SARAH'S TACO SOUP
This is an easy recipe that will feed an army!!! Don't worry if you don't have an army, it freezes well. Just reheat in the microwave or on the stove top.

Steps:
- Brown grown beef and onions in a large skillet.
- Drain, and transfer to a large pot.
- Add beans, corn, tomatoes, green chiles, olives, taco seasoning and ranch mix.
- Cook together, over low heat, covered for one hour.
- Stock pot directions: Brown beef and onions. Combine all ingredients and cook on low for 6-8 hours.

EASY TACO SOUP
Steps:
- Heat oil in a pot over medium high heat. Add garlic and onion, cook until softened (3 min).
- Add beef and turn up the heat to high. Cook, breaking it up as you go, until it all changes from pink to brown.
- Add remaining Soup ingredients and Taco Seasoning. Bring to a simmer then turn heat down to medium.
- Simmer for 10 minutes to bring the flavours together. Adjust thickness with water if desired.
- This is how I like to serve it: place a handful of corn chips in the bowl. Ladle in soup. Top with sour cream, cheese, coriander and a few crushed corn chips. For a healthier option, skip the corn chips in the bowl and/or serve more on the top / side of the soup.

Steps:
- combine cream cheese and taco sauce in a bowl and mix with and electric mixer on medium speed until well blended.
- Spread cream cheese mixture into a dish with shallow sides (a pie plate works the best).
- top cream cheese mixture with black olives in an even layer.
- next add tomatoes in an even layer.
- add a layer of lettuce.
- add a layer of cheese.
- any remaining "toppings" can be replenished as needed.

Steps:
- In a large skillet, heat oil over medium-high. Add onion and garlic and saute until translucent, about 5 minutes. Stir in tomato paste, cayenne (if using), and chili powder and cook until fragrant, about 30 seconds.
- Add beef and 1 teaspoon salt. Cook, breaking up meat with a wooden spoon, until cooked through, about 7 minutes. Spoon off excess fat. Serve filling in taco shells with toppings.
