PROSCIUTTO ROASTED BASS WITH AUTUMN VEGETABLES

Prosciutto Roasted Bass with Autumn Vegetables image

Provided by Ina Garten Bio & Top Recipes

Categories     main-dish

Time 1h15m

Yield 6 servings

Number Of Ingredients 13

2 cups peeled, seeded, and (1/2-inch) diced butternut squash
2 cups peeled and (1/2-inch) diced Yukon Gold potatoes (2 medium)
2 cups peeled and (1/2-inch) diced parsnips (3 parsnips)
2 cups peeled and (1/2-inch) diced carrots (6 carrots)
Good olive oil
Kosher salt and freshly ground black pepper
1 tablespoon minced garlic (3 cloves)
6 (8-ounce) skinless fish fillets such as striped bass or halibut
6 thin slices prosciutto di Parma
1/4 pound (1 stick) unsalted butter
6 sprigs fresh rosemary
3 tablespoons freshly squeezed lemon juice
Lemon wedges, for serving

Steps:

  • Preheat the oven to 400 degrees.
  • For the vegetables, place the butternut squash, potatoes, parsnips, and carrots on a sheet pan and drizzle with 1/3 cup olive oil. Sprinkle with 1 tablespoon salt and 1 teaspoon pepper and toss together. Spread out in a single layer and roast for 30 minutes, turning once during cooking. After 30 minutes, toss with the garlic and roast for another 10 minutes, until all the vegetables are tender and starting to brown.
  • Meanwhile, line another sheet pan with aluminum foil, and place a baking rack on top of the foil. Brush the fish fillets on both sides with olive oil and season them liberally with salt and pepper. Wrap each fillet with a slice of prosciutto to form a wide band around the center of the fillet, overlapping the ends on the skin side. Arrange the fillets on the rack with the prosciutto seam side down and roast for 10 to 15 minutes, until barely cooked.
  • While the vegetables and fish are roasting, melt the butter over medium heat in a medium-size saute pan. Add the rosemary sprigs and cook over low heat until the rosemary leaves are crisp and the butter begins to brown, about 5 minutes. Discard the rosemary, stir in the lemon juice, and set aside.
  • To serve, place the fish on a platter or individual plates, spoon the rosemary butter on top, and surround with the vegetables. Garnish with lemon wedges and serve hot.

COD BAKED WITH PROSCIUTTO

Cod Baked With Prosciutto image

Cod with prosciutto and lentils is one of my favorite dinner party standbys. You can brush the cold cod fillets with a little melted butter and wrap them in the prosciutto a few hours before you want to cook them. Just let them sit in the fridge, and remember to bring them to room temperature before brushing with a little more butter and cooking. Arrange the lentils on a large dish, place the fish on top and garnish with some freshly chopped parsley if you wish.

Provided by Nigella Lawson

Categories     dinner, easy, quick, main course

Time 20m

Yield 6 servings

Number Of Ingredients 5

6 (6-ounce) skinless cod fillets
2 tablespoons butter, melted
Salt and black pepper
8 ounces prosciutto di Parma (about 16 large slices)
French lentils with garlic and thyme, for serving (optional; see recipe)

Steps:

  • Heat oven to 400 degrees. Line a baking sheet with a nonstick liner or aluminum foil.
  • Brush cod fillets with butter, and season with salt and pepper. Wrap each in a slice or two of prosciutto, leaving ends of fillets unwrapped. (If slices tear or are narrow, more than two may be used to wrap each fillet.) Brush with butter again, and place on baking sheet.
  • Bake fish until firm and white at unwrapped ends, 10 to 12 minutes. Carefully remove from baking sheet, and, if desired, place each fillet on a bed of lentils.

DELICIOUS ROASTED WHITE FISH WRAPPED IN SMOKED BACON WITH LEMON MAYONNAISE AND ASPARAGUS

Delicious roasted white fish wrapped in smoked bacon with lemon mayonnaise and asparagus image

The delicate white fish works amazingly well with the intense, smoky flavour of the bacon

Provided by Jamie Oliver

Categories     Healthy meals     Cook with Jamie     Fruit     Pork     Mains     Healthy dinner ideas

Time 30m

Yield 4

Number Of Ingredients 8

4 x 150 g white fish fillets, from sustainable sources, ask your fishmonger, cut 2.5cm thick, skinned and pinboned
2 sprigs of fresh rosemary, leaves picked and very finely chopped
2 lemons, zest and juice of
freshly ground black pepper
12 rashers higher-welfare thinly sliced, smoked streaky bacon or pancetta
olive oil
4 tablespoons low-fat free-range mayonnaise
2 large bunches of asparagus, trimmed

Steps:

  • Preheat your oven to 200ºC/400ºF/gas 6. Season your beautiful fish fillets with the rosemary, finely grated lemon zest (no bitter white pith, please) and pepper - you don't need to use salt because we're going to wrap the fish in the lovely salty smoked bacon. Lay your rashers of bacon or pancetta on a board and one by one run the flat of a knife along them to thin them and widen them out. Lay 3 rashers together, slightly overlapping, put a fish fillet on top and wrap the rashers around it.
  • Lightly heat a large ovenproof frying pan, add a splash of olive oil and lay your fish, prettiest side facing up, in the pan. Fry for a minute, then place the pan in your preheated oven for 10 to 12 minutes, depending on the thickness of the fish, until the bacon is crisp and golden.
  • While the fish is cooking, you can make your simple lemon mayonnaise. I do this by mixing quality low-fat mayonnaise with the juice of half a lemon and pepper. You want to add enough lemon juice to make the flavour slightly too zingy. This is because, when you eat it with the asparagus and the fish, it will lessen slightly in intensity. And don't worry if the mayo looks a little thinner than usual when you've added the lemon juice - think of it as more delicate.
  • The asparagus is a great accompaniment because, like the fish, it also loves bacon. You can either boil or steam it; either way it's light and a nice contrast to the meatiness of the fish. When cooked, toss it in the juices that come out of the fish. Simply serve the fish next to a nice pile of asparagus, drizzled with the lemon-spiked mayonnaise. And if you're feeling very hungry, serve with some steaming-hot new potatoes.

Pan-Roasted Halibut with Prosciutto, Lemon, White Wine, and Capers image

Provided by Tyler Florence

Categories     main-dish

Time 35m

Yield 2 servings

Number Of Ingredients 10

1/2 cup all-purpose flour
Salt and freshly ground salt and pepper
2 (6-ounce) halibut fillets
Extra-virgin olive oil
3 tablespoons butter
2 slices prosciutto, cut into strips
1/2 cup white wine
1/2 lemon, juiced
2 teaspoons capers
2 tablespoons chopped fresh flat-leaf parsley plus whole sprigs, for garnish

Steps:

  • Preheat the oven to 375 degrees F.
  • Put the flour on a deep plate or in a shallow bowl and season well with salt and pepper. Dredge the fish in the flour. Put a large skillet over medium-high heat, add 1 tablespoon oil and the butter and get the skillet hot. Add the fillets and cook until browned on 1 side, 2 to 3 minutes. At the same time, add the prosciutto and cook, stirring, to brown. Then flip the fish, put the skillet in the oven, and roast until the fish is just cooked through, about 10 minutes.
  • Remove the fish to 2 serving plates. Dump the prosciutto out onto paper towels to drain. Put the skillet back over medium heat. Add another tablespoon olive oil, the white wine, lemon juice, capers, the remaining 2 tablespoons butter and the parsley and bring to a boil; boil until reduced and thickened. Season with salt and pepper. Pour the sauce over the fish, top with the prosciutto, and serve immediately.

Flaky and juicy baked cod wrapped in prosciutto and roasted together with juicy cherry tomatoes on the vine.

Provided by Natasha Kravchuk

Categories     Easy

Time 45m

2 lb cod filet ((2 to 2 1/2 lb filet))
6 oz prosciutto
16 oz cherry tomatoes (or grape tomatoes)
4 Tbsp extra virgin olive oil
salt (or to taste)
black pepper (or to taste)

Steps:

  • Preheat oven to 425˚F. Pat dry the cod fillets with paper towels and remove any stray bones.

  • Place strips of prosciutto over the filet overlapping the slices as you go to avoid any gaps in prosciutto. Tuck the layers underneath the filet. The ends do not need to be fully covered.
  • Place tomatoes in a bowl, season lightly with salt and pepper, and drizzle with 1 Tbsp olive oil. Toss to combine.
  • Add seasoned tomatoes to the baking sheet around the fish and bake at 425˚F for 35 minutes or until the center of the fish reaches 145F on an instant-read thermometer. The fish should be flaky in the thickest part of the filet. Cool for 5 minutes then slice into portions with a serrated knife and spoon pan juices over the slices to serve.

  • Heat the oven to 400 degrees. Melt the butter over medium heat in a large (13-inch) ovenproof skillet. Mince 2 slices of prosciutto and add to the butter. Cook until prosciutto starts to render its fat, about 2 to 3 minutes. Add mushrooms and sprinkle with one-eighth teaspoon salt.
  • Cook, stirring occasionally, until the mushrooms begin to give off their moisture, about 5 minutes. Add the garlic and parsley, and cook until the garlic is fragrant, about 1 1/2 to 2 minutes. Transfer the mixture to a bowl and cool slightly.
  • Season the fish inside and out with a very small amount (one-fourth teaspoon) of salt. Spoon about 3 tablespoons of the cooked mushrooms into the belly cavity of the fish, reserving the rest. Wrap the fish snugly in the remaining prosciutto slices, leaving the head exposed and with the middle of the slices sealing the belly. It will take 6 or 7 slices to enclose the fish.
  • Wind a length of butcher's twine around the fish to hold the prosciutto in place snugly. Inevitably, one side of the fish will have a more uniform wrapping of prosciutto than the other. This will be the presentation side, so knot string on the other side.

Place in a baking tray lined with baking paper, add wine or water, and bake for 40-45 minutes until fish is cooked through and prosciutto is crisp (cover with foil if crisping too early). • Broil until the prosciutto is browned and fish is opaque throughout. This should take 8 to 12 minutes, depending on the thickness of your fish. (I cooked ours about 10 minutes. The fish will continue to cook a bit more once you pull it from the broiler.)
  • While the cod is broiling, cook the spinach. In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Fill the skillet with as much spinach as it will hold. Season with salt and pepper. Cook, tossing and adding more spinach to the skillet, when there is space, until it is all wilted and tender. This will take about 5 minutes.
