1 tablespoon vegetable oil
½ large onion, chopped
2 ribs celery, chopped
1 pinch salt and ground black pepper to taste
3 (15.25 ounce) cans sweet whole-kernel corn, drained
2 (15 ounce) cans creamed corn
1 (4 ounce) packet saltine crackers, crushed
2 eggs
2 tablespoons milk
4 tablespoons melted butter
¼ teaspoon ground black pepper
salt to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Heat oil in a skillet over medium heat; stir in onion and celery. Saute until the onion has softened and turned translucent, about 5 minutes. Season with salt and pepper, if desired. Transfer to a large bowl with whole-kernel corn, creamed corn, and crushed crackers.
  • Whisk together eggs and milk in a small bowl and add to the corn mixture. Add butter, pepper, and salt; mix until all ingredients are incorporated. Pour into the prepared baking dish.
  • Bake in the preheated oven until edges are golden brown, 45 to 60 minutes. Let cool for 5 to 10 minutes before serving.

Ditch the canned stuff and use fresh corn in this creamy corn casserole. This easy, delicious recipe will have your guests wanting seconds and thirds!

7 ears fresh corn (husks & silk (strings) removed, corn cut from the cobs)
2 tbsp unsalted butter
1 cup half and half
1/2 tsp kosher sea salt
1/8 tsp ground black pepper
1/8 tsp paprika
9 Ritz crackers
2 tbsp unsalted butter (melted)

Steps:

  • Preheat oven to 425 degrees. Butter an 8x8-inch or 9x6-inch baking dish, set aside.
  • In a large skillets or saucepan set over medium heat, add corn, butter, half & half, salt, pepper and paprika. Bring mixture to a boil, then reduce heat, cover and simmer for 30 minutes or until the corn is tender.
  • In a food processor, add 1 heaping cup of the cooked corn. Pulse until smooth, about 2 minutes. Return the mixture to the pan and whisk to combine. Cook for an additional 5 minutes, then transfer to the prepared dish.
  • In a food processor (or ziplock bag with a rolling pin), add crackers and melted butter. Pulse (or crush) until mixture is coarse, not fine, about 10-12 pulses. Sprinkle over top of corn.
  • Place in the oven and bake for 10 minutes or until the crackers begin to brown. Remove and serve immediately.

This dish comes together quickly and it is so yummy. I often serve it during the holidays. I generally use frozen whole kernel corn instead of canned. You can use any kind of crackers for the topping that you like, I usually use a club style cracker. Sometimes I even mix the ingredients in the casserole dish, although that can be messy if you are not careful. I hope you enjoy this recipe, we sure do! *If you are making this dish ahead of time, it can be assembled except for the crushed crackers and set in the refrigerator until ready to cook.

35 Ritz crackers
4 tablespoons butter, melted
2 (14 ounce) cans creamed corn
2 eggs, beaten
2 tablespoons flour
1 tablespoon milk (enough to make a paste)

Steps:

  • Crush the Ritz crackers close to a powder consistency.
  • Add the melted butter to crackers and mix with hands until crumbly.
  • Spread half of cracker mixture on bottom of a square casserole dish, pressing down with fingers to make a crust.
  • Heat creamed corn on stove until warm throughout.
  • Add eggs and stir until combined.
  • Mix flour with just enough milk to make a thick paste.
  • Add flour paste to corn mixture.
  • Stir well and heat throughout.
  • Pour into casserole dish.
  • Bake 30 minutes at 400 or until firm.
  • Add remaining crackers to form a top crust and bake additional 10 minutes.

1 (15 ounce) can cream-style corn
1 cup sugar
1 egg
¼ cup butter, melted and divided
2 sleeves buttery round crackers (such as Ritz®), crushed and divided

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Stir whole kernel corn, cream-style corn, sugar, egg, and about 3/4 of the melted butter together in a casserole dish. Fold about half the crushed crackers into the corn mixture. Sprinkle remaining crushed crackers over the top of the mixture and drizzle with the remaining butter.
