QUICK AND EASY GINGERBREAD PANCAKES
Gingerbread spices are used to 'spice up' these delicious, kid friendly pancakes.

Steps:
- Warm a skillet over medium-low to medium heat. Since these pancakes have a little sugar and molasses in them you want to make sure that the pan doesn't get too hot or the pancakes could burn.
- Mix together the ingredients listed above.
- Pour 1/4 cup of batter into skillet for each pancake. Cook until the edges of the pancake start to get firm and bubbles form on top. Flip over and continue cooking for 1 1/2 - 2 minutes, until the pancakes are done.
- Serve with maple syrup and whipped cream if desired. You can also sprinkle a little bit of the gingerbread spice mix over the top.

- In a large bowl, whisk together flour, brown sugar, baking powder, baking soda, salt and spices.
- In a separate bowl, whisk milk, molasses, eggs, melted butter, fresh ginger and lemon zest until well combined.
- Add the wet ingredients to the dry ingredients and gently stir until combined. (A few small lumps are fine.)
- Heat a lightly greased griddle or nonstick skillet over medium-low heat. Drop the pancakes into the pan by the quarter cup, making sure to leave plenty of room in between for the batter to expand.
- Cook until the batter bubbles on the surface and browns on the bottom, a minute or two, then carefully flip. Cook until the batter is completely cooked through and the pancakes are slightly dark brown. Repeat until all the batter is used. Serve pancakes as you make them or keep them warm as you cook them by setting them on a baking sheet in a 250-degree oven.

- In a large bowl, mix eggs and brown sugar until well combined. Add buttermilk, water and brewed coffee, and stir to combine. In another large bowl, sift together the flour, baking powder, baking soda, salt, cloves, cinnamon, ginger, and nutmeg. Add the liquid ingredients to the flour mixture and stir just until combined. Stir in the melted butter.
- Grease a griddle or heavy skillet. Heat griddle or skillet over medium-high heat and then add the batter, by ladlefuls. Cook until little bubbles appear around the edges of the pancake, and then flip. Cook on the second side until golden brown and cooked through in the middle. Serve immediately.

EASY GINGERBREAD

- Set oeven to 350 degrees F.
- Set oven rack to second-lowest position.
- Grease and flour a 9-inch baking dish (knock out any excess flour, can also bake in a 13 x 9-inch pan).
- In a bowl sift together flour, baking soda, spices and salt.
- In another bowl using an electric mixer beat oil and sugar until well combined (about 4-5 minutes).
- Beat in egg and molasses until well combined (about 2 minutes).

- In a medium sized mixing bowl combine the flours, oats, baking soda, salt and spices.
- In another medium sized mixing bowl add the eggs and whisk until lightly blended.
- Add the sugar and milk, oil, and half & half to the eggs and mix until well belended.
- Combine the wet and dry ingredients and, using a spoon, stir until just blended. *Don't over mix, there will be lumps.
- Let the batter rest a few minutes, 5-15.
- Then, on a hot, greased skillet spread large spoonfulls of batter at a time, careful not to crowd the skillet.
- Allow the pancakes to bubble up on top before flipping.
- Cook until done on each side and remove to a warm plate until ready to serve.
- Serve with melted butter, real maple syrup or fresh fruit syrup.
- Enjoy!

- Sift together flour, salt, baking powder, baking soda, ginger, cinnamon, and allspice.
- In a separate small bowl, beat the eggs, buttermilk, oil, and molasses together.
