6 cups thinly sliced peeled apples
2/3 cup sugar
3 Tbsp. MINUTE Tapioca
1 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1 cup water
1/3 cup raisins
6 Tbsp. butter or margarine, divided
3/4 cup flour
2 Tbsp. sugar
1 tsp. baking powder
1/8 tsp. salt
3 Tbsp. milk

Steps:

  • Mix apples, 2/3 cup sugar, tapioca, cinnamon, nutmeg and water in large saucepan. Cook on medium heat, stirring constantly, until mixture comes to full boil. Pour into 2-quart baking dish. Sprinkle with raisins. Dot with 2 Tbsp. of the butter.
  • Cut remaining butter into flour, 2 Tbsp. sugar, baking powder and salt until mixture resembles coarse crumbs. Stir in milk until soft dough forms. Drop by tablespoonfuls onto hot apple mixture.
  • Bake at 375°F for 30 minutes or until topping is golden. Serve warm.

1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/4 cup butter
1 beaten egg
1/4 cup milk
1/2 cup packed brown sugar
2 teaspoons cornstarch
1/4 teaspoon ginger
1 1/4 cups water
1/4 cup raisins
6 cups peeled, sliced apples
1 teaspoon lemon juice
1 teaspoon butter

Steps:

  • Topper-------------.
  • Sift together flour, sugar, baking powder and salt.
  • Cut in butter until crumbly.
  • Combine egg and milk.
  • Add all at once to dry ingredients.
  • Stir just until moistened.
  • Set aside.
  • Cobbler-------------.
  • In sauce pan combine the brown sugar, cornstarch and ginger.
  • Stir in water and raisins.
  • Cook and stir till thickened and bubbly.
  • Stir in apples, lemon juice and butter.
  • Cook till apples are hot, about 5 minutes.
  • Put into 2 quart casserole.
  • Drop topper in mounds atop hot fruit.
  • Bake, uncovered, at 400* until lightly browned, about 25 minutes.

½ cup maple syrup
½ cup water
½ cup brown sugar
½ cup golden raisins
1 teaspoon ground cinnamon

Steps:

  • Melt butter in a large pot over medium heat. Add chopped apples and turn to coat. Cook apples, stirring frequently, until golden in color, 15 to 20 minutes.

  • Preheat oven to 350 degrees.
  • Lightly grease a 13x9-inch baking dish.

6 -8 baking apples (I prefer Cortland)
1/2 cup white sugar
1/2 cup margarine
1 tablespoon ground cinnamon
3/4 cup quick-cooking oatmeal or 3/4 cup rolled oats
3/4 cup brown sugar
3/4 cup white flour

Steps:

  • For best results with this recipe, use apples that hold their shape when baking and aren't too tart.
  • Do not use Macintosh apples (too soft) or Red Delicious (too bland).
  • I prefer Cortlands or Empires.
  • Preheat the oven to 350 degrees- if you have a convection oven, do NOT use the convection feature- the dessert will be dry and overcooked on top.
  • Use the regular baking feature.
  • This recipe isn't good for microwave use.
  • Peel and core the apples, then cut them into eighths or into large cubes.
  • Distribute the apples evenly into a medium-sized ungreased baking dish (I like the white Corning/Pyrex oval dishes) and sprinkle the white sugar and cinnamon over top.
  • Distribute 1 tbsp of the margarine in dollops throughout the top of the apples (no need to try to stir it in).
  • In a separate medium mixing bowl, combine the remaining margarine, the oats, brown sugar and flour using your hands or a pastry whisk until it forms a crumbly, dry-ish mixture.
  • (Note: if you like lots of crumble topping, feel free to double the ingredient quantities for the toppping).
  • Pour the mixture over top of the apples and spread it out evenly so that all the apples are covered and the edges and corners hidden.
  • Pat the mixture down lightly so that it looks sort of like a crust.
  • Bake for 30-35 minutes, until the crumb top has darkened to a golden brown colour.
  • Remove from the oven and let cool for at least 10 minutes before serving.
  • Spoon out portions into large bowls and serve with ice cream, thick sweetened yoghurt or milk.

1 cup seedless raisin
150 ml dark rum
6 large granny smith apples, seeded, peeled & sliced
185 g caster sugar
235 g plain flour
80 g raw sugar
80 g unsalted butter
1 1/2 teaspoons baking powder
1 teaspoon bicarbonate of soda
1 pinch salt
1 1/2 teaspoons vanilla essence
270 ml buttermilk
whipped cream (optional)

Steps:

  • In a small saucepan, just cover raisins with water and simmer for a few minutes. Add dark rum, stir. Turn heat off.
  • Spray an oven-proof dish with cooking spray. Place apples into dish and sprinkle castor sugar on top.
  • Pour rum and raisin mixture over the top and mix. I use clean hands.
  • Cook in a 200C oven for 30 minutes.
  • To prepare the cobbler mix the flour, sugar, butter, baking powder, bi-carb soda and salt place in a food processor & blend for 30 seconds and pour into a bowl. Make a well in the centre and add vanilla essence and buttermilk. Combine.
  • Spray six ramekin dishes with cooking spray, divide the rum and raisin mix and top each with the cobbler mix.
  • Place ramekins on a tray and cook in the oven at 200C for 20 minutes or until browned.
  • Serve warm with cream if desired.

Like a classic tarte Tatin, this cobbler begins with apples being caramelized in a rich mix of butter and sugar, but we've upped the ante by adding apple brandy and raisins. Tender biscuit rounds take the place of traditional pastry to create a true home-style dessert. (And a drizzle of cream never hurts.)

1/2 cup golden raisins
1/2 cup Calvados or apple brandy
3 1/2 pound Gala apples (7 to 8)
1 1/2 tablespoons fresh lemon juice
1/2 stick unsalted butter
3/4 cup granulated sugar
1 1/2 cups all-purpose flour
2 teaspoons baking powder
Rounded 1/4 teaspoon salt
3/4 cup plus 1 tablespoon heavy cream, divided
1 1/2 tablespoons turbinado sugar such as Sugar in the Raw for sprinkling
Equipment: a well-seasoned 10-inch cast-iron skillet; a 2 1/4-inch round cookie cutter
Accompaniment: heavy cream

Steps:

  • Simmer raisins and Calvados in a small saucepan over medium heat until liquid is reduced to 3 tablespoons, about 4 minutes. Remove from heat and let macerate, covered, 30 minutes.
  • Meanwhile, preheat oven to 425°F with rack in middle.
  • While raisins macerate, peel and core apples, then cut into 1-inch pieces. Toss with lemon juice.
  • Melt butter in skillet and sprinkle granulated sugar evenly over it. Add apples along with raisins and Calvados (skillet will be full). Cook apples over medium-high heat, without stirring, until juices are deep golden and bubbling, 18 to 23 minutes (don't worry if juices color unevenly). Transfer skillet to oven and bake, uncovered, 20 minutes.
  • Stir together flour, baking powder, and salt, then add 3/4 cup cream and stir just until a dough forms. Gather dough into a ball and transfer to a lightly floured surface. Gently knead 6 times, then pat dough into an 8-inch round. Cut out as many rounds as possible with lightly floured cutter. Gather scraps and pat out, then cut out more rounds. (You will have about 12.)
  • Arrange biscuits on apples about 1/2 inch apart and brush tops with remaining tablespoon cream. Sprinkle with turbinado sugar and bake until biscuits are puffed and golden, about 15 minutes. Cool in skillet 20 minutes before serving.
