- In a large stock pot, combine the apple cider, apple juice, white sugar, brown sugar, cinnamon sticks, and apple pie spice. Bring to almost a boil. Cover the pot with a lid and reduce heat. Simmer for one hour. Remove the pot from heat and allow the mixture to cool.
- Once cool, remove the cinnamon sticks. Stir in the grain alcohol and vodka. Transfer the apple pie moonshine into sterilized quart jars or bottles and garnish with a cinnamon stick.
- The Apple Pie Moonshine can be enjoyed immediately. However, for the best flavor, store in the jar with a lid in the refrigerator for 3-4 weeks before drinking. Shake well before serving.

Steps:
- In a large pot, combine apple juice, apple cider, brown sugar, granulated sugar, and 12 cinnamon sticks. Bring mixture to a boil, stirring until the sugars are dissolved.
- Cover the pot, reduce heat to low and simmer for an hour. Remove pot from heat and cool completely.
- Stir Everclear and vodka into cooled syrup and remove cinnamon sticks.
- Pour Moonshine into 12, 16 ounce clean jars, add a fresh new cinnamon stick to each jar, screw the tops on (you're not going to process the jars for canning, you're just using the tops to cover the jars) and store in the fridge.
- The moonshine is ready to drink immediately but the taste will improve significantly as the moonshine has a chance to sit and mellow for 2 weeks.

- To make the simple syrup, combine 1 cup granulated sugar and 1 cup water in a small saucepan over medium heat. Stir constantly until the sugar has just dissolved and then transfer to a heatproof container. Cool and refrigerate until ready to use. May be made a week in advance.
- To mix your cocktail, fill a highball glass or pint size mason jar with ice. Add apple slices if using.
- Add the vanilla vodka, apple pie moonshine, and simple syrup.
- Top with apple cider.
- Stir.
- Garnish with a cinnamon stick if desired.
- Enjoy responsibly!
