Chicken Marsala is an Italian-American dish of golden pan-fried chicken cutlets and mushrooms in a rich Marsala wine sauce.

- Place the flour, ¾ teaspoon salt, and ¼ teaspoon pepper in a ziplock bag. Add the chicken to the bag; seal bag tightly and shake to coat chicken evenly. Set aside.
- Heat the oil and 2 tablespoons of the butter in a large skillet over medium-high heat. (Use a stainless steel pan for the best browning. Nonstick will work too, but you won't get that nice golden color on the chicken.) Place the flour-dusted chicken in the pan, shaking off any excess first, and cook, turning once, until the chicken is golden and just barely cooked through, about 5 to 6 minutes total. Transfer the chicken to a plate and set aside.
- Melt the remaining tablespoon of butter in the pan. Add the mushrooms and cook, stirring frequently, until the mushrooms begin to brown, 3 to 4 minutes. Add the shallots, garlic, and ¼ teaspoon of salt; cook for 1 to 2 minutes more. Add the broth, Marsala, heavy cream, thyme, ¼ teaspoon salt, and ⅛ teaspoon of pepper; use a wooden spoon to scrape any brown bits from the pan into the liquid. Bring the liquid to a boil, then reduce the heat to medium and gently boil, uncovered, until the sauce is reduced by about half, slightly thickened, and darkened in color, 10 to 15 minutes (you're going for a thin cream sauce; it won't start to thicken until the very end of the cooking time). Add the chicken back to the pan, along with any juices that accumulated on the plate. Reduce the heat to low and simmer until the chicken is warmed through and the sauce thickens a bit more, 2 to 3 minutes. Sprinkle with parsley, if using, and serve.
- Note: If your chicken breasts are large (like the ones in the photos that are about ¾ lb. each), it's best to first cut them horizontally to form four flat fillets, then pound them to an even ¼-inch thickness. If you pound large chicken breasts without first halving them, they'll be huge. Of course, you could also pound them thin first and then cut them in half vertically; the only drawback is that they'll lose their natural shape (which, admittedly, is not a big deal!).

HOW TO MAKE PERFECT POLENTA
Polenta is nothing more than coarsely ground cornmeal. The classic ratio is 1 part polenta to 4 parts water, but I like to measure the polenta just a little scant of a full cup. I often use chicken broth instead of water. It's a perfect base for any kind of saucy meat or mushroom ragout.

- Bring water and salt to a boil in a large saucepan; pour polenta slowly into boiling water, whisking constantly until all polenta is stirred in and there are no lumps.
- Reduce heat to low and simmer, whisking often, until polenta starts to thicken, about 5 minutes. Polenta mixture should still be slightly loose. Cover and cook for 30 minutes, whisking every 5 to 6 minutes. When polenta is too thick to whisk, stir with a wooden spoon. Polenta is done when texture is creamy and the individual grains are tender.
- Turn off heat and gently stir 2 tablespoons butter into polenta until butter partially melts; mix 1/2 cup Parmigiano-Reggiano cheese into polenta until cheese has melted. Cover and let stand 5 minutes to thicken; stir and taste for salt before transferring to a serving bowl. Top polenta with remaining 1 tablespoon butter and about 1 tablespoon freshly grated Parmigiano-Reggiano cheese for garnish.

PORK MARSALA WITH POLENTA

- Preheat the broiler. Lay the polenta slices on a baking sheet and brush the tops with 1 tablespoon olive oil; season generously with salt and pepper. Broil until browned around the edges and crisp, 12 to 14 minutes.
- Meanwhile, season the pork with salt and pepper. Heat a large nonstick skillet over medium-high heat and add 1 tablespoon olive oil. Add the pork and cook until browned, about 2 minutes per side; remove to a plate. Add the remaining 2 tablespoons olive oil, the mushrooms, sliced garlic, shallot and 1/2 teaspoon salt. Cook, stirring occasionally, until the mushrooms brown in spots, 6 to 8 minutes. Sprinkle with the flour and cook, stirring, about 30 seconds. Add the chicken broth and wine; bring to a simmer and cook until the sauce thickens, about 5 minutes.
- Return the pork and any juices to the skillet. Cook over low heat until the pork is cooked through, 1 to 2 minutes. Stir in the orange juice and season with salt and pepper.
- Combine the orange zest, parsley and minced garlic in a small bowl. Divide the polenta among plates. Top with the pork, mushroom sauce and parsley mixture.

- In a medium bowl, stir together the flour, garlic salt, pepper, and oregano. Dredge chicken in the mixture to lightly coat.
- Heat olive oil and butter in a large skillet over medium heat. Fry the chicken in the skillet for 2 minutes, or until lightly browned on one side. Turn chicken over, and add mushrooms. Cook about 2 minutes, until other side of chicken is lightly browned. Stir mushrooms so that they cook evenly.

- Mix the flour, salt, garlic powder and pepper in a shallow bowl. Dredge the chicken in the flour mixture and shake off excess.
- Heat 1 tablespoon oil and 2 tablespoons butter in a 12-inch pan or skillet over medium-high heat until shimmering. Fry 2 of the chicken breasts until golden-brown on both sides (about 3 to 4 minutes per side). Transfer to warm plate, tent with foil and keep warm. Repeat the same with the remaining 2 chicken breasts.
- In the same pan with remaining pan grease leftover from the chicken, melt 1 tablespoon of butter. Add the mushrooms and for 2-3 minutes until browned, scraping away at any of the leftover chicken bits off the bottom of the pan.
- Add the garlic and cook until fragrant, about 1 minute.
- Pour in the Marsala and the broth and simmer until reduced by half and starting to thicken, (about 10-15 minutes).
- Pour in the cream and return the chicken back into the sauce. Cook until the sauce thickens (about 3 minutes). Garnish with chopped parsley and serve immediately. (The sauce will continue to thicken off the heat.)
- Serve over cooked angel hair pasta (or pasta of choice), rice, potatoes, cauliflower rice or zucchini noodles, if desired.

CREAMY PARMESAN POLENTA

- Place the chicken stock in a large saucepan. Add the garlic and cook over medium-high heat until the stock comes to a boil. Reduce the heat to medium-low and very slowly whisk in the cornmeal, whisking constantly to make sure there are no lumps. Switch to a wooden spoon, add the salt and pepper, and simmer, stirring almost constantly, for 10 minutes, until thick. Be sure to scrape the bottom of the pan thoroughly while you're stirring. Off the heat, stir in the Parmesan, creme fraiche, and butter. Taste for seasonings and serve hot with extra Parmesan cheese to sprinkle on top.

- Heat oil in a large frying pan add onion to pan and stir until soft, add the mushrooms and stir for a few minutes. At the same time in another frying pan be cooking the chicken this just has to be turned a couple of times during the cooking process and cooked until done.

- Pound the chicken breasts to about 1/4-inch thick (does not have to be exactly 1/4-inch).
- Mix together flour, seasoning salt, pepper, garlic powder and oregano in a shallow dish.

- Adjust oven rack to the middle position and heat the oven to 375°F.
- Spread flour in a shallow dish. rinse chicken breasts, pat dry and season with salt and pepper. Dredge in flour to coat shaking off any excess flour.
- Heat 2 tablespoons of the oil in a large dutch oven over medium-high heat until just smoking. Add the chicken skin side down and cook until light golden brown. Flip pieces and cook on all sides to the same consistency, about 10 minutes total. Remove from pan and keep warm.
- Add a little more of the oil to the pan on high heat and add the bacon, mushrooms, garlic and onions. Season with salt/peper and cook just long enough to crisp up the bacon and get some color on the mushrooms, about 2 to 3 minute Stir in the tomato paste and rosemary/thyme and cook about 1 minute longer. Place the chicken pieces back into the pan skin-side up and spread them out evenly, pushing them down into the mushrooms and onions. Add the Marsala, scraping up the brown bits from the bottom of the pan, and add the chicken broth. Cover and place the whole pot in the oven and cook until the tops of the chicken are golden brown, 30 to 35 minutes.
- In the mean time, cook your polenta.
- CHEESY HERB POLENTA: Bring the chicken stock, half and half and salt to a boil in a large, heavy-bottomed pot.
- Pour the polenta into the boiling mixture in a slow stream while whisking constantly in a circular motion. Bring to a simmer, still stirring constantly.
- Reduce heat to low and cook, stirring vigorously and scraping the sides and bottom of the pot; until the polenta becomes soft and smooth, about 30 minutes.
- Stir in the herbs, butter and the cheese, ¼ cup at a time, until thick and creamy.
- Season to taste with salt and pepper.
- Use tongs to remove the chicken from the pan and transfer onto a serving platter and keep warm.
- Set the dutch oven back over the burner on high heat. Bring up to a boil and cook until thickened and flavors have become concentrated, about 3 to 4 minute.
- Shut off the heat, add the butter cubes and stir gently to melt the butter evenly. This will make the sauce silky smooth and give it a richer taste. Taste and season with salt and pepper. Add the lemon juice and fold in the parsley.
- To Serve:Ladle Polenta onto serving plates. Arrange one chicken quarter atop each mound of polenta.Spoon the sauce and mushrooms over the chicken. Garnish with fresh parsley or a spring of rosemary.

- Lay the chicken thighs out and sprinkle with salt and pepper, then dredge them in flour. Shake off the excess.Using a large and heavy pot, heat 3 tablespoons olive oil over medium high heat. Sear the chicken thighs, 4 at a time, just until brown on both sides, about 4 minutes per side. Transfer the thighs to a plate.
- Add the other tablespoon of olive oil to the pot and sauté the mushrooms until they begin to brown, then add the onion, celery, pepper and carrot. Continue sautéing until the onion becomes translucent. Add the garlic and the sun dried tomatoes, if using. Sauté for one more minute.
- Now, this part is messy...but well worth it. Fish out the whole tomatoes from the can one at a time and crush them over the pot. I usually pull off any hard stem end of the tomato and discard that. Continue until you've crushed them all, then pour any of the juices left in the can into the pot as well.
