Categories     Berries

Time 31m

Yield 7 serving(s)

Number Of Ingredients 5

saskatoon jam
4 1/2 cups cleaned saskatoon berries
6 cups granulated sugar
1/4 cup bottled lemon juice
1 (57 g) package fruit pectin

Steps:

  • Saskatoon Jam.
  • 4 ½ cups cleaned saskatoon berries.
  • 6 cups granulated sugar.
  • ¼ cup bottled lemon juice.
  • 1 pkg (57g) fruit pectin
  • Place seven clean 1-cup (250 ml) mason jars in a boiling water canner; fill with water, cover and boil hard 20 minutes to sterilize jars. Boil snap lids five minutes to soften sealing compound. Keep jars and snap lids in hot water until ready to use.
  • Thoroughly wash berries. Pulse in a food processor, or finely chop, one layer at a time. Measure 4 ½ cups.
  • Measure sugar and set aside. Combine prepared berries and lemon juice in a large, deep stainless steel saucepan. Whisk in fruit pectin until dissolved.
  • Stirring frequently, bring mixture to a boil over high heat. Add sugar. Stirring constantly, return mixture to a full rolling boil; boil hard one minute. Remove from heat; skim foam.
  • Ladle into hot sterilized jars to within ¼ inches of top rim. Remove air bubbles with a non-metallic utensil. Wipe jar rim clean, then centre snap lid on jar. Apply screw band securely until finger tip tight. Place jar in canner.
  • Cover canner; return water to a boil and process jam for 15 minutes.
  • Remove jars without tilting. Cool upright, undisturbed for 24 hours; do not retighten screw bands.
  • After cooling, check jars seals to ensure they curve downward. Yields: seven 1-cup jars.

20 BEST CANNING RECIPES TO TRY THIS SUMMER - RURAL SPROUT

From ruralsprout.com
Estimated Reading Time 7 mins
  • Blackberry jam. With seeds, or seedless, the blackberry jam you decide to make is entirely up to you and your level of refinement. Just remember to harvest a minimum of two pounds of blackberries for this canning project.
  • Strawberry jam. Why opt for the classic sugary strawberry jam, when you can make it healthier with honey instead? Honey sweetened strawberry jam (without pectin) is like nothing you will ever buy from a store.
  • Rhubarb jam. One of the greatest perennials to grow in your garden is rhubarb, provided you enjoy the earthy flavor, that is. Only the harvest season tends to be short and in a couple of bursts.
  • Vanilla peach jam. Peach jam is always a popular treat, especially when spooned over a bowl of vanilla ice cream. If that flavor combination suits your taste buds, and you have plenty of peaches to experiment with this year, vanilla peach jam should be a new and exciting recipe to try.
  • Apricot jam. Recipes for making jam tend to include a lot of sugar. Often in a 50:50 ratio. But, it doesn’t have to be this way. In fact, you can make some jams with absolutely no sugar at all.
  • Dandelion jelly. One of the first spring greens to forage for, is dandelion leaves. Then come the bright yellow dandelion flowers, and the great debate on whether we should leave them all for bees, or if it is okay to harvest some for ourselves.
  • Corn cob jelly. If you are searching for something unusual to spice up your shelf, or a way to use up your leftover corn cobs, corn cob jelly could be just the recipe you need.
  • Jalapeño jelly. If you are someone who thinks a little bit of spice is nice, but a lot of spice is a whole lot better, then you are going to want to try this jalapeño jelly the next chance you get.
  • Dill pickles. It is always fun to experiment with unique and interesting recipes. However, if you must can one classic, make it dill pickles. There are so many canning recipes for pickles out there, how do you choose the best one?
  • Zucchini pickles. Say your cucumbers don’t grow very well, though your zucchini acts like it wants to grow out of the garden. Stop it before it is too late!
