- Preheat oven to 350°. In a small bowl, mix cracker crumbs, brown sugar, cocoa and salt; stir in yogurt. Press onto bottom of a greased 9-in. springform pan. Place pan on a baking sheet. Bake 10 minutes. Cool on a wire rack. Reduce oven setting to 325°., In a large bowl, beat cream cheese and sugar until smooth. Beat in pumpkin, sour cream, flour, vanilla and spices. Add eggs and egg yolk; beat on low speed just until blended. Pour into crust. Return pan to baking sheet., Bake 1-1/4 to 1-1/2 hours or until center is almost set. Cool on a wire rack 10 minutes. Loosen sides from pan with a knife. Cool 1 hour longer. Refrigerate overnight, covering when completely cooled., Remove rim from pan.

Steps:
- Preheat the oven to 200°C (400°F).
- Prepare the pumpkin by cutting into bite-size chunks and placing in a baking tin with the butter and sugar.
- Bake for 30 minutes, until soft. Turn down the oven to 180°C (350°F) and leave the pumpkin to cool.
- Blend the chocolate biscuits in a processor to form fine crumbs. Stir in the butter.
- Pour the biscuit base into a nonstick springform tin and set aside.
- Mix together the pumpkin, cream cheese, sugar, double cream, cinnamon, ginger, nutmeg, and cloves. Stir in the eggs.
- Pour over the biscuit base.
- Bake in the oven for 1 hour. Leave to cool.
- Spread over the whipped cream and sprinkle on the cocoa powder on top.

- Preheat oven to 350F degrees.
- MAKE CHOCOLATE CRUST: Coat 9 inch springform pan with cooking spray.
- In medium bowl, combine graham cracker crumbs and butter. Press into springform pan. Bake 10 minutes.
- MAKE CHEESECAKE FILLING: Place chocolate in microwave-safe bowl. Microwave on medium power, stirring every 30 seconds to heat evenly. Set aside.
- In food processor, blend cottage cheese until smooth (about 3 minutes). Add Neufchatel cheese, brown sugar, eggs, and flour. Process until smooth. Add pumpkin, ginger, cinnamon, vanilla, and nutmeg. Process 1 minute, or until smooth.
- Whisk 1 cup of the cheese batter into the melted chocolate. Pour remaining batter into crust. Spoon dollops of chocolate mixture onto batter and swirl with a knife.
- Bake the cheesecake for 1-1/2 hours, or until the top is firm and the cake begins to pull away from the sides of the pan.
- Cool completely on a wire rack. Chill well before unmolding and serving.

- Preheat the oven to 350°F (180˚C). Grease a 10-inch (25-cm) springform pan with coconut oil.
- Make the crust: In a food processor, pulse together the graham crackers, dates, coconut oil, and salt until the dates are completely broken down and a moist, sand-like texture is achieved. The crust should easily hold together when pinched between your fingers.
- Transfer the crust mixture to the prepared springform pan. Using the bottom of a measuring cup or another flat-bottomed glass, pack down the crust against the bottom and about 1 inch (2 cm) up the sides of the pan.
- Bake the crust for 15 minutes, or until toasted and crisp around the edges. Remove from the oven and set aside to cool for about 20 minutes while you prepare the filling. Leave the oven on.
- Clean out the food processor, then make the cheesecake layer: Add the tofu, coconut cream, coconut oil, maple syrup, lemon juice, arrowroot powder, salt, and vanilla bean seeds to the food processor and blend on high speed for 1-3 minutes, or until completely smooth.
- Pour all but 1 cup (225 G) of the mixture over the cooled crust and shake gently to smooth. Freeze for 30 minutes. This will make it easier to add the pumpkin layer.
- Make the pumpkin layer: To the reserved cheesecake mixture in the processor, add the pumpkin puree, coconut cream, maple syrup, arrowroot powder, and pumpkin spice, and blend on high for 1 minute, until smooth.
- Remove the pan from the freezer and gently spoon the pumpkin mixture over the cheesecake layer. Smooth out the top using a rubber spatula or the back of a spoon.
- Wrap the outside of the pan in foil. This will prevent water from the water bath from leaking in to the pan.
- Place the springform pan in a large, deep baking dish and fill with hot water about halfway up the sides of the springform. This will create steam inside the oven that will help the cheesecake bake evenly. Carefully transfer the pan to the oven.
- Bake the cheesecake for 1 hour, then turn off the oven and, without opening the door, leave the cheesecake inside for 30 minutes.
- Remove from the oven and let cool, then cover and chill in the refrigerator for at least 6 hours, or overnight.
- Release the springform, then slice and serve the chilled cheesecake. Garnish with dark chocolate shavings.

- Preheat oven to 450 degrees.
- Line crust with double thickness of aluminum foil and bake for 8 minutes.
- Remove foil and bake for 6 more minutes.
- Cool the crust.
- Reduce oven temperature to 375 degrees.
- In medium mixing bowl combine cream cheese, 1/4 cup sugar and 1 egg; beat on low speed until smooth.
- Spread cream cheese mixture in the cooled crust.
- Sprinkle with the chopped chocolate.
- In a bowl combine pumpkin, brown sugar and spice.
- Stir in 4 eggs.
- Gradually stir in half and half.
- Slowly pour pumpkin mixture onto the chocolate layer.
- Cover pie edge with foil so it will not burn.
- Bake 60-65 minutes or until a knife inserted near the center comes out clean.
- Cool on a wire rack.
- Refrigerate within 2 hours.
- Top with more chopped chocolate if desired.

PUMPKIN SPICE CHEESECAKE
A creamy pumpkin cheesecake topped with whipped cream, pecan halves, and caramel sauce. A hint of brandy enhances the flavors of the pumpkin and spices. Using gingersnap cookie crumbs further enhances the flavor of the dessert.

- Preheat the oven to 325°F if using a silver 9-inch springform pan, or 300°F for a dark pan. Grease the pan with shortening and wrap bottom with foil to prevent leakage. Place a pan of hot water on the bottom shelf of the oven.
- Prepare the crust. In a small bowl, mix graham cracker crumbs, 2 tablespoons of sugar and the melted butter. Press the crumb mixture in the bottom of the pan. Bake the crust for 10 minutes. Cool completely at room temperature.
- Prepare the filling. In a small bowl, mix flour, pumpkin pie spice, brandy and pumpkin; then set aside. In a large bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy. Gradually beat in the brown sugar and 2/3 cup of white sugar until smooth.
- Gradually beat in pumpkin mixture until smooth. On low speed, beat in 1 egg at a time just until blended.
- Pour filling into pan and bake 1 hour 20 minutes to 1 hour 30 minutes. The cake is done when a small circle about 3 inches wide in the middle of the cheesecake wiggles when the pan is tapped with a wooden spoon.
- Turn oven completely off and allow the cheesecake to cool gradually for 1 hour. Remove the cake from the oven, and using a knife, move between the cheesecake and the pan sides to loosen the cheesecake. Allow to cool at room temperature on a rack for an additional 30 minutes. Refrigerate 6 hours or overnight before serving.
- To serve, again move along the inside of the pan sides with a knife, and then carefully remove the side. Top with whipped cream, pecan halves, and drizzle with caramel sauce. Cut into 16 slices. Store covered in refrigerator.

- Preheat the oven to 350°F (180°C). Line a 10-inch (25-cm) springform pan with parchment paper and grease the sides with nonstick spray.
- Bring a small pot of water to a boil. Add the cashews and boil for 10 minutes, until fork-tender. Drain and set aside.
- Add the graham crackers to a food processor and pulse until they break down into crumbs. Pour in the coconut oil and pulse until combined. Transfer to a medium bowl and clean out the food processor.
- Add the cashews, tofu, pumpkin puree, sugar, cornstarch, pumpkin pie spice, vanilla extract, lemon juice, and salt to the food processor. Puree for 5-8 minutes, or until the mixture is completely smooth and not at all gritty.

- Using a spatula, spread the filling over the crust in an even layer.
- Bake for 20-25 minutes, until the cheesecake is set.

- Preheat oven to 350 degrees F, & coat an 8 inch springform pan with nonstick spray. Set out a roasting pan larger than the springform pan.
- FOR THE CRUST, put the crumbs in a small bowl, & stir in butter until evenly moistened.
- Press firmly over the bottom of the pan.
- Bake 8-10 minutes until set, then cool on a wire rack.
- Wrap the outside of the pan with heavy-duty foil.
- Reduce oven temperature to 300 degrees F.
- At this point, set 4-6 quarts of water on to boil [to be added to the roasting pan in which the springform pan will be placed ~ to come halfway up the sides of the springform pan].
- FOR THE FILLING, put the cream cheese, sugar & cornstarch in a large bowl, & beat with a mixer on medium speed until smooth, scraping sides of the bowl several times with a rubber spatula.
- Beat in eggs, 1 at a time, just until blended.
- Beat in sour cream & vanilla to combine, then divide the batter evenly between 3 medium bowls.
- Stir melted milk chocolate into the 1st bowl of batter, & pour this chocolate mixture into the crust in an even layer.
- Whisk pumpkin & pumpkin pie spice into the 2nd bowl of batter, then carefully spoon this mixture over the chocolate layer to cover, then gently smooth into an even layer with an offset spatula [do not let the two layers of batter run together].
- Stir semisweet chocolate into the 3rd bowl of batter, then carefully spoon it over the pumpkin layer, spreading carefully & evenly as indicated above.
- Set the springform pan in the center of the roasting pan, then place the roasting pan in the oven.
- Add boiling water, enough to come halfway up the sides of the springform pan.
- Bake 1 1/2 to 1 3/4 hours until set [to a point where the center still jiggles slightly when gently shaken ].
- Turn off the oven & leave the door closed, letting the cake cool in the oven for 1 hour. [If the cake hasn't pulled away from the sides of the pan, carefully run a thin knife around the edge of the pan to release the cake.]
- Remove the foil & cool the cake in the pan on a wire rack.
- Cover & refrigerate at least 4 hours or overnight.
- FOR THE CHOCOLATE GLAZE: In a small saucepan, stir the glaze ingredients over low heat until chocolate melts & mixture is smooth.
- Remove from heat, & cool slightly.
- Remove pan sides & place cake on a serving plate.
- Spread the glaze over the top, just to the edge. [You might even want some to drip down the side of the cake.].
- Refrigerate until glaze sets.

- Preheat oven to 325°; spray PAM over the inside o a 13X9 pan.
- Combine crust ingredients and press onto the bottom of the 13X9 pan; cover and chill NO less than 15 minute.

- Preheat the oven to 350°F (175°C).
- Pumpkin spice: Whisk together spices OR use premade spice mix.
- Cookies: In a large bowl, combine melted butter, pumpkin purée, granulated sugar, brown sugar, molasses, and salt. Whisk together.
- Add egg and milk and whisk to incorporate.
- Add the flour, baking soda, and pumpkin spice to the bowl. Fold together with a spatula just until combined.
- Line a baking sheet with parchment. Scoop 21⁄2 tablespoon portions and place the cookies at least 2 inches (5 cm) apart. Press down on each scoop to lightly flatten.
- Bake for 8-10 minutes, rotating halfway through the baking time. Remove from the tray and cool completely.
- Filling: Add the cream cheese, butter, and vanilla to a large bowl and beat together with a hand mixer. Add the powdered sugar in two additions, and beat for another minute until fluffy and smooth.
- To make the cookie sandwiches, match the cookies together and line them up. Pipe frosting on the bottom of a cookie, then top with another. Refrigerate for 30 minutes before serving.
