2 tablespoons soy sauce
8 cups beef stock
2 slices fresh ginger (thin slices)
1 garlic clove, minced
2 cups rice vermicelli, broken into 3-inch pieces
2 carrots, peeled and shredded
2 cups napa cabbage or 2 cups bok choy, shredded
2 cups bean sprouts
1/8 cup chopped fresh cilantro
3 green onions, sliced
1 teaspoon toasted sesame seed oil

Steps:

  • Cut beef into very thin strips. In a bowl, combine beef with soy sauce. (I added some crushed red pepper -- love the spice).
  • In a large saucepan over high heat, bring stock, ginger and garlic to a boil. Add vermicelli; boil for 2 minutes or until softened. Add beef, carrots and cabbage.
  • Return to a boil; cook for another 2 minutes. Add bean sprouts and cook for 1 minute or until heated through.
  • Ladle into bowls; garnish with cilantro and chopped green onions. Drizzle with sesame oil, if desired.

2 ½ cups water
2 (3 ounce) packages ramen noodles (such as Nissin® Top Ramen®)
1 (12 ounce) package frozen Asian vegetable medley
3 tablespoons hoisin sauce
2 tablespoons soy sauce
1 tablespoon Sriracha sauce
1 tablespoon brown sugar
1 tablespoon chopped fresh cilantro
½ teaspoon Chinese five-spice powder
¼ teaspoon ground ginger
2 tablespoons green onions, green parts only, thinly sliced
2 teaspoons sesame seeds

Steps:

  • Cook ground beef and white part of green onions in a large skillet over medium-high heat until meat is no longer pink and onions are soft and translucent, about 5 minutes. Remove from pan, drain, and set aside.
  • Add water, ramen noodles, and frozen vegetables to the same skillet. Bring to a boil and cook until noodles are tender, 3 to 5 minutes.
  • Meanwhile, combine hoisin sauce, soy sauce, Sriracha sauce, brown sugar, cilantro, Chinese five-spice, and ginger in a small bowl; stir until sauce is well combined.
  • Return meat to the skillet, add sauce, and and stir until heated through, about 2 minutes. Serve topped with green onions and sesame seeds.

1 lb. stir fry beef strips
6 cups beef stock
3 70 g squares ramen noodles
1/2 475 ml bottle Asian sesame dressing (about 2 cups ** I use Kraft - Please see notes re: gluten-free)
2 cloves garlic (minced)
1 ½ cups bok choy (chopped (see video in NOTES) )
1 tsp. sriracha sauce
2 tbsp. fresh cilantro (chopped)
1 tsp. fresh ginger (peeled and grated)
1/3 cup lime juice (from concentrate)
lime wedges
green onions, chopped (chopped)
additional cilantro sprigs

Steps:

  • Cook beef in pot on stove top over medium heat until cooked through (medium rare to medium, depending on your preference).
  • Add beef broth to beef and bring to a boil over medium-high, then add ramen noodles.
  • Boil for 1 minute until noodles start to separate, then separate further with a fork. Add all remaining ingredients.
  • Reduce to medium- low heat. Simmer for 10 minutes. Remove from heat.
  • Garnish with additional cilantro, green onion and lime wedges, if desired

This recipe is my version of Vietnamese beef pho. It's perfect for a weeknight and full of flavor.

2 quarts beef stock
1 tablespoon beef soup base, such as Better Than Bouillon
1 tablespoon fish sauce
1 tablespoons hoisin sauce, plus more if desired
4 scallions, 2 sliced in half and 2 sliced thinly on the bias
2 inches fresh ginger, peeled and cut into thin rounds
2 whole cloves
2 whole star anise pods
1 cinnamon stick
1 to 2 tablespoons soy sauce
8 ounces thin rice noodles, cooked according to package instructions
4 ounces shaved beef
1 cup bean sprouts
1/2 cup fresh cilantro leaves
1/2 cup fresh mint leaves
1 jalapeno, sliced thin (seeds and ribs can be scooped out)
1 lime, cut into wedges

Steps:

  • Bring the stock to a very light simmer in a large pot, then add the beef base, fish sauce, hoisin, scallion halves, ginger, cloves, star anise, cinnamon stick and 1 tablespoon of the soy sauce. Simmer for 30 minutes.
  • Using a spider or strainer, remove all the solids, leaving you with just the broth. Taste and adjust the seasoning with the additional tablespoon of soy sauce if it needs more salt, or hoisin if it needs more sweetness. Bring the broth back to a light simmer.
  • Meanwhile, set up your bowls. On the bottom, divvy up the rice noodles, then top with the shaved beef. Pour in some simmering broth. Garnish with the bean sprouts, cilantro, mint, scallions sliced on the bias, jalapenos and lime wedges. Drizzle with extra hoisin if desired.

This is a flavorful soup that is quick and easy to put together. It is from the Iowa Beef Industry Council. The recipe originally called for using two seasoning packets from the ramen noodles, but we thought it was too strong and salty, I recommend using one to start then adding more to taste.

1 1/2 lbs beef round tip steaks, cut 1/4 to 1/8 inch think
2 (3 ounce) packages oriental-flavor instant ramen noodles, broken up
3 (14 ounce) cans beef broth (the ready to serve kind)

2 tablespoons rice vinegar
2 tablespoons soy sauce
1 tablespoon fresh ginger, minced
1 tablespoon minced garlic clove
1 (16 ounce) package frozen oriental-style vegetables

Steps:

  • Stack beef steaks; cut lenghtwise in half, then crosswise into 1-inch wide strips. Set aside.
  • Remove seasoning packets from ramen noodles; set aside.
  • Combine broth, water, vinegar, soy sauce, ginger, garlic and vegetables in stockpot. Bring to boil.
  • Stir in noodles. Bring to boil.
  • Cook and stir for three minutes, then stir in steak slices and contents of 1-2 seasoning packets,

6 tablespoons reduced-sodium teriyaki sauce, divided
8 ounces uncooked whole grain thin spaghetti
2 tablespoons canola oil, divided
3 cups broccoli coleslaw mix
1 medium onion, halved and thinly sliced
Chopped fresh cilantro, optional

Steps:

  • Toss beef with 2 tablespoons teriyaki sauce. 1 lb beef, sliced as thinly as possible
3 tablespoons minced garlic
2 tablespoons minced ginger
1 tablespoon crushed red pepper flakes
4 tablespoons peanut oil or 4 tablespoons sesame oil
2 (14 ounce) cans low-sodium beef broth
2 (14 ounce) cans low-sodium chicken stock
5 tablespoons fish sauce
1 tablespoon ground cinnamon
1 tablespoon ground cloves
1 tablespoon anise seed
1 teaspoon allspice
1 tablespoon cardamom
4 tablespoons sugar
1 (16 ounce) package rice noodles
7 green onions, chopped
1/2 head cabbage (thinly sliced or minced)

1 bunch bean sprouts

Steps:

  • Soak rice noodles in very, hot tap water.
  • Heat oil in a large, deep skillet on medium hot.
  • Saute garlic, ginger, and red pepper flakes, with the beef until the beef is 85% cooked through. .
  • Add broth, fish sauce, spices and sugar.
  • Bring to a boil, then simmer for 10 minutes.
  • Rinse rice noodles and chop into 4-5 inch pieces.
  • Place noodles in bowls, pour broth and meat over noodles.
  • Add any or all garnish desired.
  • Personal Note: I like mine with super spicy so I add tons of jalapeno and siracha sauce, along with all the veggies and herbs. You can also do this with pork, fish, shrimp, or chicken, or use veggie stock and tofu if you want to keep it vegetarian.

Steps:

  • Trim fat from steak; cut steak diagonally across grain into thin slice.
  • Heat 1 Tsp oil in a large nonstick skillet over medium high heat.

  • Remove steak mixture from skillet; keep warm.

This doesn't have a long list of ingredients like some Asian soup recipes, but it still has a good flavor.

2 lbs beef, diced
3 -4 tablespoons oil
6 cups chicken broth
6 cups water
2 tablespoons soy sauce
2 tablespoons light brown sugar
1/4-1/2 teaspoon red chili pepper flakes or 1/2 teaspoon curry powder
1 teaspoon salt
12 ounces dried wide egg noodles
3 green onions, sliced

Steps:

  • Heat the oil in a large soup pot over medium-high heat. When the oil is hot, add the beef, in batches, and lightly brown.
  • When all of the meat has browned add the red chili flakes, and then readd the meat back into the pot. Add the chicken broth, water, soy sauce and light brown sugar.
  • Bring the liquid to a boil, cover, reduce heat to low and simmer for 2 hours. I usually skim the "guck" that comes to the surface the first 20 minutes.
  • When ready to eat, boil the noodles in salted boiling water until tender. Drain.
  • Add the cooked noodles to the soup, add the salt and garnish with the green onions. (I sometimes add a little bit of garlic powder to the soup while I'm waiting for the noodles to cook.
  • Serve at once.
  • If you don't want the noodles to eventually drink up all of the broth, do not add the noodles to the soup. Instead, put the desired amount of noodles in the bottom of each soup bowl and cover with the soup.
