First saw this recipe posted in the Bread Forum and just had to try it. But since it's not posted here, decided it needed to be so everyone can have it. Add some pumpkin to your dinner rolls to celebrate the season. These rolls even look like mini pumpkins. They are easy to make from scratch and will look so gorgeous on your dinner table The dough recipe is from Delicious Dishes. They were soft and tender with a hint of sweetness. But you can use any of your favorite dinner roll recipe to shape these cute minis. They didn't take as much time as I thought it would.

Number Of Ingredients 12

3/4 cup whole milk, scalded
1 cup canned pumpkin puree
1/3 cup light brown sugar
1/3 cup white sugar
6 tablespoons butter
1 egg
1 teaspoon salt
1/2 ounce active dry yeast, 2 packs (plus 1 teaspoon sugar)
1/4 cup lukewarm water
5 cups all-purpose flour
15 -20 pecan halves, sliced into 3 vertical sections
1/4 cup melted butter (optional)

Steps:

  • Pour hot milk in a mixing bowl, add butter and stir to melt. Add sugars, pumpkin puree, salt to the milk and combine well.
  • In a small bowl proof yeast in a lukewarm water with a teaspoon sugar. When it gets foamy add to the pumpkin mixture, and add the egg, mix well.
  • Add in flour gradually and mix with a wooden spoon until well combined. The dough will be sticky.
  • If using electric mixer, attach a dough hook and beat the mixture until the dough itself pulls from the side of the bowl.
  • Turn the dough out to a wooden board dusted with a little flour. Knead with hand for 1 minute. Form the dough into a ball shape, place in a greased bowl and cover with a cloth. Let it rise in a warm place until it doubles in volume, about 1 hours.
  • Punch the dough to deflate and knead it for a few seconds on a wooden board. Cut the dough in half. Cut each half into about 15 pieces.
  • Roll each piece into a ball shape with your hand. Flatten the piece with palm of your hand a little. Using a knife, give 8 cuts on the edge to mimic flower pedals but the leave center uncut.
  • Poke the center with your finger to give a deep indentation, and repeat the same procedure to all the other pieces.
  • Place them, 2" apart, on a baking pan lined with parchment paper or baking mat, and let them rise again to be doubled, about 45 minutes.
  • Preheat oven 350ºF for 20 minutes.
  • If the center indentation is not obvious on the rolls, poke them again with your finger.
  • Brush with egg wash, if you wish, and bake for 9-12 minutes until the top gets slightly golden.
  • Brush the rolls with melted butter or a little honey diluted with water to make it shine if you wish.
  • Insert pecan slices on top to mimic pumpkin stem.

1/3 cup sugar
3/4 cup milk, heated to lukewarm
7 -8 cups all-purpose flour
1 teaspoon nutmeg, freshly grated
1 teaspoon salt
3/4 cup butter, cut into bits and chilled
1 egg, beaten lightly
2 cups pumpkin puree
1 egg
1 tablespoon water

Steps:

  • In a small bowl proof the yeast with 1 teaspoon of the sugar in the milk for 5 minutes, or until the mixture is foamy.
  • In a large bowl combine well 7 cups of the flour, the nutmeg, the salt, and the remaining sugar and blend in the butter until the mixture resembles coarse meal.
  • Add the whole egg, the pumpkin purée, and the yeast mixture and stir the dough until it is combined well.
  • Turn the dough out onto a floured surface and knead it, incorporating as much of the remaining 1 cup flour as necessary to prevent the dough from sticking.
  • Knead until dough is smooth and elastic.
  • Form the dough into a ball, transfer it to a well-buttered large bowl, and turn it to coat it with the butter.
  • Let the dough rise, covered with plastic wrap, in a warm place until it is double in bulk.
  • Turn the dough out onto a work surface, divide it into 14 pieces, and form each piece into a ball.
  • Fit the balls into a buttered 10-inch spring form pan and let them rise, covered with a kitchen towel, in a warm place until they are almost double in bulk.
  • Brush the rolls with the egg wash (1 egg mixed with 1 tbsp water).
  • Bake them in a preheated 350°F oven for 40 to 50 minutes, or until they are golden brown.
  • Let the rolls cool slightly in the pan, remove the side of the pan, and serve the rolls warm.

3 eggs
1 cup white sugar
⅔ cup solid pack pumpkin puree
1 teaspoon lemon juice
¾ cup all-purpose flour
2 teaspoons ground cinnamon
½ teaspoon salt
1 teaspoon baking powder
1 teaspoon ground ginger
1 cup chopped pecans
1 cup confectioners' sugar
½ teaspoon vanilla extract
4 tablespoons butter
8 ounces cream cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a jellyroll pan (large cookie sheet with sides).
  • In a mixing bowl, beat eggs on high for five minutes. Gradually add white sugar, pumpkin, and lemon juice. Add flour, cinnamon, salt, baking powder, and ginger. Spread batter evenly in pan. Sprinkle pecans evenly on top, and press lightly into batter.
  • Bake for 12 to 15 minutes, or until it springs back when touched. Loosen edges with a knife. Turn out on two dishtowels that have been sprinkled with powdered sugar. Roll up cake, and let cool for about 20 minutes.
  • To Make Filling: Mix confectioners' sugar, vanilla, butter or margarine, and cream cheese together till smooth.
  • Unroll pumpkin cake when cool, and spread with filling. Reroll, and push aside the dishtowel. Unroll long sheet of waxed paper. Put pumpkin roll on waxed paper. Dust pumpkin roll with powdered sugar. Twist ends of waxed paper like a piece of candy. Put pumpkin roll in refrigerator and chill overnight. Before slicing, dust with powdered sugar. Serve chilled.

3/4 cup 2% milk
1/3 cup packed brown sugar
5 tablespoons butter, divided
1 teaspoon salt
2 packages (1/4 ounce each) active dry yeast
1/2 cup warm water (110° to 115°)
2 to 2-1/2 cups all-purpose flour
1-1/2 cups whole wheat flour
1/2 cup canned pumpkin
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg

Steps:

  • In a small saucepan, heat the milk, brown sugar, 4 tablespoons butter and salt to 110°-115°; set aside. , In a large bowl, dissolve yeast in warm water. Stir in milk mixture. Add 1-1/2 cups all-purpose flour, whole wheat flour, pumpkin, cinnamon, ginger and nutmeg. Beat until smooth. Add enough remaining all-purpose flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Divide into 20 pieces; shape into balls. Place in a greased 13x9-in. baking pan. Cover and let rise for 30 minutes or until doubled. , Preheat oven to 375°. Melt remaining butter; brush over dough. Bake 20-25 minutes or until golden brown. Remove from pan to a wire rack. Serve warm.

Fabulous dinner rolls that blow away the 'pop open the can' stuff. Easy to make, and you'll be eating them in an hour. Positively irresistible. These peel apart into delicious sections perfect for sopping up whatever is on your plate. Indulgent! I would like to give credit where it is due; this is basically #52107 "Cinnamon Biscuit Rolls" without the cinnamon. I do use a Kitchen-Aid mixer, but other than that, it's the same recipe. Keep that in mind, if you like these for dinner, you'll love #52107 for breakfast or dessert.

2 cups all-purpose flour
2 tablespoons sugar
4 teaspoons baking powder
1 teaspoon salt
1/4 cup cold butter or 1/4 cup margarine
1/4 cup softened butter
1 cup cold milk

Steps:

  • Preheat oven to 400 degrees Fahrenheit.
  • Generously grease an 8" square baking pan with butter.
  • If you have a Kitchen-Aid (or similar) mixer with a dough hook or the paddle (not the wire wisk), use it. If not, get a big ol' bowl and do it the way your grandma did.
  • In a large bowl (or mixer bowl), combine flour, sugar, baking powder, and salt.
  • Cut in 1/4 cup cold butter or margarine until crumbly. If using a mixer, be careful not to overmix.
  • Add 1 cup cold milk, all at once.
  • Stir just enough to combine the ingredients into a dough.
  • Turn dough out onto a floured board. I use my countertop for this.
  • Knead dough 8 times. Do not overknead.
  • Work dough out into a rectangle about 12 inches long and 6 inches wide. Trim off any odd bits and use them to fill in any missing sections. You want to have a fairly good rectangle shape so you can get 12 good rolls out of it.
  • Slather the top of that dough rectangle with the softened butter. Cake it on there. Oh yes. If 1/4 cup doesn't look like enough, get more.
  • Roll up as you would a jelly roll. At this point, if you roll it around a bit, you can carefully roll it to grow a bit longer if you feel it necessary.
  • Cut the dough "snake" in half. Cut each of the halves in half. Cut each of those quarters into three pieces. You should end up with 12 equal pieces.
  • Place the 12 pieces into the greased 8" square pan. I stagger them in four rows of three, in a "honeycomb" pattern. Don't worry about the dough not touching every bit of pan, they will rise in the oven.
  • Bake for 20-25 minutes.

1 cup warm water (105 to 115 F)
7 1/2 ounces canned or fresh pumpkin puree (about 1 cup)
4 ounces unsalted butter, softened
2 1/4 ounces sugar (1/3 cup)
1 egg
1 1/2 teaspoons salt
5 -6 cups flour
extra butter, softened

Steps:

  • Put warm water into a large bowl and sprinkle the yeast over the surface; stir to moisten yeast and wait a few minutes for it to start dissolving.
  • Stir in pumpkin, butter, sugar, egg, salt and 3 cups of the flour.
  • Beat until smooth.
  • Mix in enough remaining flour to make a dough that can be handled, but still soft.
  • Knead on a lightly floured surface until smooth and elastic, about 5 minutes.
