This easy cucumber sandwich recipe is a dainty appetizer to serve at an English tea party, Easter brunch or bridal shower. Thinly sliced cucumbers, cream cheese, and fresh dill fill these fancy triangle sandwiches to make the perfect finger food at your next ladies' party.

12 slices soft white bread
1 English cucumber (peeled and thinly sliced)
3 ounces cream cheese (at room temperature)
4 teaspoons fresh dill (chopped)
2 tablespoons unsalted butter
3 tablespoons lemon juice (from about 1 medium lemon)
white pepper

Steps:

  • Peel the English cucumber, then very thinly slice it into rounds. Put the slices on paper towel, lightly salt, and wait 20 minutes. This will draw out some of the liquid, make the cucumbers firmer, and bring out the delicate flavor of the cucumber. When the timer goes off, blot the cucumbers to take off excess moisture and salt.
  • Wash and pat dry the fresh dill. Chop it up and place it in a bowl along with the softened cream cheese. Stir with a spoon until well combined.
  • Lay 12 slices of bread on a large cutting board. Lightly butter half of them with unsalted butter since there will be enough salt in the cucumber rounds. Spread the cream cheese with dill on 6 slices of bread.
  • Squeeze the juice from one lemon into a small bowl, then quickly dip the cucumber slices into the lemon juice one at a time. Carefully place ten or twelve overlapping cucumber rounds in two rows on top of the slice with the cream cheese. Sprinkle with white pepper.
  • Place the other bread slice on top of the sandwich. Using your hand, press down on the bread as you cut the crusts off, then slice the sandwiches into fingers, squares, or triangles. For the picture, I cut each sandwich into four triangles.
  • Serve immediately for best freshness.

½ small cucumber, thinly sliced

Steps:

  • Peel the cucumber, and slice it thinly. I used a simple OXO slicer for quick, even slices.
  • Spread soft/room temperature cream cheese on two slices of bread.
  • Arrange the cucumber slices, overlapping slightly, on one slice of bread and top with the other.
  • Slice off the edges with a sharp serrated knife, wiping with a damp paper towel after each cut. Next, cut into fingers (or triangles). Whether you cut them into fingers or triangles, you'll end up with two finger sandwiches.
  • If you need to make cucumber sandwiches ahead of time, keep them in a sealed container with a paper towel inside for a few hours, and refrigerate them.

I got this recipe close to 20 yrs. ago from an aquaintance who was on Weight Watchers at the time. These are extremely easy to make and are great as an appetizer or a light snack. The measurements are listed only because they have to be. There really is no precise measuring required. I use the small square party cocktail rye bread. Not sure of the package weight so I guessed. Cook time is chill time.

1 (16 ounce) rye cocktail bread, loaf
1/2 cup hellmans light mayonnaise
2 large cucumbers (do not peel)
2 tablespoons Lawry's Seasoned Salt (or your favorite brand)
1 tablespoon black pepper

Steps:

  • Thinly slice the cucumbers approximately 1/8 inch thick or less. I usually use the larger slices first, to completely cover the bread.
  • Spread a thin layer of mayonnaise on each slice of rye bread. Top with a slice of cucumber.
  • Lightly sprinkle each one with seasoned salt (be careful not to overdo it or they will be too salty), then just a dash of black pepper.

  • Meanwhile: Prepare the spread by combining cream cheese, mayonnaise, dillweed, soy sauce, mustard and black pepper (see note 1).
  • With paper kitchen towels remove the moisture that the salt drew out of the cucumber by patting them dry.
  • Spread 3 bread slices with cream cheese mixture. Arrange cucumber slices on top of one of the slices, cover with another slice (the spread-side down). Spread the top of this slice with some more cream cheese. Cover with cucumber slices and top with bread, spread-side down.
  • Cut this into 9 pieces (see note 4), insert toothpicks and repeat with the other 3 slices.
