SHRIMP AND PASTA SHELL SALAD



Shrimp and Pasta Shell Salad image

When I want to make a macaroni salad just a little bit extra-special, nothing does the trick like some small, sweet shrimp. This is one of my favorite summer salads, and it's oh-so-easy.

1 ¼ cups mayonnaise, or more if needed
2 teaspoons Dijon mustard
2 teaspoons ketchup
¼ teaspoon Worcestershire sauce
1 teaspoon salt, or to taste
1 pinch cayenne pepper, or to taste
1 lemon, juiced
⅓ cup chopped fresh dill
1 (12 ounce) package small pasta shells
1 pound cooked, peeled, and deveined small shrimp - cut in half
½ cup finely diced red bell pepper
¾ cup diced celery
salt and ground black pepper to taste
1 pinch paprika, for garnish
3 sprigs fresh dill, or as desired

Steps:

  • Whisk 1 1/4 cup mayonnaise, Dijon mustard, ketchup, Worcestershire sauce, salt, and cayenne pepper together in a bowl; add lemon juice and 1/3 cup chopped dill. Whisk until thoroughly combined. Refrigerate.
  • Bring a pot of well-salted water to a boil and stir in pasta shells; cook until tender, 8 to 10 minutes. Drain and rinse with cold water to cool pasta slightly; drain again. Transfer to a large bowl.
  • Toss shrimp with pasta; add red bell pepper, celery, and dressing to pasta and shrimp. Mix thoroughly to coat and fill shells with dressing. Cover bowl with plastic wrap and refrigerate until chilled, 2 to 3 hours.
  • Stir salad again before serving and season to taste with more salt, black pepper, lemon juice, and cayenne pepper if desired. If salad seems a little dry, mix in a little more mayonnaise. Garnish with paprika and sprigs of dill.

Easy Shrimp Pasta Salad image

A quick and easy 6-ingredient pasta salad that is perfect for workplace potluck or family dinner. Best served chilled.

1 (12 ounce) box tri-colored rotini pasta
3 cups shrimp, cooked
3 stalks green onions, finely chopped
3 roma tomatoes, diced
3/4 cup newman's own light Italian dressing
1 pinch salt

Steps:

  • Cook the pasta until it is Al Dente (follow directions on the box), drain and place in a mixing bowl.
  • Add the shrimp, diced tomatoes, and green onions to the pasta while it is still hot. Pour in a little bit of the Italian dressing, sprinkle in some salt, and mix gently to combine the ingredients.
  • Repeat another layer of Italian dressing and salt as desired, and mix the ingredients gently.
  • Chill in the refrigerator for 5 minutes before serving.

3 cups shell pasta
2 cups cooked small salad shrimp
1 (8 ounce) can pineapple tidbits, drained
¾ cup mayonnaise
4 tomatoes, diced
1 diced cucumber
½ onion, diced
2 teaspoons garlic powder
1 teaspoon Italian seasoning

Steps:

  • Bring a large pot of salted water to a boil. Add shells and cook, stirring occasionally, until tender yet firm to the bite, about 9 minutes. Rinse pasta under cold water and drain.
  • Combine pasta, shrimp, pineapple tidbits, mayonnaise, tomatoes, cucumber, onion, garlic powder, and Italian seasoning in a large bowl and mix until well combined.

Quick Chinese Shrimp Pasta Salad image

Easy to make with ingredients you probably already have on hand. Plenty for a lunch and leftovers to snack on later!

Number Of Ingredients 6

1/2 lb raw shrimp
1/2 lb three-vegetable garden-style twirl pasta or 1/2 lb preferred pasta
1/4-1/2 cup kraft toasted asian sesame dressing or 1/4-1/2 cup marinade
fresh green onion
white wine
lime juice

Steps:

  • Into a medium size pot put enough water to boil the shrimp in, adding white wine, lime juice, or other flavorings if you'd like. I used a splash of lime juice and Jose Quervo classic margarita.
  • Cook shrimp until pink, remove with slotted spoon and set aside.
  • Keep the water boiling, and into the same pot add your pasta and cook as package directs. While the pasta is cooking, slice up the green onions.
  • Drain the pasta, discarding the cooking water at last.
  • To serve, spoon some of the hot cooked pasta into a bowl, top with the cooked shrimp, sesame dressing to taste and sprinkle with green onions.
