Homemade baked beans can be enjoyed at breakfast, lunch or supper -throughout the year. This recipe for Quebec maple baked beans is truly that versatile. 1 pound dry beans (navy, great Northern...) (2-1/3 cups)
water for soaking and precooking
1 medium onion
¼ cup pure maple syrup
⅓ cup brown sugar
2 tablespoons unsulfured molasses
2 tablespoons tomato paste (in a pinch I have substituted with ketchup)
2 teaspoons dry mustard
3 cups water (for cooking)
1 teaspoon salt
pepper to taste

Steps:

  • Rinse and sort the beans; remove any pebbles or debris.
  • Place the beans in a large bowl.
  • Fill with water to submerge the beans with at least two inches of water.
  • Soak overnight (8-12 hours).
  • The next day, transfer the drained and rinsed beans again to a large pot.
  • Re-fill with water and bring to a boil.
  • Turn down the heat and simmer for about 45 minutes.
  • Remove from heat and rinse again.
  • Transfer the rinsed precooked beans to your slow cooker.
  • Add the rest of the ingredients, stir together and place the whole onion in the center.
  • Cover and cook on low heat for 6 to 8 hours or until the beans are tender. If the mixture appears dry, you can add some water.
  • Preheat oven to 225°F.
  • Once again, transfer the precooked beans to your dutch oven or a large oven-proof pot.
  • Add the rest of the ingredients, cover and cook for approximately 6 hours.
  • Remove the lid for the last 30 minutes or so to obtain a nice golden color. As with the slow cooker method, if the beans appear dry, add a little water.

1 pound small white pea beans
1 onion, coarsely chopped
1 teaspoon dry mustard
2 teaspoons ground black pepper
1 to 2 cup pure maple syrup, plus more if desired
1/3 pound salt pork

Steps:

  • Pour the beans onto a plate, and pick-over looking for bad beans, or stones. Place beans in bowl, cover with water by at least 2 inches, and soak overnight.
  • Preheat oven to 250 degrees F.
  • Drain beans and place in 4-quart bean pot. Add onion, dry mustard, pepper, salt, and maple syrup. Add water to cover. Cut salt pork into 1-inch pieces and place on top of beans. Bake covered, approximately 8 hours. Check each hour to see if water needs to be added. You can add more maple syrup in place of water for flavor, if desired.
  • Serve the beans with brown bread, franks, or ham. For breakfast, serve with eggs, bacon, and home-fries.

Here's a delicious recipe for slow cooked maple syrup baked beans. It's a classic comfort food dish that pairs well with a variety of meats.

2 cups dried navy beans (or Great Northern beans, soaked overnight)
8 slices bacon (diced)
1 onion (diced)
1 cup maple syrup
1 teaspoon dry mustard powder
Salt (to taste)
Freshly ground black pepper (to taste)

Steps:

  • Drain the beans and place them in a large pot with enough fresh, cool water to cover 2-inches. Bring to a boil over medium-high heat; reduce heat and simmer for 2 hours, or until a bean is tender enough to mash easily. Keep an eye on the pot and make sure there is plenty of water, add more as needed.
  • Preheat the oven to 325 F. Drain excess water from the beans and place them in an ovenproof casserole dish or dutch oven.
  • Cook the bacon over medium-high heat in a heavy skillet until limp. Alternatively, you can cook the bacon in the oven on a cookie sheet lined with aluminum foil for 10 to 12 minutes. Using a slotted spoon transfer the bacon to paper towels to drain. Add the bacon to the beans.
  • Discard all but 2 tablespoons of the rendered bacon fat in the pan. Add the onions and cook over medium-low heat until tender and slightly brown. (If you cooked the bacon in the oven, use a new saute pan with 2 tablespoons of bacon fat.) Add the onion to the beans.
  • Add the maple syrup and mustard to the beans and stir to blend thoroughly.
  • Season with salt and pepper.
  • Cover the casserole loosely with foil and bake in the preheated oven 2 to 3 hours. If the beans seem too dry, add up to 1/2 cup water. The beans are done when the liquid is very thick. This recipe comes from the Culinary Institute of America and is served in their American Bounty Restaurant.

4 quarts water, divided
6 slices bacon, cut up or 1 cup cooked ham cubes
1 medium onion, chopped

5 teaspoons cider vinegar
1 teaspoon prepared mustard
1 teaspoon salt

  • Sort and rinse beans; place in a 4-qt. Dutch oven. Cover with 2 qts. cold water. Bring to a boil; reduce heat and simmer for 2 minutes. Remove from the heat. Cover and let stand 1 hour. Drain and rinse beans. Return beans to Dutch oven; cover with remaining water. Bring to a boil; reduce heat and simmer for 30-40 minutes or until almost tender. Drain and reserve liquid. In a 2-1/2-qt. casserole or bean pot, combine beans with all remaining ingredients. Cover and bake at 325° for 2-1/2 hours or until tender. Stir occasionally; add reserved bean liquid, if necessary.

This is what I like to eat when I go for breakfast in restaurants. Posted for ZWT4 If you use vegetable oil, you'll have to add a little bit of salt.

8 cups dry white beans
1 cup pork fat
2 cups onions, sliced
1 1/2 cups maple syrup
1/2 cup molasses
1 1/2 tablespoons tomato paste
1 tablespoon black pepper
1 1/2 tablespoons salt
1 1/2 tablespoons mustard powder
14 cups water (about)

Steps:

  • Wash the beans and drain. Set aside.
  • In a big oven-proof saucepan, melt the pork lard. Add onions and cook at medium heat, stirring, 2 to 3 minutes or until soften. Add maple syrup, molasses, tomato paste, pepper, salt and mustard powder. Stir. Add the beans and cover with water.
  • Cover and cook in a preheated oven of 250 F overnight or at 350 F for at least 7 hours (add more water if needed).

I had the most amazing sugar pie in Quebec City, Canada at a restaurant called the Cochon Dingue. (The Crazy Pig). Their version is custardy versus the soft-fudgy/brown sugar ones that are a regional specialty. The pie tastes better if made 1 night (or more) before serving. Good luck on having it around for that long! Serve topped with creme fraiche, if desired.

¾ cup real maple syrup (dark amber)
2 ¼ cups heavy cream
4 egg yolks
1 egg
1 teaspoon salt
1 teaspoon vanilla extract
1 teaspoon distilled white vinegar
1 (9 inch) pie shell, baked

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Place the pie crust in its plate in a large, shallow baking pan lined with foil in case of a boil-over.
  • Bring maple syrup to a boil in a heavy saucepan over medium heat, and cook for 5 to 7 minutes, to reduce syrup down by about one-quarter. Stir in cream, bring the mixture to a simmer, then remove from heat.
  • Whisk egg yolks and egg together in a large bowl. Very gradually add the cream mixture to the eggs, about 1/4 cup at a time, whisking constantly. Stir in salt, vanilla extract, and vinegar. Pour the batter into the prepared pie crust.
  • Bake until the pie is mostly set but jiggles slightly when moved, about 1 hour. Let cool before serving.

I dressed up canned beans with maple syrup and a few other ingredients to produce this sweet, saucy version that tastes like homemade. They're so easy to fix that I rarely make baked beans from scratch anymore.

1 large onion (cut into 8 wedges)
1 tablespoon dry mustard
1 teaspoon dry mustard
1/2 cup molasses
1/2 cup ketchup
1/2 lb salt pork (Cut into pieces, Remove and discard the hard edge)

Steps:

  • Soak beans overnight.
  • Drain water and refill pot. Boil 10 minutes.
  • Skim off foam. Drain beans but Keep water.
  • In bean pot or dutch oven put in all ingredients. Add water from beans to cover beans and 1 or 2 more inches above. Keep leftover water for later.
  • Stir everything well.
  • Cover and put in 225F oven for 8 hours.
  • Check on them occasionally to see if more water is needed to keep beans covered so they don't dry out. Near end they don't need to be fully covered. Ready when beans are soft.
