JERSEY HAM, EGG, BAGEL AND HERB CREAM CHEESE BREAKFAST SANDWICH



Jersey Ham, Egg, Bagel and Herb Cream Cheese Breakfast Sandwich image

3/4 cup cream cheese
1 tablespoon fresh dill
1 tablespoon fresh parsley
Pinch chile powder
Salt and freshly ground black pepper
1 large Jersey tomato (beefsteak)
Vegetable oil, for oiling skillet
8 slices Jersey pork roll, such as Taylor Ham (see Cook's Note)
8 eggs
1 tablespoon butter
4 bagels, split

Steps:

  • Place the cream cheese in a large bowl. Finely chop the dill and parsley and add to the cream cheese with a pinch of chile powder. Season with salt and pepper, and thoroughly mix the ingredients to evenly distribute and combine the flavors.
  • Slice 4 rounds from the center of the tomato, each about 1/4 inch thick. Season with salt and pepper and set aside.
  • Set a skillet over medium heat and add a little oil. Cook the pork roll slices until lightly browned on each side, about 5 minutes. Set aside.
  • Whisk the eggs in a bowl and sprinkle with salt and pepper. Put a nonstick skillet on medium heat and add the butter. Add the eggs and cook until scrambled, stirring occasionally, about 5 minutes.
  • Spread about 1 1/2 tablespoons of the herb cream cheese on each bagel half. Place 2 slices of the meat on the bottom half of each bagel and top with scrambled eggs and sliced tomato. Place the top half of each bagel on the sandwiches and serve.

I love to make these on the weekends! It's so versatile, too...you can mix & match your favorite bagels, cheeses and meats to create your own personal touch!

Number Of Ingredients 5

1 bagel (flavor of your choice- I prefer Everything or Egg bagels)
1 egg
1 slice cheese (flavor of your choice- I prefer American)
2 pieces deli ham (any breakfast meat) or 2 pieces Canadian bacon (any breakfast meat)
1 tablespoon butter

Steps:

  • Place bagel in toaster and toast as desired.
  • Over medium heat, fry egg in frying pan.
  • Turn off heat but, leave pan on burner.
  • Place meat on top of egg and then the cheese on top of the meat.
  • Cover with a lid and let the heat melt the cheese.
  • Butter toasted bagel.
  • Place egg, meat, and cheese pile on one half of bagel and top with the other half.
  • Slice in half and enjoy!

This is a casserole style breakfast, brunch or dinner dish. It's a snap to make as it's prepared and kept in the fridge till needed at meal time.

12 slices bread
butter
12 slices cheddar cheese (or American)
1/2 cup thinly sliced green onion, divided
4 large eggs
3/4 teaspoon italian seasoning
salt, to taste
pepper, to taste
1 1/2 cups milk
1 (10 ounce) can mushroom soup (optional)

Steps:

  • Butter one side of each slice of the bread.
  • Place 2 cheese slices and a portion of the the green onion between 2 slices of bread, buttered side inches.
  • Place sandwiches side by side in a 13 × 9-inch baking dish.
  • Beat eggs, Italian seasoning, salt and pepper with milk.
  • Pour over sandwiches and let stand for 1 hour or overnight in fridge.
  • Bake 1/2 hour at 350 degrees F or until hot through and the egg mix is set.
  • Serve with cream of mushroom soup slightly diluted with milk, heated and poured over the top if desired.
