This recipe makes fall off the bone ribs in an hour. Don't worry if you don't like pineapple, the ribs do not have a pineapple flavor, the acidity in the pineapple is used to tenderize the meat quickly.

1 bottle barbecue sauce (i use sweet baby ray's)

Steps:

  • 1. In a large pot boil ribs in pineapple juice for 45 mins. Add water if needed if the juice starts evaporating too much.
  • 2. Place ribs in a 9x13 baking dish, baste with sauce on both sides
  • 3. put dish in oven and broil for 2-3 mins for each side until the BBQ sauce starts to slightly carmelize on top

Steps:

  • Preheat oven to 325 degrees Fahrenheit.
  • Combine garlic powder and onion powder.
  • Rub seasoning mixture over the ribs.
  • Line a shallow baking pan with foil; oil or spray foil with nonstick cooking spray.
  • Arrange ribs on the foil.
  • Top ribs with onion slices.
  • Cover with another piece of foil and bake for 1 hour and 15 minutes, or until very tender.
  • Remove the top piece of foil and brush with barbecue sauce.
  • Bake uncovered for about 15 minutes longer, or broil for about 5 minutes.

1 1/2 tablespoons oil
3 lbs country-style pork ribs (thick bone-in ribs will turn out better because they hold together better)
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon pepper
1 teaspoon salt
2 chipotle chiles in adobo, whole
3 garlic cloves, whole
1/2 sweet onion, in large chunks
1/2 cup dark beer
1/4 cup cider vinegar
1 tablespoon Worcestershire sauce
1 cup barbecue sauce, with 1/4 c of cooking liquid stirred in

Steps:

  • Heat pressure cooker over medium heat, add oil.
  • Rub meat with rib seasoning, and brown them in the cooker one or two at a time so you don't end up steaming them.
  • Once the ribs are browned on all sides, add them all back to the cooker with the cooking liquid ingredients.
  • Close the pressure cooker, cook according to your pressure cooker instructions, or about 18-20 mins at high pressure.
  • Pre-Heat your grill pan or barbeque over low heat.
  • When the timer goes off, remove the cooker from heat and run under cool water in the sink.
  • Remove ribs from cooking liquid.
  • Stir 1/4 cup of the cooking liquid into your barbeque sauce of choice (optional: add one of the chipotles from the cooking liquid into the sauce to spice it up).
  • Grill ribs over low heat basting with BBQ sauce and turning every 5 minutes or so until a nice glaze has formed all over the ribs.

Roasting pan (or rimmed baking sheet)
Silicone basting brush (optional)
Country-style pork ribs*
Salt and pepper
Your favorite BBQ sauce

Steps:

  • Preheat your oven to 300°F. Salt and pepper both sides of your ribs and place in a single layer in your pan, fattier side up.
  • Cover the pan tightly with foil and bake for 2 hours. Carefully (steam and liquid in the tray will be hot!) remove ribs from the oven and check the meat. They should be starting to become tender. If they still feel tough, re-cover them and place them back in the oven for 15 to 30 minutes.
  • Transfer ribs to a plate and drain liquid from the pan. Return ribs to tray and brush with a generous coating of BBQ sauce.
  • Turn oven down to 275°F and bake ribs, uncovered, for 1 hour more, or until you can pull the meat apart with a fork (if your ribs were small and already pretty tender when you put them back in the oven, start checking after 20 minutes). Brush with another coat of BBQ sauce, rest for 5 minutes, serve and enjoy!

Kosher salt and freshly ground black pepper
3 tablespoons vegetable oil
1 carrot, chopped
1 stalk celery, chopped
1 onion, chopped
4 cloves garlic, minced
2 tablespoons tomato paste
1/4 cup apple cider vinegar
1 teaspoon crushed red pepper flakes
2 bay leaves
2 1/2 cups chicken stock
Creamy Polenta, recipe follows
2 tablespoons chopped fresh parsley, for garnish
Vegetable cooking spray
1 1/3 cups half-and-half
1 cup milk
2 tablespoons butter
1/3 cup coarse polenta, or corn grits
Kosher salt
1/2 cup grated Parmesan
Freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Pat the ribs dry and sprinkle with salt and pepper. Heat 2
  • tablespoons of the oil in a Dutch oven over medium-high heat and brown the ribs
  • on all sides, working in batches if needed. Remove the ribs and set aside. Add
  • the remaining 1 tablespoon of oil to the Dutch oven and reduce the heat to medium.
  • Add the carrots, celery, onions and some salt and pepper and cook until soft,
  • about 5 minutes. Add the garlic and cook until fragrant, about 1 minute. Add
  • the tomato paste and cook, stirring, to remove the raw flavor, about 3 minutes.
  • Deglaze the pan with the vinegar, and then add the red pepper flakes and bay
  • leaves.
  • Add the ribs back to the pan and add enough stock to reach
  • halfway up the sides of the ribs. Bring the pan to a simmer, cover and place in
  • the oven. Braise until the meat is tender, about 1 1/2 hours. During the last
  • half hour, uncover to allow the liquid to reduce and the pork to brown.
  • Serve the ribs with Creamy Polenta, spooning the sauce on
  • top, and garnishing with parsley.
  • Spray the insert of a slow cooker with cooking spray (for easier clean up) and preheat on high.
  • In a medium saucepan, add 1 cup of the half-and-half, the milk, 1 tablespoon of the butter and the polenta. Season with salt and bring to a boil over medium-high heat, whisking constantly to keep the mixture lump-free. Boil for 2 to 3 minutes. Pour the mixture into the slow cooker and cook on high for 2 hours, stirring once or twice per hour.
  • Once you are ready to serve, open the slow cooker and whisk in the remaining 1 tablespoon butter, the remaining 1/3 cup half-and-half and the Parmesan. Salt and pepper conservatively since the polenta will be served with a robustly salted dish.

1 pkg 3 to 4 # of country style pork ribs, bone-in or boneless
1 to 2 c water
johnny's seasoning salt
1 bottle your favorite barbecue sauce (i like kc masterpiece,
sweet baby ray's or your home made )

Steps:

  • 1. Oven: preheat at 350 degrees Spray a rack that will fit inside a baking dish or pan with nonstick spray. Then lay the country style ribs out on top of the rack that is inside the baking dish. Sprinkle ribs with the Johny's seasoning salt on both sides. Pour enough water (about 1/2 to 1-inch) in the bottom of the pan. Taking care not to touch ribs with the water. Cover with foil and seal as best as possible.
  • 2. Carefully put the covered pan in preheated oven and bake for about 2 1/2 to 3 hours until ribs are done. Check to make sure that you do not run out of the water during baking. Add water, if needed.
  • 3. Remove from oven,(check to see if they are done) but keep covered until ready to put on grill. (I have tried to cook ribs the day before and they did not turn out as well. So plan on the ribs to be ready about an hour before the barbecue is started.) If you have a large crowd and have to cook a lot of ribs(in the oven) please adjust the time for another hour or two.
  • 4. Start the grill. Remove ribs out of pan (they should be almost, fall off the bone tender) gently and place on a platter. At a medium heat, place ribs on grill (because the ribs are cooked and warm), just brown slightly and turn. Add barbecue sauce, with a bush or mop, to the top. Turn again and add sauce again. At this point the ribs are heated through and I like to turn up the heat and start to caramelize the sauce (burn it). Turn and brush sauce another time and serve. I always add extra sauce on the side. I really like the boneless type a little better. Serve with french bread.
