QUICK AND EASY BOLOGNESE



Quick and Easy Bolognese image

Give this speedy meat sauce depth with a bit of Worcestershire sauce and cocoa powder.

2 tablespoons extra-virgin olive oil
3 cloves garlic, finely chopped
1 medium onion, chopped
Kosher salt and freshly ground black pepper
2 pounds meatloaf mix (equal parts ground beef, pork and veal or turkey)
3 tablespoons tomato paste
1 1/2 cups white wine
2 tablespoons Worcestershire sauce
1 1/2 cups milk
1 tablespoon cocoa powder
1 pound corkscrew pasta
Shaved Parmesan and chopped fresh parsley, for serving

Steps:

  • Heat the oil in a large, heavy pot over medium-high heat. Add the garlic, onions, 1 teaspoon salt and 1/2 teaspoon pepper and cook, stirring occasionally, until golden, 6 to 8 minutes. Stir in the meatloaf mix and cook, breaking up lumps with a wooden spoon, until any liquid evaporates and the meat is dry, 10 to 12 minutes. Stir in the tomato paste and brown, scraping the bottom of the pot, about 4 minutes. Stir in the wine and Worcestershire and bring to a simmer. Simmer the sauce until the liquid is reduced by half, about 6 minutes. Stir in the milk, cocoa powder, 3/4 teaspoon salt and 1/2 teaspoon pepper. Bring to a boil and cook until the sauce is slightly thickened, about 5 minutes.
  • Meanwhile, bring a large pot of salted water to a boil. Cook the pasta in the water according to package directions until al dente. Then drain and immediately transfer to serving plates. Top with the Bolognese and sprinkle with shaved Parmesan and parsley.

One 16-ounce bag frozen flame-grilled beef and onion patties, thawed (I like Ballpark)
1 cup pizza sauce
1/2 cup chicken stock
1/2 cup heavy cream
Pinch of nutmeg
1 pound fresh pappardelle
Parmesan, for serving

Steps:

  • Bring a large pot of salted water to a boil.
  • Using your hands or a knife, break or cut the beef patties into pea-size pieces.
  • In a large straight-sided skillet, combine the pizza sauce, chicken stock, heavy cream, nutmeg and beef over medium-high heat. Season with just a bit of salt and a few grinds of black pepper. Bring to a simmer and cook until heated through, 2 to 3 minutes.
  • Meanwhile, cook the pasta in the boiling water according to the package directions. Drain, add to the sauce and grate some Parmesan over the top. Stir together until the cheese melts, then serve.

The secret ingredient in this ultrafast Bolognese is Worcestershire sauce. 1 medium yellow onion, finely chopped
2 garlic cloves, finely chopped
1/2 pound ground beef (preferably 20 percent fat), pork or dark meat turkey
12 ounces spaghetti, pappardelle or other long pasta
1/4 cup tomato paste
2 teaspoons Worcestershire sauce
Grated Parmesan, for serving

Steps:

  • Bring a large pot of salted water to a boil. Heat oil in a large skillet over medium-high. Add onion, garlic and 1/2 teaspoon salt and cook, stirring often, until beginning to soften, 3 minutes. Add beef and cook, breaking up with a wooden spoon, until no longer pink, about 3 minutes.
  • Add pasta to the pot and cook according to package instructions until al dente.
  • Meanwhile, add tomato paste to skillet and cook, stirring, until darkened, about 1 minute. Add 1 cup water, Worcestershire, 1/2 teaspoon pepper and 1/2 teaspoon salt and simmer until slightly reduced, about 5 minutes.
  • Using tongs, transfer pasta directly from the pot to the skillet along with 1 cup pasta water. Increase heat to high and simmer vigorously, tossing, until sauce reduces and coats the pasta, about 2 minutes. Season to taste with salt and pepper. Serve with Parmesan.

6 good-quality sausages , skins removed
1 tsp fennel seed
250g pack mushroom , sliced
150ml red wine (optional)
660g jar tomato pasta sauce (we used Loyd Grossman's tomato & chilli)
300g penne
grated or shaved parmesan , to serve

Steps:

  • Heat a large, wide frying pan, then crumble in the sausage meat and fennel seeds (there's no need to add any oil). Fry for a few mins until golden and the fat is released, stirring well to break up the meat. Add the mushrooms and fry for a few mins until beginning to soften. Stir in the wine now, if using, bubble for 1 min, then add the tomato sauce and heat through until bubbling.
  • Meanwhile, boil the penne. When ready, drain and tip into the sauce. Mix well until completely coated, then divide between four plates, finishing with a little parmesan.

1/4 cup extra-virgin olive oil
1 medium onion, coarsely chopped
2 garlic cloves, peeled and coarsely chopped
1 celery stalk, coarsely chopped
1 carrot, coarsely chopped
1 pound ground chuck beef
One 28-ounce can crushed tomatoes
1/4 cup flat-leaf Italian parsley, chopped
8 fresh basil leaves, chopped
Salt and freshly ground black pepper
1/4 cup freshly grated Pecorino Romano

Steps:

  • In a large skillet heat the olive oil. When almost smoking, add the onion and garlic and saute over medium heat until the onions become very soft, about 8 minutes. Add the celery and carrot and saute for 5 minutes. Raise heat to high and add the ground beef. Saute, stirring frequently and breaking up any large lumps and cook until meat is no longer pink, about 10 minutes. Add the tomatoes, parsley and basil and cook over medium low heat until the sauce thickens. Season with salt and pepper. This will take approximately 1/2 hour. Finish bolognese with Pecorino Romano.

handful sliced mushrooms
2 garlic cloves , crushed
3 tbsp sundried tomato purée
400g can chopped tomato
glass red wine or 150ml/¼pt beef stock
1 tsp dried mixed herb
400g penne
handful basil leaves, torn, to serve

Steps:

  • Brown the beef in a large frying pan for 5 mins, then throw in the mushrooms and soften for 3 mins. Stir in the garlic and sun-dried tomato purée and cook for 2 mins. Add the tomatoes, wine or stock, dried herbs and seasoning. Bring to the boil, then simmer for 10 mins.
  • While the sauce is simmering, cook the pasta as per pack instructions, drain, then serve with the sauce and torn basil leaves scattered on top.

1 medium onion, chopped
1/3 cup coarsely chopped carrot
1/3 cup coarsely chopped celery
3 garlic cloves, finely chopped
1/2 cup red wine
2 14 1/2-ounce cans diced tomatoes with balsamic vinegar, basil, and olive oil in juice
1/3 cup half and half
2 tablespoons chopped fresh oregano
1 pound spaghetti
Grated Parmesan cheese

Steps:

  • Heat oil in heavy large saucepan over medium-high heat. Add meat, onion, carrot, celery, and garlic; sauté until meat begins to brown, about 8 minutes. Add wine and cook until wine evaporates, stirring often, about 3 minutes. Stir in tomatoes with juices, half and half, and oregano. Reduce heat to medium-low and simmer until thickened, about 25 minutes. Season sauce to taste with salt and pepper.
  • Meanwhile, cook pasta in large pot of boiling salted water until tender but still firm to bite. Drain and divide among 4 plates. Spoon sauce over pasta. Sprinkle with Parmesan cheese and serve.

My daughter asked me for spaghetti and meat sauce one night for dinner. Unfortunately, my favorite recipe takes about 3 hours from start to finish and it was already 4:00 PM, so I decided to come up with a quick version of the recipe. It not only cuts down time (it was ready in 30 minutes!), but we all agreed that we enjoyed this version even more! Hooray for small victories!

2 tablespoons extra-virgin olive oil
1 cup carrot, grated
1/2 cup onion, minced
3 large garlic cloves, finely minced
1/2 lb ground beef
1/2 lb ground pork
1/2 cup dry red wine
1 teaspoon dried parsley
2 teaspoons Worcestershire sauce
1 (15 ounce) can crushed tomatoes
1/16 teaspoon celery salt
1/2 cup parmesan cheese, grated
1 pinch cayenne pepper
salt, to taste
pepper, to taste
heavy cream, if desired or milk, for thinning if desired

Steps:

  • Heat the olive oil in a large skillet over medium heat. Add the carrot and onion to the hot skillet and cook for 5 minutes, stirring occasionally. Add the garlic and cook for 1 minute longer.
  • Crumble the beef and pork into the skillet. Cook and stir until no longer pink. Pour in the red wine, parsley, and Worcestershire and cook for 5 minutes, stirring occasionally. Add the crushed tomatoes, celery salt, Parmesan cheese, and cayenne. Stir well to combine. Turn down the heat to low and simmer for 3 minutes. Season with salt and pepper, to taste.
  • The sauce is ready to serve. If you would like a thicker consistency, allow the sauce to simmer longer until desired consistency is reached. If you would like a thinner consistency, pour in a little heavy cream or milk.
  • Serve over hot pasta.
  • Enjoy!
