Number Of Ingredients 7

2.25 cups ginger evans biscuit
0.666666666667 cups milk
2 tablespoons vegetable oil
0.25 cups flour
0.5 pounds sausage
8 units eggs
8 slices velveeta cheese

Steps:

  • Preheat oven to 400 degrees. In large mixing bowl, mix biscuit mix, milk and vegetable oil. Stir together until ball of dough has formed. Pour dough out on floured surface and kneed dough until it becomes pliable. Separate dough into 8 equal balls of dough. Roll each ball out into a 4" tortilla shape. Place on wax paper, placing a piece between each piece of rolled out dough.
  • Brown sausage and drain off excess grease. Add 8 eggs, one at a time. Stir and cook mixture until eggs are slightly undercooked. Place a slice of Velveeta cheese on dough. Add sausage, egg mixture. Fold two sides up like a burrito, fold ends up and press to seal.
  • Place sooth side up on grease cookie sheet and bake until slightly browned on top and golden brown on bottom. Place on cooling rack until cooled. Freeze individually on plate in freezer, then place in freezer bags.
  • To heat up, place in microwave on defrost for 2 minutes, and then cook 30 seconds on each side. Heating instructions may vary.

  • Crack the eggs into a bowl or liquid measuring cup and whisk with the milk and salt until even in colour. Ladle out about 1/3 cup of the eggs into a small bowl and save this for brushing on the pastries.
  • Melt the butter in a non-stick pan over low to medium low heat, and pour in the eggs. The eggs should begin solidifying quickly on the bottom of the pan.
  • Use a silicone spatula to scrape the solidified egg gently from the edges of the pan toward the center. Keep repeating this process until most of the egg has solidified and rumpled up and resembles soft set scrambled eggs.
