5 quarts water
1 (16 ounce) package rotini pasta
1 ¼ cups tomato juice
1 ½ tablespoons olive oil
1 tablespoon red wine vinegar
1 ½ teaspoons chili powder
¾ teaspoon paprika
½ teaspoon salt
¼ teaspoon ground black pepper
½ cup grated Parmesan cheese
½ cup whole corn kernels, cooked
⅓ cup chopped fresh cilantro
¼ cup chopped green onions
2 tablespoons red bell pepper, diced
2 tablespoons diced green bell pepper
1 boneless chicken breast half, cooked and diced

Steps:

  • Bring water to a boil and add the Rotini pasta and cook according to package directions. Rinse under cold running water and drain well.
  • Stir the tomato juice, olive oil, vinegar, chili powder, paprika, salt and black pepper together. Toss it with the drained pasta and refrigerate for 2 to 4 hours.
  • Combine the Parmesan cheese, corn kernels, cilantro, scallions, red bell pepper, green bell pepper and diced chicken breast. Combine with the chilled pasta mixture and cover and refrigerate for at least 8 hours or overnight before serving.

2-1/2 cups cut fresh green beans
1 cup minced fresh cilantro
1/4 cup fat-free sour cream
2 tablespoons lime juice
2 tablespoons balsamic vinegar
2 garlic cloves, minced
1-1/2 teaspoons ground cumin
1/4 teaspoon salt
Dash cayenne pepper
2 cups frozen corn, thawed
1 can (15 ounces) pinto beans, rinsed and drained
1 can (15 ounces) black beans, rinsed and drained
1 small sweet red pepper, finely chopped
1 small red onion, chopped
1 can (4 ounces) chopped green chilies
1 can (2-1/4 ounces) sliced ripe olives, drained
1/2 cup shredded reduced-fat cheddar cheese

Steps:

  • Place green beans in a small saucepan and cover with water. Bring to a boil; cover and cook for 3-5 minutes or until crisp-tender. Drain and immediately place beans in ice water. Drain and pat dry. , For dressing, in a small bowl, combine the cilantro, sour cream, lime juice, vinegar, garlic, cumin, salt and cayenne. , In a large bowl, combine the green beans, corn, pinto beans, black beans, red pepper, onion, chilies and olives. Sprinkle with cheese. Pour dressing over salad; toss gently to coat. Cover and refrigerate until serving.

8 ounces farfalle (about 2 cups)
2 stalks broccoli, cut into florets
1/2 cup mayonnaise
1/2 cup buttermilk
1/4 cup plus 1 tablespoon chopped fresh chives
1/4 cup chopped fresh parsley
Juice of 1 lime
Freshly ground black pepper
2 avocados, diced
One 12-ounce piece deli ham, diced (about 2 cups)
8 ounces yellow Cheddar cheese, shredded
1 small head romaine lettuce, sliced
2 tomatoes, diced

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook until al dente (about 2 minutes less than the label directs), adding the broccoli during the last 4 minutes of cooking. Drain the pasta and broccoli and rinse under cool water; shake off the excess. Remove the broccoli and pat dry.
  • Whisk the mayonnaise, buttermilk, 1/4 cup chives, the parsley, half of the lime juice, 1/4 teaspoon salt, and pepper to taste. Toss the pasta and a few tablespoons of the dressing in a medium bowl.
  • Assemble the salad: Toss the avocados with the remaining lime juice in a large glass serving bowl and season with salt; arrange in an even layer. Top with layers of the ham, broccoli, pasta, cheese, lettuce and tomatoes. Drizzle some of the remaining dressing on top and sprinkle with the remaining 1 tablespoon chives, or cover and refrigerate the salad and dressing separately up to 6 hours. (Bring to room temperature before serving.)

1 1/4 cup V-8 mixed vegetable juice
1 1/2 tablespoon olive oil
1 tablespoon red wine vinegar

1 1/2 lbs boneless skinless chicken breasts
4 tablespoons cajun spices (I use Tony's Creole Seasoning or Zataran's)
1/2 cup cilantro, chopped
1/2 cup green onion, diced
2 cups tomatoes, diced (I used 15 oz can petite diced tomatoes, drained)
4 garlic cloves, crushed
1 1/2 quarts heavy cream
12 ounces roasted red peppers
1/4 cup salted butter
16 ounces penne pasta
6 ounces snow peas
6 ounces parmesan cheese, shredded (we just sprinkle on top, like spaghetti)

Steps:

  • Cook your chicken first.
  • To blacken, lightly sprinkle blackening seasoning on both sides of the chicken.
  • Heat a stainless steel pan over medium-high heat. Cook the chicken completely - turning only once.
  • Hint: You may want to do this on your grill outside because a lot of smoke can be generated.
  • Slice the chicken into the thin long strips.
  • Set the chicken aside while you prepare the sauce and noodles.
  • In a large pot, start heat your water to a boil in preparation for the pasta.
  • In a large stainless saucepan, melt your butter over medium heat.
  • While the butter is melting, finely mince the garlic and then add to the pan.
  • Cook the garlic for two minutes and then add all of the cream.
  • Stir occasionally while it reduces by half.
  • Hint: If your garlic turns brown then the pan was too hot - start over, it will be worth it.
  • While the cream is starting to reduce, prepare your other ingredients by finely mincing the green onions, cilantro, tomatoes & roasted red peppers - but keep the tomatoes separate.
  • Stir in the cilantro, green onion & roasted red peppers while it's reducing.
  • Your cream should be simmering now as it reduces - this process will normally take more than 20 minutes - stir occasionally and keep a watch out for it boiling over.
  • Boil the pasta, which should take at least 12 minutes.
  • Clean the snow peas and add them to the cream - if they simmer in the cream for at least 10 minutes they are perfect - cooked through and hot, but still a bit crisp.
  • When the pasta is done, the cream should be reduced by half now. The cream's texture should not be thick like Alfredo sauce, but not runny like water.
  • Drain the pasta well! Penne pasta is a pain because it holds so much water, but too much left over water will thin out the sauce you worked so hard for.
  • Put the noodles back in its pot and pour your cream over the noodles.
  • Add the chicken and stir everything together well.
  • Serve immediately as this dish is not good as leftovers or once the cream cools.
  • Spoon out an appropriate amount onto a plate and then sprinkle some diced tomatoes on top - you can also use some left over cilantro sprig as garnish if you like.
  • I usually serve this with warm Italian bread with soft butter on the side.

1 tbsp taco seasoning
1 head romaine lettuce
1 avocado, sliced
1/2 cup pico de gallo ((store bought))

1/3 cup light mayo
1 tbsp lime juice
1 tbsp water
1/2 tsp chili powder
1/2 tsp paprika (smoked paprika is preferred)

Steps:

  • Rub chicken cutlets with olive oil and taco seasoning. Heat a large skillet over med-high heat and cook chicken for 3-4 minutes per side until cooked through. Set aside and let cool, then slice chicken thinly.
  • Meanwhile, mix together ingredients for santa fe sauce.
  • When ready to serve salad, toss lettuce with ranch dressing, then top with sliced chicken, avocado, pico de gallo, cilantro and tortilla strips. Drizzle santa fe sauce overtop then serve and enjoy!

1/2 cup chopped red onion
1 can (12oz) kernel corn (I used fresh cooked corn from cob)
1 jalapeño pepper (seeded and finely diced)

  • In small jar mix together oil and lime juice.

2 red peppers, roasted
4 cloves garlic, roasted
2 tsp chipotle puree (take a can of chipotle peppers and puree it)
2 tsp maple syrup
2 Tbsp rice wine vinegar
2 Tbsp fresh lime juice
1/2 tsp salt
3/4 cup olive oil
Salad
4 cups dry fusilli pasta
3 cups corn, fresh or frozen
1 Tbsp olive oil
1/4 tsp salt
4 Tbsp minced sage or 3 tsp dried sage*
1 bunch green onions, chopped
Salt and pepper to taste
2 pint s grape tomatoes
1/2 cup crumbled feta cheese
2 Tbsp pine nuts, toasted

Steps:

  • 1. Begin by preparing the dressing. Seed and peel the roasted peppers. Place them, along with the garlic and chipotle puree in a food processor and blend until smooth. Add maple syrup, vinegar, lime juice, salt and blend. With the motor running, slowly drizzle in the oil until well incorporated and thickened. Set aside.
  • 2. In a large pot of boiling water, cook the pasta until al dente. Set aside while you prepare the remaining ingredients.
  • 3. Preheat the oven to 350°F. Toss corn with oil and salt and evenly spread it out in a small baking pan. Roast in the oven for 10 minutes. Remove and cool.
  • 4. To assemble the salad, toss pasta in a large bowl with enough dressing to coat. Add corn, sage and green onions and toss well. Add more dressing to taste and season with salt and pepper. Just before serving, garnish with grape tomatoes, crumbled feta cheese and pine nuts.

½ cup teriyaki marinade
¼ cup chopped fresh cilantro
2 tablespoons peanut butter
1 tablespoon red wine vinegar
1 tablespoon lime juice
1 tablespoon brown sugar
3 cloves garlic, minced
1 teaspoon sesame oil
1 teaspoon lime zest
½ cup olive oil
1 teaspoon freshly ground black pepper
3 (5 inch) corn tortillas, cut into strips
2 teaspoons olive oil, or to taste
2 tablespoons olive oil
1 (16 ounce) can whole kernel corn, drained
1 (15 ounce) can black beans, rinsed
1 head romaine lettuce, chopped
1 ½ cups shredded Monterey Jack cheese

Steps:

  • Combine chicken breasts and teriyaki marinade in a large resealable plastic bag. Marinate in the refrigerator for at least 1 hour.
  • Combine cilantro, peanut butter, red wine vinegar, lime juice, brown sugar, garlic, sesame oil, and lime zest in a food processor; blend well. Pour in 1/2 cup olive oil slowly and blend until dressing is smooth. Add pepper; blend again.
  • Preheat oven to 350 degrees F (175 degrees C). Spread corn tortilla strips on a baking sheet; drizzle 2 teaspoons olive oil on top.
  • Bake in the preheated oven until crispy, 5 to 10 minutes.
  • Heat 2 tablespoons olive oil in a skillet over medium heat. Add chicken breasts; cook until browned, 7 to 10 minutes per side. Cool until easily handled, about 5 minutes. Slice into thin strips.
  • Toss corn, black beans, and romaine lettuce together in a large bowl. Top with Monterey Jack cheese, chicken, and tortilla strips. Pour dressing over salad.

This recipe is about 20+ years old. It was on the menu of TGIF (Friday's) restaurant and I asked for the recipe. Although it's no longer on their menu, I make it regularly. It can be eaten when it's hot, warm or cold. It's always good!

3-4 grilled chicken breasts (i add seasonings for flavor)
1 pkg cooked pasta (your choice)
olive oil for saute
1 clove minced garlic
1 bunch cilantro, chopped
4-5 green onions, sliced
3/4 c chopped walnuts or pecans
1 each green, yellow, red peppers - thinly sliced length wise
1 large jalapeno pepper-finely chopped
1 8 oz. container of pesto sauce (or you can make your own)
parmesan cheese to taste
salt and pepper to taste

Steps:

  • 1. Saute walnuts, onions, peppers, cilantro and garlic in olive oil...do not overcook...keep peppers a little firm. Salt and pepper to taste.
  • 2. Put pasta in a large serving bowl or dish...toss with pesto sauce to coat evenly. Add sauteed ingredients and toss lightly. Cut grilled chicken into strips and place on top of tossed pasta....Sprinkle with parmesan cheese and coarse ground pepper.
  • 3. Takes about 30 - 45 minutes from start to finish.
  • 4. Add a Caesar salad and some warm garlic or cheese bread and you have a scrumptious meal! Oh yes....and don't forget the wine!

1 pound penne pasta
2 to 3 green chiles, chopped (1/2 cup)
8 ounces boneless roast chicken (I like thighs)
3 tablespoons chopped sun-dried tomatoes in oil
1/2 cup pine nuts
2 tablespoons olive oil
1/2 yellow onion, chopped
6 cloves garlic, chopped
Salt and freshly ground black pepper

Steps:

  • Bring a large pot of salted water to a boil over medium heat. Add the pasta and cook until al dente.
  • Roast the green chiles over a flame until blackened. Let cool in a paper bag, then peel but do not rinse. When cool enough to handle, chop and set aside.
  • Toast the pine nuts until golden in a dry pan over low heat. Dice the roast chicken and the sun-dried tomatoes.
  • Add the olive oil to a large pan and saute the onion and garlic until golden. Stir in the chicken, sun-dried tomatoes, and green chile and cook for 1 minute. Season with plenty of salt and pepper, to taste. Drain the penne and add it to the pan. Toss until all of the ingredients are evenly mixed. Transfer to a serving bowl and garnish with toasted pine nuts... Buon Appetito!

  • Line a small baking dish (8x8) with foil and lightly grease with nonstick cooking spray. Pound chicken to tenderize and add to prepared dish. Pour barbecue sauce over chicken. You can let marinate for up to 24 hours (optional), otherwise proceed directly to bake 375F for 20 to 25 minutes, or until chicken is done. Remove from oven and let rest 5 minutes then dice into bite size pieces and toss with 1 tablespoon BBQ sauce. Set aside.
  • While chicken is baking, heat 1 tablespoon olive oil over medium high heat. Add red onion and saute 2 minutes then add red bell pepper, black beans, corn, tomatoes, green chilies, and garlic. Saute for 1- 2 minutes or just until bell peppers are crisp-tender. Remove to a plate.
  • To the same skillet, melt 1 tablespoon olive oil in 1 tablespoon butter over medium heat. When butter is completely melted, whisk in flour. Cook, while stirring, for 2 minutes, then turn heat to low. Slowly whisk in chicken broth, then milk, stirring constantly until smooth (it will be thick). Turn heat to medium high and bring the sauce to a simmer. Add Cheese Sauce spices and simmer until thickened.
  • When sauce has thickened, remove from heat and stir in cheeses until smooth, followed by sour cream. Add more milk if needed to reach desired consistency.
