MEXICAN RICE AND BEANS

2 tablespoons canola oil
2 cloves garlic, minced
2 green onions, greens and whites sliced
1 jalapeno, minced
2 cups long-grain rice
3 cups low-sodium chicken broth, plus more if needed
1 teaspoon ground cumin
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1/4 teaspoon turmeric
Two 16-ounce cans pinto beans, drained
One 14.5-ounce can diced tomatoes
One 10-ounce can diced tomatoes and green chiles, such as Rotel
3/4 cup grated Cheddar
Chopped fresh cilantro, for serving

Steps:

  • Heat the oil in a large Dutch oven. Add the garlic, green onions and jalapeno and cook for 3 to 4 minutes. Reduce the heat to low and add the rice. Cook, stirring to make sure the rice doesn't burn, about 3 minutes. Add the chicken broth, cumin, salt, pepper, turmeric, beans, diced tomatoes and diced tomatoes and green chiles and stir together. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer until the rice is not quite done, about 15 minutes.
  • Meanwhile, preheat the oven to 350 degrees F.
  • Top the rice and beans with the cheese, then bake with the lid off until the cheese is melted and the rice is fully cooked, about 15 minutes more. Top with chopped cilantro before serving.

2 tablespoons olive oil
1 small onion, diced
1 small poblano pepper, diced
1 clove garlic, chopped
1 cup basmati rice
2 teaspoons paprika
1 teaspoon ground cumin
1 teaspoon dried oregano
salt and ground black pepper to taste
2 tablespoons tomato paste
2 cups vegetable broth
1 (14 ounce) can pinto beans, rinsed and drained

Steps:

  • Heat olive oil over medium-high heat. Add onion, poblano pepper, and garlic; saute for 2 to 3 minutes. Add rice. Cook, stirring occasionally, until rice is completely coated in oil, about 2 minutes. Season with paprika, cumin, oregano, salt, and pepper.
  • Stir in tomato paste and cook for 1 to 2 minutes. Add vegetable broth and pinto beans. Bring to a boil; reduce heat to low. Cover and simmer until rice is tender, 15 to 20 minutes. Remove from heat, keep covered, and let stand for at least 5 minutes. Fluff with a fork.

1/2 cup chopped onion
1 fresh poblano peppers, seeded and finely chopped or 1 (4 ounce) can chopped green chili peppers, drained
1 fresh serrano chili peppers, or jalapeno pepper, seeded and finely chopped or 1 can jalapeno pepper, rinsed, drained, seeded, and finely chopped
2 garlic cloves, minced
1 tablespoon cooking oil
1 cup long grain white rice
2 1/4 cups chicken broth or 2 1/4 cups vegetable broth
1/4 teaspoon salt
1 cup frozen cut green beans, thawed
1 (15 ounce) can black beans, rinsed and drained

Steps:

  • In a large skillet cook carrot, onion, poblano pepper, serrano pepper, and garlic in hot oil for 3 minutes.
  • Still in the uncooked rice. Cook and stir contstantly over medium heat for 2-3 minutes or until rice is lightly browned.
  • Carefully stir in broth and salt. Bring to a boil, reduce heat. Simmer, covered, for 15 minutes.
  • Add green beans, cover and cook for 5 more minutes, or until rice is tender and liquid absorbed.
  • Stir in black beans and heat through.

4 tablespoons lard or refined coconut oil, divided
1 large white onion, chopped
1 pint grape or cherry tomatoes
5 guajillo chilies, stemmed and seeded
1 pound dried black beans, rinsed
10 medium garlic cloves, peeled and kept whole, plus 5 medium garlic cloves, minced
3 bay leaves
1 teaspoon aniseed
Kosher salt and ground black pepper
4 teaspoons ground cumin
4 teaspoons ground coriander
1 tablespoon ancho chili powder
1 teaspoon dried oregano

Steps:

  • In a large pot over medium-high, heat 1 tablespoon of lard until barely smoking. Add the onion, tomatoes and guajillo chilies, then cook, stirring occasionally, until the onion is well browned, 5 to 7 minutes. Add the beans, whole garlic cloves, bay and aniseed, then stir in 10 cups water. Bring to a boil, then cover partially and reduce to low. Cook, stirring occasionally, until the beans are completely tender, 1½ hours to 2 hours. Stir in 2 teaspoons salt. Set a colander in a large bowl and drain the beans, reserving the cooking liquid. Remove and discard the bay leaves from the beans. Transfer the drained beans to a food processor and pulse a few times to break up the beans. With the machine running, add 1½ cups of the reserved cooking liquid and process until smooth, 2 to 3 minutes, scraping the bowl as needed. Taste and season with salt, then set aside. In a 12-inch nonstick skillet over medium, heat 2 tablespoons of the remaining lard until shimmering. Add the minced garlic, cumin, coriander, chili powder and oregano, then cook, stirring, until fragrant, about 30 seconds. Stir in the pureed beans and cook, stirring frequently, until beginning to brown on the bottom, 8 to 10 minutes.   • Once the beans are cooked and tender, add 1 tablespoon salt and a couple sprigs of fresh epazote or cilantro. Cook for another 15 minutes. Turn off heat.
  • In a hot comal or skillet set over medium heat, toast the avocado leaves and chiles de arbol for a couple of minutes until fragrant and browned, flipping as they toast. Remove from the heat. Break the leaves into pieces. Remove the stem from the chiles and break into pieces without discarding the seeds.
  • Working in batches if necessary, add the cooked beans and at least 1 1/2 cups of their cooking liquid (or add water if need be) to the jar of a blender, as well as the avocado leaves and chiles. Puree until a little chunky.
