QUICK AND EASY BEER BREAD
This recipe was given to me by an Irish friend whom I met when we were living in Germany (the Irish and German factor explains the 'beer' ingredient). Very quick and easy to make - just mix the ingredients and put straight in the oven. My friend noted that dark beer works best. I like to sprinkle white and black sesame seeds on the bread, as it gives it that extra taste.

ONION GARLIC BEER BREAD
We absolutely love this bread! I use fresh green onions and fresh garlic. Any beer will do too! If you want to use 3 cup of self rising flour it works just as good! Just omit the Baking Powder and the Salt! Otherwise follow as directed. I love to make this when I make a stew or something with a gravy. I do hope you...

Steps:
- Preheat oven to 350 degrees F.
- Using a cheese grater with small holes, grate the two portions of sharp cheddar cheese.
- In a large bowl combine together the flour, baking powder, onion soup mix, basil, garlic powder, and sugar; stir in the grated cheese and chopped green onion.
- Gradually pour in the beer, stirring with a fork until just blended and beer is incorporated.
- Grease the bottom of a 9"x5" loaf pan and spread the dough in the pan.
- Chop the additional green onion and sprinkle evenly over the surface of bread dough for topping (you can substitute chopped thinly sliced yellow onion for this, if you like).
- Bake at 350 degrees for 50 to 55 minutes or until a cake tester comes out clean from the middle.
- Remove bread from oven; combine the Parmesan and grated cheddar, and sprinkle it over the top of the still-hot loaf.
- Let the bread stand in the pan for 10 minutes on a wire rack, then turn out and let cool for another 5 or so minutes before slicing and/or serving.
- You can make this bread ahead of time- if you're going to serve it later, wrap it in foil and at the time of serving re-heat it in a 325 degree oven for about 15 minutes; it's really very tasty the day after it's prepared, so you might consider making it a day ahead of when you want to serve it.

- Place a frying pan over medium heat and cook bacon pieces for about a minute, or until the fat begins to release, then add the onion. Cook, stirring continually, until the onion has softened and the bacon is light golden brown. Place on paper towel to drain and cool.
- Preheat the oven to 180C fan-forced (200C conventional) and oil the inside of a loaf pan measuring about 20cm x 10cm x 6cm.
- Place flour, brown sugar, baking powder, bicarbonate of soda, salt, pepper and thyme into a medium bowl. Whisk to combine and aerate a little, then add the 125g grated cheese and the reserved bacon and onion and mix well. Pour in the beer and fold gently but swiftly to combine – be careful not to stir any more than is absolutely necessary as this can lead to overworked batter, resulting in a slightly heavy and chewy loaf.
- Scrape the mixture into the prepared loaf tin and scatter the extra 20g grated cheese on top. Place into the preheated oven and bake for 50-55 minutes, or until a skewer inserted into the centre of the loaf comes out clean.

- Weigh your flour; or measure it by gently spooning it into a cup, then sweeping off any excess., Stir together all of the ingredients (except the cornmeal) in a large bowl, starting with 4 1/2 cups of the flour. Use a sturdy spoon, or your stand mixer equipped with the beater paddle. Mix until everything comes together in a rough, shaggy mass of dough.
- If you’re kneading the dough by hand, turn it out onto a lightly floured surface, using some of the additional 1/2 cup of flour called for. Fold the far edge of the dough back over on itself towards you, then press it away from you with the heels of your hands. Rotate the dough 90°. Repeat this fold-press-rotate process with a rhythmic, rocking motion for about 6 minutes. When fully kneaded, the dough will be bouncy and smooth.
- If you’re using your stand mixer, switch to the dough hook and knead the dough at medium speed for about 7 minutes, until it’s smooth, elastic, and feels a bit bouncy. If the dough doesn’t form a ball that clears the sides of the bowl, sprinkle in just enough of the additional flour to make this happen., Place the dough in a bowl that’s been lightly greased with vegetable oil or cooking spray; the bowl you started with is fine. Cover the bowl with plastic wrap or another airtight cover, and let the dough rise at room temperature until it's doubled in size, about 1 to 2 hours. If your kitchen is particularly cold (below 65°F), place the bowl of dough in your turned-off oven with the oven light on.
