My pumpkin pie, crust, and topping are made from scratch. The pie is the perfect combination of sugar and spice, with the added streusel topping for that extra wow factor! Feel free to use canned pumpkin and any homemade crust recipe of your choice.

2 cups fresh pumpkin or 2 cups one canned pumpkin
2 egg yolks (just the yolks)
1 (14 ounce) can sweetened condensed milk
1 1/2 teaspoons cinnamon
1/2 teaspoon ginger
1/2 teaspoon nutmeg
1/2 teaspoon salt
1/8 cup orange juice
3/4 cup raw pecans, toasted and chopped
1/4 cup brown sugar
2 tablespoons flour
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
2 tablespoons butter

Steps:

  • Pie Filling: Mix the pumpkin, egg yolks, milk, 1 1/2 tsp cinnamon, 1/2 teaspoons ginger.
  • 1/2 teaspoons nutmeg, 1/2 teaspoons salt, and orange juice all together.
  • Pie Topping: In a separate bowl, mix pecans, brown sugar, flour, 1/2 teaspoons cinnamon, 1/4 teaspoons nutmeg and butter.
  • Make sure to bake your pie crust for 10 minutes in 425 degree oven before adding the pie filling and topping.
  • Once pie crust is baked for 10 minutes, add pumpkin pie filling to pie shell and bake at 400 for 30 minutes.
  • Reduce heat to 350 and bake another 30 minutes.
  • Place pecan topping on pie and bake for another 15 minutes.
  • Let cool before serving.

Falling somewhere between a pumpkin pie and a filo pastry apple strudel, this sweet roll works with maple syrup and custard

1kg/2lb 4 oz pumpkin or butternut squash (peeled weight- 1 medium pumpkin or 1 large butternut squash), deseeded and cut into large chunks
2 tsp vegetable oil
140g soft light brown sugar , plus extra for sprinkling
100g ground almond
100g fresh white breadcrumb
1 large egg , beaten, ½ tbsp reserved for glazing
1 tbsp ground cinnamon
good grating nutmeg
6 sheets filo pastry
85g butter , melted
100g pecan , chopped, 1 tbsp reserved for the top
maple syrup , to serve
cream or custard , to serve (optional)

Steps:

  • Heat oven to 200C/180C fan/gas 6. Toss the pumpkin or squash with the oil on a baking tray. Bake for 45 mins until really tender, then leave to cool.
  • Tip the pumpkin into a food processor, whizz until smooth, then tip into a bowl. Add the sugar, almonds, breadcrumbs, egg and spices, and mix well. This can be done up to 2 days ahead.
  • Lower oven to 160C/140C fan/gas 3. Layer the pastry sheets on top of each other, brushing some melted butter and a sprinkling of sugar and chopped pecans between each sheet. Spoon the pumpkin filling along one long edge of the pastry in a long log shape, leaving a 2.5cm gap at either end. Turn up the ends, then carefully roll up the strudel and brush the edge with egg to seal.
  • Transfer to a baking tray, sealed-side down. Brush with the reserved egg, drizzle over any leftover butter and sprinkle with the reserved pecans and extra sugar. Bake for 40 mins until golden and crisp. Leave to stand for 10 mins before slicing, then serve with maple syrup and cream or custard, if you like.

1 cup canned pumpkin
1 cup apple butter
1/4 cup dark brown sugar, packed
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
3 eggs, lightly beaten
1 cup evaporated milk
1 (9 inch) deep dish pie shells
3 tablespoons butter, softened
1/2 cup flour
1/2 cup dark brown sugar
1/2 cup chopped pecans

Steps:

  • Preheat to 375 degrees.
  • Combine pumpkin, apple butter, brown sugar, cinnamon, ginger, nutmeg, salt, eggs, and evaporated milk. Pour into the pie shell.
  • Bake 50-60 minutes or until knife inserted two inches from center comes out clean.
  • Meanwhile, mix together butter, flour, sugar, and pecans until they resemble coarse crumbs.
  • Top pie with streusel topping and bake for an additional 15 minutes.

1/2 cup brown sugar
1/2 cup sugar
2 eggs
1/4 cup unsalted butter, melted
3 tablespoons cream sherry or 3 tablespoons dark rum
2 tablespoons avocado oil or 2 tablespoons organic canola oil
2 teaspoons vanilla extract
1 1/2 cups white whole wheat or 1 1/2 cups whole wheat pastry flour
1 cup all-purpose flour
2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon nutmeg
cinnamon, streusel
1/4 cup old fashioned oats
2 tablespoons all-purpose flour
2 tablespoons brown sugar
1 tablespoon unsalted butter, softened
1/2 teaspoon cinnamon

Steps:

  • Preheat oven to 350 degrees. Coat a loaf pan with cooking spray.
  • MAKE BREAD BATTER.
  • Beat pumpkin, brown sugar, sugar, egg, melted butter, sherry or rum, oil and vanilla in a mixing bowl on medium speed until creamy and smooth.
  • Whisk whole-wheat flour, all purpose flour, baking powder, 1 teaspoon cinnamon, baking soda, salt and nutmeg in a medium bowl. Add dry mixture to the pumpkin mixture and gently blend on slow until just combined. Spread batter in loaf pan.
  • MAKE STREUSEL TOPPING.
  • Mix oats, 2 tablespoons all purpose flour, 2 tablespoons brown sugar, softened butter and 1/2 teaspoon cinnamon in a small bow until crumbly. Top the batter with the streusel topping.
  • BAKE BREAD.
  • Bake until the center is puffed and set. It will spring back when lightly touched and a toothpick inserted in the center will come out with moist crumbs attached, 55 to 60 minutes. To remove from the oven, slide onto a pizza peel or un-rimmed baking sheet to handle. Let cool completely on wire rack.
  • NOTES.
  • This bread can be kept at room temperature for three to four days. Once it is completely cool, wrap it in two layers of plastic wrap.
  • To Freeze the Pumpkin Bread: Wrap in several layers of plastic wrap then seal it in a resealable freezer gallon bag. Tip: press the air out of the bag before sealing it shut! You can freeze this bread for up to a month without any changes to the breads texture. To thaw it, unwrap it and let it sit on a wire rack for two to three hours.
  • To rewarm the bread, wrap it in foil or set it on a baking sheet. Place it in a 300 degree oven for 20 minutes.

1/3 cup all-purpose flour
1/2 cup firmly packed light brown sugar
1 teaspoon ground cinnamon
1 pinch kosher salt
6 tablespoons cold unsalted butter, cut into small chunks
1 cup chopped pecans, lightly toasted
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
2 teaspoons ground cinnamon
1 teaspoon ground ginger
1/4 teaspoon freshly grated nutmeg
1/2 teaspoon kosher salt
1/2 cup unsalted butter
1 cup firmly packed light brown sugar
2 large eggs
1/2 cup pumpkin puree (not pumpkin pie filling)
1/2 cup sour cream
1/2 cup confectioners' sugar, sifted
1 teaspoon whole milk (or a little more to achieve spreading consistency)
1 teaspoon pure vanilla extract

Steps:

  • To toast pecans, preheat the oven to 325°F. Spread the nuts out on a rimmed baking sheet and bake, stirring often, until fragrant and lightly toasted, about 10 minutes.
  • Position a rack in the middle of the oven and preheat to 350°F. Butter and flour a 9" springform pan or a 9" cake pan with 3" sides.
  • To make the streusel, in a bowl, combine the flour, brown sugar, cinnamon and salt. Toss in the butter and, using 2 table knives or a pastry cutter, cut it into the dry ingredients until the mixture looks like coarse crumbs. (Or you can whir the mixture in a food processor) Stir in the pecans.
  • To make the batter, in a bowl, sift together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg and salt. In the bowl of a mixer fitted with the paddle attachment, beat the butter and brown sugar on medium-high speed until well combined. Beat in the eggs, one at a time, scraping down the sides of the bowl with a rubber spatula. Add the pumpkin purée and sour cream and mix with the spatula. Stir in the flour mixture. The batter will be quite thick. Spread half of the batter in the prepared pan. Sprinkle half of the streusel over the batter. Dollop the remaining batter over the streusel and spread the thick batter as best you can. Top with the remaining streusel. Bake until a toothpick inserted into the center of the cake comes out clean, about 50 minutes.
  • Let cool in the pan on a wire rack for about 15 minutes. Remove the sides from the pan and slide the cake onto the rack.
  • To make the glaze, in a small bowl, whisk together the confectioners' sugar, milk and vanilla. Drizzle over the top of the cake. Cut into thick wedges.
