1/2 head cabbage, finely shredded
1 carrot, shredded
2 garlic cloves, crushed
1/2 medium onion, finely chopped
1/2 teaspoon fresh ginger, crushed
1/8 teaspoon black pepper
1/2 teaspoon salt
1/2 teaspoon white vinegar
1 tablespoon canola oil

Steps:

  • Heat canola oil in a saucepan over medium heat. Add onion and cook until soft. Add ginger and garlic, cook for about 1 minute, stirring frequently. Add carrots, cabbage, salt and black pepper; Cook for 10 minutes, stirring occasionally. Next add the vinegar and stir to combine. Remove from heat. Serve warm.
  • Notes: I prefer the cabbage to be crisp but if you prefer it to be softer you can add about 1/4 vegetable or chicken stock, and cook for an additional 10 minutes or until it is the texture that you desire. If using stock, be sure to adjust the amount of salt in the dish since stocks do tend to have sodium.

2 cubes chicken bouillon
2 cups water
2 pounds cabbage, sliced into thin strips
2 large carrots, grated
2 tablespoons butter
2 tablespoons all-purpose flour
½ cup milk
2 ounces shredded Cheddar cheese, or more to taste
¼ teaspoon paprika, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Dissolve bouillon cubes in water in a large pot over medium-high heat. Cook cabbage and carrots in the seasoned water until tender, 20 to 30 minutes. Drain, reserving 1/2 cup of the cooking liquid. Transfer cabbage and carrots to an 8x11-inch casserole dish.
  • Melt butter in a saucepan over medium heat. Stir flour into melted butter until hot, about 1 minutes. Pour reserved cooking liquid and milk into the flour mixture; stir until smooth. Add cheese to milk mixture; cook and stir until cheese is melted and the mixture is smooth and thick. Pour cheese sauce over cabbage and carrots; stir to coat. Season with paprika.
  • Bake in preheated oven until hot and bubbly, 20 to 30 minutes.

1 TBS EACH: Unsalted Butter & Neutral Oil ((Peanut, Vegetable or Grapeseed))
2-3 Cloves Garlic (- peeled & finely diced)
2 teaspoons Fresh Ginger (- grated (or 1 teaspoon Ginger Powder))
1 small Head Cabbage (- thinly sliced (about 2 pounds) (SEE NOTES))
1 small Yellow Onion (- thinly sliced)
2 large Carrots (- peeled & shredded)
3 large Scallions (- sliced; white/light green part and dark parts separated)
Kosher Salt & Pepper
2 TBS Reduced Sodium Soy Sauce
1 TBS EACH: Honey & Rice Vinegar
1 ½ tsp Mirin
¼ tsp Toasted Sesame Oil
1/8 - ¼ tsp Crushed Red Pepper Flakes - or more to taste

Steps:

  • Make the sauce: In a small bowl or liquid measuring cup, combine all the ingredients from the sauce list. Whisk well to thoroughly combine. Set aside.
  • Stir-fry onions & aromatics: In a large sauté pan over medium-high heat, melt the butter with the oil. Add the onion and stir-fry until almost softened, about 3 minutes. Add the garlic and ginger to the pan along with the white/light green parts of the scallions. Cook, stirring, until fragrant about 1 minute.
  • Add cabbage & carrots: Increase the heat to high and immediately add the cabbage and carrots to the pan and stir well. Let the cabbage cook for 1 minute undisturbed (you want the cabbage to slightly char). Stir and toss the mixture well and then allow to cook undisturbed for another 1 minute. Toss rapidly and continue to cook, stir-frying, for 1 minute.
  • Add sauce: Add the sauce to the pan and toss well so everything is coated. Cook until the cabbage is just tender and softened, about 1 minute.
  • Taste: Remove from heat and stir in the dark green parts of the scallions. Taste and adjust for seasoning with salt, pepper, fresh lime juice and/or sriracha. Transfer to a serving plate.
  • Serve: Top with optional garnishes and serve hot. Enjoy!

2 tablespoons light olive oil
1 1/2 teaspoons curry paste
1 medium red onion, peeled, diced
4 -5 garlic cloves, minced
1 large sweet potato, peeled and diced
1/2 head purple cabbage, shredded
1 cup roasted green chili
3 cups light vegetable broth
1/2 cup sunflower seed butter (aka Sunbutter)
1 (14 ounce) can light coconut milk
1/4-1/2 teaspoon crushed red pepper flakes, to taste
2 -3 tablespoons chopped fresh cilantro
1 fresh lime, juice of
1 tablespoon agave nectar, if it needs it
sea salt and black pepper, to taste
chopped fresh cilantro

Steps:

  • Heat the olive oil in large soup pot. Add the curry paste and stir for a minute to infuse the oil with spice. Add the onion, garlic, sweet potato, cabbage, chiles or yellow pepper.
  • Stir and cook the veggies for 5 -7 minutes, until softened.
  • Add the broth, sunflower seed butter, coconut milk, red pepper flakes and cilantro.
  • Bring the soup to a high simmer, cover, and lower the heat; keep the soup on simmer and cook until the vegetables are tender, about 25 to 30 minutes.
  • Stir in the lime juice and taste test for seasoning adjustments. Add a little agave or organic brown sugar, if needed, to balance the heat. Season with sea salt and ground pepper, to taste. Taste again. Warm through.
  • Serve piping hot with a sprinkle of chopped cilantro.
