1/4 cup ancho chile powder
1 1/2 tablespoons sweet paprika
2 teaspoons dried oregano
2 teaspoons ground coriander
2 teaspoons dry mustard
2 teaspoons kosher salt
2 teaspoons freshly ground pepper
1 teaspoon ground cumin
1/4 cup dijon mustard
1/4 cup whole-grain mustard
1/4 cup molasses
2 tablespoons ketchup
2 tablespoons honey
1 tablespoon horseradish, drained
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground pepper

Steps:

  • Brush four 12-ounce boneless rib-eyes with canola oil, season with salt and rub with Chili Spice Rub (recipe below) on one side. Grill rub-side down over high heat, 3 to 4 minutes. Flip, cover and grill 5 to 6 more minutes (for medium-rare). Serve with Bar Americain Steak Sauce (recipe below).

  • Garlic will be stronger the longer you marinade.
  • Don't be afraid of the garlic it makes the steak taste wonderful!

2 (1½-inch thick) rib-eye steaks, excess fat cut off, at room temperature
Extra virgin olive oil
Sea salt
Freshly cracked pepper
2 shallots, sliced thinly
12 mushrooms, sliced
2 garlic cloves, minced
½ cup dry red wine
1 cup chicken broth

Steps:

  • 1. Preheat oven to 350°F. Line a baking pan with parchment paper. 2. Heat a pan, preferably a cast iron skillet, over high for 5 minutes. Generously season steaks with sea salt and pepper. 3. Drizzle a small amount of evoo on steaks and place in the preheated pan. Brown steaks on the first side for 7 minutes. Turn steaks and transfer the pan to 350°F oven. Cook steaks in the oven for 7 to 10 minutes for medium rare. Transfer steaks to prepared baking pan. Lightly cover pan with foil, and let steaks rest for 10 minutes. 4. Return hot cast iron pan to a burner. Add shallots and mushrooms to the pan, and sauté for 5 to 7 minutes, or until browned. Add garlic and continue cooking 1 minute more.Add wine and chicken broth; reduce by half. Sauce should coat a the back of a spoon. 5. Slice steaks and arrange on serving platter. Top with sautéed mushrooms and wine sauce. Serve immediately.

4 boneless beef sirloin 6 oz.each
1/2 tsp coarsely ground black pepper
2 tsp olive oil
2 tsp butter
salt
1/4 c finely chopped shallots
1 large clove garlic, finely chopped
1/4 tsp dried herbes de provence (blend of french herbs)
1/3 c red wine or additional beef stock
1/2 c beef stock
1 Tbsp dijon mustard
2 Tbsp chopped fresh parsley

Steps:

  • 1. Remove steaks from refrigerator, and season with pepper. Heat a large heavy skillet (I use cast iron) over medium heat until hot; add oil and butter. Increase heat to high; brown steaks about 1 minute on each side.
  • 2. Reduce heat to medium; cook to desired degree of doneness. Transfer to a heated serving platter; season with salt and keep warm. Add shallots, garlic, and herbes to skillet; cook stirring, for 1 minute. Stir in red wine; cook, scraping up any brown bits from bottom of pan, until liquid has almost evaporated.
  • 3. Stir in stock, mustard, and parsley; season with salt ans pepper to taste. Cook, stirring, until slightly reduced. Spoon sauce over steaks. Serve immediately.

1 lb beef round tip steak, 1/8-1/4-inch thick, pound if necessary
1 tablespoon olive oil
2 garlic cloves, crushed
3 tablespoons light soy sauce, divided
1/8 teaspoon pepper
1 medium red onion, cut into thin wedges
2 teaspoons olive oil
1 1/2 cups sliced mushrooms
1/2 cup jarred roasted red pepper, cut into strips
1/4 cup dry red wine
8 slices c- monterey jack cheese or 8 slices cheddar cheese
4 (6 inch) crusty rolls or 4 (6 inch) hoagie rolls

Steps:

  • Stack beef steaks; cut lengthwise in half and then crosswise into 1" strips.
  • Heat 1 Tbl. olive oil in non-stick skillet over med-high heat til hot.
  • Stir-fry beef strips and garlic (1/2 batch at a time), 1-2 minutes or til outside surface is no longer pink.
  • Remove from skillet and season with 2 Tbl. soy sauce and pepper.
  • Reduce heat to medium.
  • Add 2 teaspoons oil to pan (if needed), and stir-fry onion 5 minutes.
  • Add mushrooms and continue cooking 2-3 minutes or til veggies are tender.
  • Add red pepper, wine and remaining 1 Tbl. soy sauce, bring to a boil.
  • Reduce heat and return beef to skillet.
  • Heat through.
  • Pile beef mixture onto bottoms of rolls.
  • Top each with 2 slices cheese.
  • Place on cookie sheet with tops next to bottoms cut side up, and broil just til cheese is melted and inside tops are lightly toasted.

2 lbs New York Strip Steaks (2 steaks) (or Ribeye or Top Sirloin Steaks (1 lb each steak, 1 1/4" thick))
1/2 Tbsp vegetable oil (or any high heat cooking oil like canola or extra light olive oil)
1 1/2 tsp sea salt
1 tsp black pepper (freshly ground)
2 Tbsp unsalted butter
2 cloves garlic (peeled and quartered)
1 sprig fresh rosemary

Steps:

  • Thoroughly pat steak dry with paper towels. Just before cooking, generously season with 1 1/2 tsp salt and 1 tsp black pepper
  • Heat the cast iron pan until hot then add 1/2 Tbsp oil over medium-high heat, swirling to coat. Once the oil is very hot, add steaks to the skillet. Sear the steaks on the first side for 4 minutes until a brown crust has formed then flip and cook another 3-4 minutes. Using tongs, turn the steak on its sides to render the white fat and sear the edges (1-minute per edge).
  • Reduce heat to medium and immediately add 2 Tbsp butter, quartered garlic cloves and rosemary to the pan. Spoon the butter sauce over the steak, tilting the pan to get butter on your spoon. Continue spooning the sauce over the steak for a minute or until the steak is about 5-10 degrees from your desired doneness (the temperature will continue to rise another 5-10 degrees while steaks rest).
  • Transfer steak to a cutting board, loosely cover and rest 10 minutes before slicing into 1/2" strips to serve. Spoon extra butter sauce over sliced steak to serve.

Steps:

  • Heat oil in a large nonstick skillet over medium-high heat. Add onion and cook, stirring often, until soft and beginning to brown, 2 to 3 minutes. Add mushrooms, bell pepper, oregano and pepper and cook, stirring often, until the vegetables are wilted and soft, about 7 minutes.
  • Reduce heat to low; sprinkle the vegetables with flour and stir to coat. Stir in broth and soy sauce; bring to a simmer. Remove from the heat, lay cheese slices on top of the vegetables, cover and let stand until melted, 1 to 2 minutes.
  • Divide the mixture into 4 portions with a spatula, leaving the melted cheese layer on top. Scoop a portion onto each toasted bun and serve immediately.

1 tbsp Olive Oil
2 tbsp Butter
1 White Onion (thinly sliced)
1 Bell Pepper (sliced into thin strips)
1 tbsp Worcestershire Sauce

½ cup Shredded Swiss Cheese
4 Egg Roll Wrappers
Vegetable Oil for frying

Steps:

  • Season steak with salt and pepper.
  • Heat olive oil in a pan. Cook steak to medium-well. Set aside and rest.
  • Melt butter in the same pan.
  • Add onions and bell peppers. Sautee until onions are translucent then take off the heat.
  • Carve the steak into thin slices then toss in with the onions and peppers.
  • Season with Worcestershire sauce, salt, and pepper. Leave to cool slightly.
  • Take a sheet of egg roll wrapper. Fill with the beef mixture and about 2 tablespoons of cheese.
  • Roll tightly from edge to edge, tucking in the sides.
  • Heat oil in a pan. Fry egg rolls until golden.
  • Drain excess oil on paper towels.

  • As soon as the steak bites are cooked, about 3-4 minutes, add the chopped parsley. Stir to combine well with the steak. Remove the skillet from the stove top, add the lemon juice on top of the steak and serve immediately.

  • Oil the Steak. Once you have your steak, lightly coat it with oil. Choose an oil with a high smoke point, as oil breaks down at high temperatures. Oils like avocado oil can take a much higher temperature than most.
  • Season the Steak. Now it's time to season the steak. Typically, this includes coarsely ground black pepper and a coarse sea or Kosher salt. The oil is going to hold the seasonings in place and if you choose to make a sauce in the pan later, this will provide the extra flavor.
  • Preheat the Grill. The actual cooking can be done with a side burner and grill, or a stove top and an oven. You need the burner to heat the skillet and start the steak cooking and the grill or oven to complete the process.
  • Preheat the Cast Iron Skillet. To make this whole process work, you need a smoking hot cast iron (or heavy-duty) skillet. And smoking hot means just that—hot until it is smoking.
  • Place the Steak in the Hot Skillet. Place the steak in the center of the hot skillet. It is important that most of the steak is in contact with the metal as possible, so never use a steak bigger than your pan.
  • Turn the Steak Over. After 2 minutes, turn over the steak, placing it exactly where it was, making sure it is well seated in the pan. There should be a rich deep brown (not black) color on the cooked surface.
  • Top Steak With Butter and Move to the Grill (or Oven) The steak has been cooking for 4 minutes; if you want it very rare it's time to take it off the heat.
  • Testing the Temperature. Testing for doneness is both an art and a science. If using a thermometer, you should be able to closely gauge the doneness of the steak.
  • Rest, Plate, and Serve. When the steak is ready to be removed from the skillet, place it on a plate and gently cover with a piece of aluminum foil. Let rest for 5 minutes.
  • Optional: Steak Sauce. The steak is out of the pan, and the drippings in that pan are so good you'd lick it clean if it wasn't 500 F. But don't discard the drippings—turn them into a delicious sauce.
