½ cup white sugar
½ cup butter
3 large eggs
1 ½ cups pumpkin puree
1 cup milk
½ cup cake flour
2 teaspoons baking powder
1 pinch ground cinnamon, or as desired

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Grease a 9-inch square baking dish.
  • Beat sugar, butter, and eggs together in a bowl using an electric mixer until smooth and creamy; add pumpkin and mix well. Beat milk, flour, and baking powder into pumpkin mixture until smooth; pour into the prepared baking dish and sprinkle cinnamon over the top.
  • Bake in the preheated oven until set in the middle, 45 minutes to 1 hour.

This Pumpkin Soufflé is perfect for a winter or fall treat, but adaptable for Passover as well. The cinnamon, nutmeg, and cloves are a natural pairing with pumpkin and the warm spices adding depth to every bite of soufflé.

6 eggs or 1 ¼ cup egg beaters
1 cup sugar1 (15 oz.) can pumpkin purée
1 cup whole wheat flour
1 teaspoon baking powder
1 teaspoon baking soda

¼ teaspoon ground cloves
½ teaspoon salt

Steps:

  • 1. Preheat oven to 375°F. 2. Grease an oven-to-table loaf pan or 8 X 8-inch baking pan with nonstick cooking spray. 3. In a large bowl, whisk eggs and sugar together. Add pumpkin and mix until combined. In a separate small bowl, whisk flour, baking powder, baking soda, cinnamon, nutmeg, cloves and salt. Add to pumpkin mixture and stir until moistened. Pour into loaf pan and bake for approximately 22 to 25 minutes, or until the edges are set, but the center remains loose and pudding-like. Serve warm. Passover: substitute ½ cup potato starch plus ½ matzo cake meal for 1 cup flour. Prepare as instructed. Make Ahead: Can be prepared 2 days ahead of time. 8 tablespoons (1 stick) unsalted butter, plus more for pan and souffle dishes
1 can (15 ounces) pumpkin puree
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon freshly grated nutmeg
1/4 teaspoon ground cloves
3/4 teaspoon salt
1/2 teaspoon pure vanilla extract
2 cups milk
3 tablespoons finely chopped fresh ginger
1/2 cup granulated sugar, plus more for souffle dishes
1/2 cup all-purpose flour
1/3 cup packed light-brown sugar
9 large eggs, separated
Confectioners' sugar, for dusting
Cinnamon Anglaise

Steps:

  • Heat oven to 350 degrees. Lightly butter a small baking sheet. Spread pumpkin puree evenly over prepared baking sheet. Bake until puree loses most of its moisture, but is not quite dry and has not formed a crust, about 25 minutes. Stir halfway through cooking time. Transfer to a medium bowl.
  • Add cinnamon, ground ginger, nutmeg, cloves, salt, and vanilla extract to pumpkin mixture. Stir to combine. Cool to room temperature. Cover with plastic wrap, and refrigerate for at least 30 minutes (and up to 3 days).
  • In a small saucepan, combine milk and fresh ginger. Bring to a boil. Remove from heat, and let steep for at least 30 minutes. Strain through a fine sieve; discard solids.
  • Heat oven to 400 degrees. Butter six 10-ounce souffle dishes. Dust with granulated sugar, tapping out excess.
  • Prepare an ice-water bath; set aside. Melt butter in a medium saucepan over medium heat. Stir in flour and remaining 1/2 teaspoon salt until smooth. Gradually add the steeped milk, whisking constantly, and continue to cook until thickened, 2 to 3 minutes.
  • Add the pumpkin mixture and the brown sugar to milk mixture; stir to combine. Stir in egg yolks. Transfer to a large bowl, and place bowl in the ice-water bath to cool mixture completely.
  • Combine egg whites and 1/4 cup granulated sugar in the bowl of an electric mixer fitted with the whisk attachment. Beat until soft peaks form. Add remaining 1/4 cup sugar, and beat until stiff glossy peaks form. Using a rubber spatula, fold egg whites into chilled pumpkin mixture in two stages.
  • Pour into prepared souffle dishes, mounding mixture slightly over the rim. Smooth surfaces of souffles with your fingertip. Bake until tops are colored and dry to the touch, 20 to 25 minutes. Dust with confectioners' sugar, and serve immediately with cinnamon anglaise.

Steps:

  • For bread pudding:
  • Preheat oven to 350°F. Whisk half and half, pumpkin, dark brown sugar, eggs, pumpkin pie spice, cinnamon and vanilla extract in large bowl to blend. Fold in bread cubes. Stir in golden raisins. Transfer mixture to 11x7-inch glass baking dish. Let stand 15 minutes. Bake pumpkin bread pudding until tester inserted into center comes out clean, about 40 minutes.
  • Meanwhile, prepare caramel sauce:
  • Whisk brown sugar and butter in heavy medium saucepan over medium heat until butter melts. Whisk in cream and stir until sugar dissolves and sauce is smooth, about 3 minutes.
  • Sift powdered sugar over bread pudding. Serve warm with caramel sauce.

5 eggs
3/4 cup brown sugar
1/4 teaspoon salt
1/2 teaspoon ground nutmeg
1 teaspoon cinnamon

3/ 4 cup pumpkin puree
2 cups heavy cream
1 and 3/4 cups whole milk
1 tablespoon vanilla extract
1 loaf pumpkin bread
1/2 cup raisins
1/4 cup toasted almond slices
Serving suggestions: favorite whipped cream or ice cream

Steps:

  • Preheat oven to 350 degrees.
  • Butter a small lasagna style serving dish. In a large bowl, beat the whole eggs with yolks and brown sugar until smooth. Add spices and pumpkin puree and blend until smooth. Add cream, milk and extract.
  • Place one layer of bread in prepared pan. Pour half of the batter over them, making sure to cover the slices thoroughly. Sprinkle almonds and raisins over the first layer and then add another layer of bread on top. Gently pour the remaining batter over the top of the bread being sure to submerge the bread, pushing them down by hand if necessary. Allow pudding to rest at room temperature up to an hour.
  • Fill a deep cookie sheet with 1/2 inch of water to create a water bath for cooking. Place filled lasagna pan in water. Bake for 35 to 50 minutes or until the top is golden and firm.
  • Serve with your favorite whipped cream or ice cream.

Bread pudding was already near perfection, but we combined Creole bread pudding with the light texture of a meringue and ended up with the restaurant's signature dessert, the single most sought-after dish in our family's restaurant history. The whiskey sauce itself is divine, but particularly so when generously poured over the piping hot souffle. Take it from me, this is no light dessert. 3/4 cup sugar
1 teaspoon ground cinnamon
Pinch nutmeg
3 medium eggs
1 cup heavy cream
1 teaspoon vanilla extract
5 cups New Orleans French bread, cut into 1-inch cubes (see *Cook's Note)
1/3 cup raisins
1 cup heavy cream
1/2 tablespoon cornstarch
1 tablespoon water
3 tablespoons sugar
1/4 cup bourbon
9 medium egg whites, room temperature
1/4 teaspoon cream of tartar
3/4 cup sugar

Steps:

  • Make the bread pudding: Preheat oven to 350 degrees F.
  • Grease an 8-inch square baking pan. Combine sugar, cinnamon, and nutmeg in a large bowl. Beat in the eggs until smooth, and then work in the heavy cream. Add the vanilla, stir to combine, and then the bread cubes. Let stand so that bread soaks up custard.
  • Place the raisins in the greased pan. Top with the bread mixture, which prevents the raisins from burning. Bake for approximately 25 to 30 minutes or until the pudding has a golden brown color and is firm to the touch. If a toothpick inserted in the pudding comes out clean, it is done. The mixture should be moist, not runny or dry. Cool to room temperature.
  • Make the whiskey sauce: Place cream in a small saucepan over medium heat, and bring to a boil. Whisk cornstarch and water together, and add to cream while whisking. Bring to a boil. Whisk and let simmer for a few seconds, taking care not to burn the mixture on the bottom. Remove from heat. Stir in the sugar and the bourbon. Taste to make sure the sauce has a thick consistency, a sufficiently sweet taste, and a good bourbon flavor. Cool to room temperature.
  • Make the meringue: Preheat oven to 350 degrees F.
  • Butter 6 (6-ounce) ramekins and set aside. Make certain that the bowl and whisk are completely clean. The egg whites should be completely free of yolk, and they will whip better if they are at room temperature. This dish needs a good, stiff meringue. In the bowl of an electric mixer (or in a large bowl with a hand mixer), whip egg whites and cream of tartar until foamy. Add the sugar gradually, and continue whipping until shiny and thick. Test with a clean spoon. If the whites stand up stiff, like shaving cream when you pull out the spoon, the meringue is ready. Do not over-whip, or the whites will break down and the souffle will not work.
  • In a large bowl, break half of the bread pudding into pieces using your hands or a spoon. Gently fold in 1/4 of the meringue, being careful not to lose the air in the whites. Add a portion of this base to each of the ramekins. Place the remaining bread pudding in the bowl, break into pieces, and carefully fold in the rest of the meringue. Top off the souffles with this lighter mixture. Smooth and shape tops with a spoon into a dome over the ramekin rim.
  • Bake immediately for approximately 20 minutes or until golden brown. Serve immediately. Using a spoon, at the table, poke a hole in the top of each souffle, and pour the room temperature whiskey sauce inside the souffle.

3 egg whites
1 (21 ounce) can pumpkin
1/4 cup brown sugar (more if desired) or 1/4 cup artificial sweetener (more if desired)
3 teaspoons cinnamon
1 teaspoon nutmeg
1 egg yolk
1/2 cup milk

Steps:

  • Preheat oven to 380 °F.
  • Beat egg whites in medium bowl until stiff. Set aside.
  • Using electric mixer, blend pumpkin, sugar, cinnamon, nutmeg, egg yolk and milk in large bowl.
  • Fold 1/3 of egg whites into pumpkin blend. Continue to fold in egg whites 1/3 at a time until egg whites are completely folded inches.
  • Have small ramekins or coffee cups at ready with wax paper placed around edges and inside (trust me, it's easier to clean).
  • Pour pumpkin/egg mix into cups until almost full (leave about a half inch or more at the top as they will rise).
  • Place cups on baking tray and put into oven.
  • Bake for 30-45 minutes
  • DO NOT OPEN OVEN TO CHECK ON SOUFFLES! USE OVEN LIGHT!
  • Top with whipping cream/ice cream, brown sugar, nuts, cinnamon/nutmeg or any other desired toppings.

Whiskey Sauce:
1 1/2 cups heavy cream
2 teaspoons cornstarch
2 tablespoons cold water
1/3 cup sugar
1/3 cup bourbon
Meringue:
9 medium egg whites, at room temperature
1/4 teaspoon cream of tartar
3/4 cup sugar

Steps:

  • Preheat the oven to 350°F. Grease an 8-inch square baking pan.

9 ounces brioche cubes, crusts removed and cut into 1/2-inch cubes
3 1/2 ounces (7 tablespoons) butter
1/4 cup brown sugar
1/4 teaspoon cinnamon
Pinch of nutmeg
4 egg yolks
1 cup pumpkin purée, at room temperature
2 egg whites
1 tablespoon sugar
1/2 teaspoon salt

Steps:

  • Preheat oven to 375°F.
  • In a small saucepan, bring milk and cream to a simmer over low heat. Place brioche cubes in bowl. Remove milk mixture from heat and pour half of the liquid over the brioche.
  • In a mixer, cream butter and sugar until light and fluffy. Add cinnamon, nutmeg, and egg yolks, beating well. Add pumpkin purée and the other half of the heated cream and milk.
  • Fold the soaked brioche into the pumpkin mixture. Beat the egg whites and sugar until they form stiff peaks and gently fold into the batter. Butter and sugar 8 three-inch ramekins, then divide batter evenly among ramekins. Bake for 25 minutes, or until knife comes out clean. Baked brioches can be wrapped and kept in the refrigerator for up to 3 days, then heated in the oven wrapped in foil or microwaved until warm.

  • Add pumpkin, milk, heavy cream, brown sugar, white sugar, molasses, whiskey, cinnamon, ginger, salt, nutmeg, and cloves to the 2 egg yolks; beat with an electric mixer until well blended.
  • Beat egg whites until stiff peaks form. Add 1/4 of the egg whites to the pumpkin mixture; mix until well blended. Delicately fold in the remaining egg whites. Ladle into the prepared pan.
  • Bake in the preheated oven for 15 minutes. Turn the oven down to 425 degrees F (220 degrees C) and bake for 15 minutes. Turn to oven down to 375 degrees F (190 degrees C) and bake for 15 minutes. Turn the oven down to 350 degrees F (175 degrees C) and bake until the surface no longer jiggles, about 15 minutes more. The total cook time should be about 1 hour. Turn off the oven.
  • Leaving the souffle in the oven with the door ajar, for 20 to 30 minutes. Serve warm.

This can be calorie reduced by using the diet bread, skim milk and skim Pet milk. You can use just egg whites and you can substitute Sweet 'n Low for the sugar.

1 can large pumpkin puree
1 (12 ounce) can evaporated milk
1/2 cup white sugar
2 teaspoons vanilla
1/3 cup raisins
4 cups milk
6 eggs, beaten
3/4 cup brown sugar, packed
2 teaspoons pumpkin pie spice
8 cups bread, cubed

Steps:

  • Preheat the oven to 350 degrees.
  • Put the bread cubes and raisins in a buttered 3 quart oven dish.
  • Then in a large mixing bowl, start with the eggs, and beat them, then add the remaining ingredients.
  • Mix well and pour egg mixture evenly over bread.
  • Stir around a bit to make sure all the bread is coated.
  • Bake for 50 minutes or until the pudding is puffy and a knife inserted near the center comes out clean.
  • Cool slightly before serving.
  • (Yes, it will fall in the center. The eggs cause this to happen)

A uniqie way to serve bread pudding. We first had this dish at Commandars Palace in New Orleans, LA back in '96 or '97 and spend a couple weekends trying to duplicate it. This one's pretty close.

7 -10 ounces French bread (about enough to fill up a 13x9 pan 3/4 of the way) or 7 -10 ounces Italian bread, stale cut into 1-inch cubes (about enough to fill up a 13x9 pan 3/4 of the way)
3 large egg yolks (room temp)
3 large eggs (room temp)
1 3/4 cups sugar
4 1/2 tablespoons vanilla
1 tablespoon cinnamon
1 teaspoon nutmeg
1/2 cup butter
4 cups milk, whole (optionally you can use cream or half-and-half)
1/2 cup raisins (chopped/optional)
6 large eggs, separated
1/2 cup sugar, granulated
2 1/2 cups bread pudding
1/2 cup sugar, confectioner's

Steps:

  • FOR THE BREAD PUDDING-------------------.
  • Preheat oven to 350 F degrees.
  • Toast bread cubes in the oven for 12 to 15 minutes or until golden brown.
  • Place the toasted cubes of bread in an ungreased 3x9x2 inch pan.
  • In a medium bowl wisk the eggs and egg yolks until frothy.
  • In a small bowl or plastic bag combine sugar, cinnamon, and nutmeg.
  • Blend well.
  • In a medium sauce pan over low heat heat milk and butter till butter just melts (120 degrees F).
  • You can use cream or half-and-half in lieu of milk, however we find this to be a bit too rich.
  • I like to chop the raisins in the food processor with a bit of the sugar/spice mixture as there's alot of folks out there that love the taste of raisins, but don't like the texture.
  • If desired add chopped raisins to the milk/butter mixture at this point.
  • Add sugar/spice mix and vanilla to milk and stir until sugar dissolves.
  • Slowly pour about 1 cup of the warm milk over the eggs while stirring continuously.
  • If you like whole raisins, sprinkle the raisins over the bread cubes at this point.
  • Pour the milk mixture over the bread crumbs.
  • Allow the bread to become thoroughly soaked, turn once or twice to speed up the process.
  • Maybe 10 minutes.
  • Bake the soaked bread in the 350 F oven for 40-60 minutes, check every few minutes after the initial cooking period and remove from oven when disired degree of browness is reached.
  • Cool slightly.
  • FOR THE SOUFFLE------------------.
  • Preheat your oven to 375 F degrees.
  • Butter and lightly sugar a 1 1/2 quart souffle dish.
  • Put the egg yolks and granulated sugar in the top of a double boiler over very low heat.
  • Whisk the mixture until frothy and shiny.
  • In a large mixing bowl, whip the egg-and-sugar mixture into the warm bread pudding until smooth, a food processor makes this easier, but it's not required.
  • Beat egg whites with an electric mixer until frothy, add confectioner's sugar and beat until the egg whites form stiff peaks.
  • Gently fold the egg whites into the bread pudding mixture.
  • Fill the souffle dish only 3/4 full of souffle mixture to allow for rising.
  • Wipe clean the lip of the dish and bake in the preheated oven for 35 to 40 minutes.
  • Serve immediately, top with bourbon sauce (see separate recipie) and/or whipped cream.

This recipe was developed by San Francisco's Chef Charles Phan, Owner and Chef of The Red Door. It is very lightly spiced and not very sweet, so depending on your sweet tooth, you may want to add more sugar.

1 cup whole milk
1 cup heavy cream
9 ounces brioche bread, cubes crusts removed and cut into 1/2-inch cubes
3 1/2 ounces butter
1/4 cup brown sugar
1/4 teaspoon cinnamon
1 pinch nutmeg
4 egg yolks
1 cup pumpkin puree, at room temperature
2 egg whites
1 tablespoon sugar
1/2 teaspoon salt

Steps:

  • Preheat oven to 375°F.
  • In a small saucepan, bring milk and cream to a simmer over low heat. Place brioche cubes in bowl. Remove milk mixture from heat and pour half of the liquid over the brioche.
  • In a mixer, cream butter and sugar until light and fluffy. Add cinnamon, nutmeg, and egg yolks, beating well. Add pumpkin purée and the other half of the heated cream and milk.
  • Fold the soaked brioche into the pumpkin mixture. Beat the egg whites and sugar until they form stiff peaks and gently fold into the batter. Butter and sugar 8 three-inch ramekins, then divide batter evenly among ramekins. Bake for 25 minutes, or until knife comes out clean. Baked brioches can be wrapped and kept in the refrigerator for up to 3 days, then heated in the oven wrapped in foil or microwaved until warm.

Add the 1 tablespoon granulated sugar and beat until stiff peaks form (tips stand straight). Fold beaten egg whites gently into the challah mixture. Spoon mixture evenly into the prepared ramekins.
