Serve these tasty tacos that get fabulous flavor from Mexican-style tomato soup. Your family can have this crunchy, and delicious dish on the table in just 20 minutes.

Ingredients

2 pounds ground beef
1 (14.5 ounce) carton Campbell's® Mexican Style Tomato Soup
12 taco shells, warmed
¾ cup shredded lettuce
⅓ cup shredded Cheddar cheese
¾ cup diced tomato

Steps:

Cook the beef in a 12-inch skillet over medium-high heat until the beef is well browned, stirring often to separate meat. Pour off any fat. Season with salt and black pepper.
Stir the soup in the skillet and heat to a boil. Reduce the heat to low. Cook for 5 minutes or until the soup is reduced, stirring often.
Divide the beef mixture among the taco shells. Top with the lettuce, tomato and cheese.

QUICK "TACO" DINNER

This is not a normal taco, but we like it and have used it for years. When my children were little they used to love to "build" their own plate by layering the ingedients as shown in the directions here. Be careful though - its real easy to end up with way more on your plate than you can eat - especially if you're hungry! I'm guessing on the size of the Frito bag, but it doesn't really matter as long as you have enough for your meal. It's fresh, it's crunchy, it's easier to eat than regular tacos, and its a real favorite in our family. Try adding any other taco-type ingredients according to what you like. Enjoy!

1 lb hamburger
1 (10 ounce) package taco seasoning mix
1 (28 ounce) can refried beans
shredded lettuce
diced tomato
shredded cheddar cheese
diced onion (optional)
sour cream
salsa
hot sauce
1 (16 ounce) bag Frito corn chips

Steps:

Cook hamburger with taco seasonings per package directions.
Heat refried beans.
Crumble Fritos on plate.
Layer hamburger mixture and remaining ingredients over Fritos.
serve with dollops of sour cream, salsa and hot sauce.

In a skillet, heat the olive oil. Add the eggs and cook over medium low heat, scraping as the eggs solidify, about 3 to 4 minutes total. As you scrape, they’ll start to form together into a meat-like texture. Don’t scrape too much or you’ll make too small of pieces: just enough for that it comes together!
If time, warm and char the tortillas by placing them on an open gas flame on medium for a few seconds per side, flipping with tongs, until they are slightly blackened and warm. (See How to Warm Tortillas.)
Top with salsa fresca (drain extra liquid before serving), thin sliced red onions, torn cilantro leaves, and hot sauce.
