspoon liquid smoke
1 cup vital wheat gluten
1 teaspoon garlic powder
3/4 tablespoon chickpea flour
1 1/2 teaspoons dried onion flakes
1 tablespoon nutritional yeast
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
1/4 teaspoon chili powder
4 tablespoons butter
1/4 cup onion (chopped)
2 1/2 cups wild mushrooms, roughly chopped. chanterelle and oyster are best
1/2 cup dry white wine
1 -2 garlic clove
1/4 teaspoon dill
3 tablespoons chickpea flour
salt and pepper
1 tablespoon vegetable oil

Steps:

  • In a large bowl, combine the gluten powder, 1/2 Tbs chickpea flour, nutritional yeast, and spices. separately combine the broth, soy sauce, tomato sauce and olive oil. Mix well.
  • Add the wet ingredients to the dry ingredients and stir until you have a dough. Knead for 3 minutes. the dough will become firmer as the gluten develops. Let it rest for 10 minutes and then knead again for a minute. divide into 4 equal pieces. Knead each piece and form into the shape of a steak.
  • Wrap each piece loosely in aluminum foil or parchment paper. Place the packets in a steamer and steam for 30 minutes. When the steaks cool, transfer them to the refrigerator for at least an hour but preferably overnight.
  • in the meantime, sautee your onions, garlic, and mushrooms in butter until slightly softened. add the wine and simmer on medium until it has reduced down to a rich sauce. add salt and pepper and dill to taste. some might like a splash more white wine.
  • Heat vegetable oil to medium high. season the remaining chickpea flour with salt and pepper. Lightly dredge the seitan steaks in the flour. Shake off the excess. Cook for 3 minutes per side, until they have a crispy, browned coating. top with your mushroom reduction and serve with potatoes and salad.

1 large onion
1/2 cup white wine or 1/2 cup water
3 cups sliced mushrooms
1 large green bell pepper, diced
1 red bell pepper, diced (optional)

1/4 cup light miso, dissolved in 1/2 cup water
1 (28 ounce) can chopped tomatoes

Steps:

  • Preheat the oven to 350°F.
  • Cut the onion in half, then into thin slices. Heat the wine or water in a large skillet or pot and braise the onion until it is soft, about 5 minutes. Add the sliced mushrooms, bell peppers, garlic, and basil. Continue cooking over medium heat for 8 to 10 minutes, then stir in the dissolved miso, tomatoes, and pepper. Simmer 5 minutes.
  • Spread 1/2 cup of sauce evenly in the bottom of a large casserole dish. Arrange the seitan slices in the dish, then cover with the rest of the sauce. Cover the dish and bake for 20 to 25 minutes.

2 tablespoons vegetable oil
salt and pepper, to taste
16 ounces fresh mushrooms, sliced
2 tablespoons butter
1 garlic clove, minced
1 tablespoon all-purpose flour
1/2 cup water or 1/2 cup beef broth
1/2 cup white wine
1 teaspoon Worcestershire sauce

Steps:

  • Season bison steaks with salt and pepper, to taste.
  • Heat oil in a skillet over high heat.
  • Sear steaks in oil until light brown on each side, about 3-4 minutes per side.
  • *Note: the cooking time for the bison will vary depending on the thickness of your steaks. Bison should never be cooked more than medium because otherwise it will get too tough.
  • When bison is done cooking, remove from skillet and keep warm.
  • Add mushrooms, butter, and garlic to meat drippings in skillet.
  • Cook about 5 minutes at medium high heat.

My husband and I were at a wedding reception at a very posh country club. He was served the most marvelous fillet mignon there, I opted for the chicken. It was my mission then to find this recipe and make a duplicate. He only allowed me a bite of steak the size of a grape with a small amount of sauce on it (and that was grudgingly). The last place I thought I would find a good steak recipe was Cooking Light, but there it was! Now when we need to impress, we serve this recipe. It tastes like a dish you'd be served at a five-star Hotel.

4 filet mignon steaks, 1 inch thick
1 tablespoon freshly ground black peppercorns
1/2 teaspoon kosher salt
3 ounces chopped shiitake mushroom caps
1 tablespoon flour
1/4 cup shallot (minced)
1 tablespoon balsamic vinegar
1/3 cup red wine (I used Merlot, my favorite)
1 cup beef broth
2 teaspoons Worcestershire sauce
1 teaspoon tomato paste
1/8 teaspoon rosemary
1/2 teaspoon Dijon mustard

Steps:

  • Prepare Mushroom wine Sauce first and set aside: Combine Mushrooms and flour in a bowl and toss to coat and set aside.
  • In a medium skillet, combine wine, shallots, and balsamic vinegar.
  • Bring to a boil and cook until thickened.
  • Reduce heat.
  • Add broth, Worcestershire, tomato paste, and rosemary, stir to combine and cook 1 minute.
  • Add mushrooms and cook 3 minutes, until mushrooms are tender.
  • Stir in mustard.
  • Serve sauce over Filet Mignon.
  • Fillet Mignon: Sprinkle steak with crushed black pepper and salt.
  • Heat a non stick skillet over medium high heat or grill over a medium heat.
  • Cook steaks for 3-5 minutes on each side until fillet is cooked the way you like it.
  • Serve with sauce.

This is a good one. I got it from a vegetarian cooking show. It has mushrooms, oatmeal, cheese, soy sauce and seasonings. You brown it in a skillet and then make a gravy from mushroom soup and sour cream to put over it before baking it in the oven for 30 minutes. My meat eaters liked it too. The cooking time includes the frying time for patties and the time in the oven.

8 white button mushrooms, grated (wipe them with a damp paper towel before using but do not wash them in water because they will retai)
1 medium onion, chopped
1 tablespoon mckay's beef-like seasoning
1 cup instant oats
1 cup old fashioned oats
1 teaspoon garlic powder (I use 2 because we like garlic)
2 tablespoons onion powder
1 tablespoon nutritional yeast flakes
1 dash poultry seasoning
1 dash light soy sauce
1/2 cup water
1 cup cheddar cheese, grated
2 eggs
8 ounces sour cream (you can use the lite if you prefer)
1 -2 tablespoon vegetable oil
1 (10 3/4 ounce) can mushroom soup (I use the Healthy Request variety from Campbell's )

Steps:

  • Preheat oven to 350.
  • Wipe mushrooms with moist paper towel and grate.
  • Chop Onion.
  • Saute together and then take out of pan to drain on paper towel until ready for them.
  • Put oats in bowl.
  • Add all of the seasonings and the mushrooms and onions.
  • Add soy sauce.
  • Add grated cheese and eggs and mix well.
  • Let stand aboout 30 minutes before making patties.
  • While waiting: In a bowl, mix the mushroom soup, sour cream Mix well. add some of the water to make it so its not too thick.
  • When the patty mixture done sitting, make patties with your hands, (not too thick) and brown them well on both sides.(be careful not to have the heat too high because the cheese in it will burn) Don't make them too big, about the size of a small hamburger patty).
  • Place in a large casserole dish that has been sprayed with non-stick spray and cover them evenly with the "mushroom gravy" mixture.
  • Bake at 350 for about 30 minutes.

HOMEMADE SEITAN STEAKS & WILD MUSHROOM GRAVY



Homemade Seitan Steaks & Wild Mushroom Gravy image

This fresh seitan recipe from the Candle Cafe is the best I've ever had, but unfortunately it does take about 6 hours to make. A lot of that time is simmering or marinating time, but you need to start making this early and be aware that it can take a good half hour to knead the starch out of the dough. If will look like a lot when you first form the dough, but by the time you're done washing out the starch, it will have shrunk a lot! It will puff back up a bit during the simmering, though. These end up with a really good flavor and are kind of reminiscent of a beef roast/steaks. These go well with the wild mushroom gravy that the cafe serves them with, so I included that recipe with the seitan one here. The ingredients following the hot sauce are for the gravy. You can also use leftover marinade for portobello burgers to grill in the summertime.

4 cups whole wheat bread flour
4 cups unbleached white flour
6 cups vegetable broth
2 cups extra virgin olive oil
1 cup tamari soy sauce
1/2 cup Dijon mustard
16 garlic cloves, minced
1 tablespoon black pepper, freshly ground
2 teaspoons hot sauce
6 tablespoons extra virgin olive oil
2 cups onions, finely chopped
2 cups mushrooms, chopped (shiitake, oyster, chanterelle, portobello, etc)
1 cup brown rice flour
1/2 cup tamari soy sauce
1 1/2 teaspoons dried sage
1 1/2 teaspoons dried rosemary
1 1/2 teaspoons dried tarragon

Steps:

  • To make the seitan, combine the whole wheat and white flours in a large mixing bowl. Mix with enough water to form a stiff dough. Gather into a ball and knead vigorously on a floured surface for at least 13 minutes.
  • Place in a bowl and cover the dough with cold water.Let stand for 30 minutes or up to overnight in the refrigerator.
  • Pour off the water and cover with fresh water. Knead the dough under the water to wash out the starch and some of the bran. Pour off the milky white water and cover with fresh water. Keep washing and rinsing while kneading the dough until the water becomes almost clear.
  • Divide the dough in half, place the halves in a large stockpot, and cover with the 6 cups of broth. Bring to a boil, then turn down the heat and simmer for 1 1/2 to 2 hours. Remove from the heat and set aside to cool.
  • Slice the dough into "steaks" and place in a large baking dish.
  • To make the marinade, place the 2 cups of olive oil, 1 cup tamari soy sauce, dijon mustard, garlic, pepper, and hot sauce in a blender and blend until smooth. Pour over the seitan and marinate in the refrigerator for at least 2 hours.
  • Prepare the steaks by grilling them on a charcoal, gas or stovetop grill over medium-high heat until golden brown (about 4 minutes per side). They may also be broiled instead of grilled.
  • To make the gravy, saute the mushrooms and onions in 3 T of olive oil. In a medium saucepan, heat the remaining 3 T of olive oil and add the brown rice flour to make a roux. Stir in 2 cups of water, 1/2 c tamari soy sauce, and the herbs and mix well. Bring to a boil and simmer until gravy is thickened (about 10 minutes). Stir in the mushroom-onion mixture and cook over low temperature until heated through. If the gravy is too thick, add water 1 T at a time until desired consistency is reached. Serve over steaks.

  • First add the ingredients for the seitan steaks in your food processor (except vital wheat gluten) and process until smooth.
  • Now add the gluten evenly on top of the wet mix. Process until JUST COMBINED! You do not want to over mix or the steaks could turn out tough. See step by step photos in above post if necessary
  • Turn the seitan dough onto the counter. Do not kneed the dough! Press into a disc approximately 8-9 inches in diameter and about 1/2 inch thick. Portion the steaks like you would a pie, into 4-6 pieces. Wrap steaks individually in tin foil, wrap loosely to leave room for expansion during steaming.
  • Place in your steamer basket (pot) with lid and steam for 30 minutes over medium heat, flipping them halfway through.
