1 small eggplant
2 large tomatoes
1 yellow squash
1 onion
1 zucchini
1 can (8 oz.) tomato sauce
1 Tbsp. olive oil

Steps:

  • Heat oven to 375°F.
  • Combine bread crumbs, cheeses and seasoning. Cut vegetables into 1/4-inch-thick slices.
  • Pour half the tomato sauce into 13x9-inch baking dish; cover with layers of half each of the vegetables and cheese mixture. Top with remaining sauce and vegetables. Drizzle with oil; cover.
  • Bake 30 min.
  • Top with remaining cheese mixture; bake, uncovered, 15 min. or until vegetables are tender and topping is golden brown.

1 large aubergine
2 tsp rapeseed oil , plus extra for brushing
2 red onions , halved and sliced
2 peppers (any colours), diced
2 large courgettes , diced
2 garlic cloves , chopped
400g can chopped tomatoes
2 tsp gluten-free vegetable bouillon
1 thyme sprig , plus a few extra leaves for the top
handful basil , stalks chopped, leaves torn and kept separate
1 large egg
150g pot bio yogurt
15-25g vegetarian parmesan-style cheese , finely grated
2 handfuls rocket , dressed with balsamic vinegar, to serve

Steps:

  • Heat oven to 220C/200C fan/gas 7. Cut the aubergine lengthways into long thin slices - once you have six slices, chop the remainder. Brush the slices very lightly with oil, place on a baking sheet lined with baking parchment and cook for 15 mins, turning once, until softened and pliable. Turn oven down to 180C/160C fan/gas 4.
  • Meanwhile, heat the oil in a large non-stick frying pan and fry the onions until softened. Stir in the chopped aubergine, the peppers, courgettes and garlic, and cook, stirring, for a few mins more. Tip in the tomatoes and a half a can of water, then stir in the bouillon, thyme and basil stalks. Cover and simmer for 20 mins or until tender. You can add up to half a can of water if the mixture is getting too dry. Stir through the basil leaves.
  • If you are following our Healthy Diet Plan, set aside half of the ratatouille when it is ready - you'll need to chill this for our ratatouille pasta salad with rocket later in the week. If you're not following the plan, you can serve the extra ratatouille on the side or set it aside to enjoy for another meal.
  • Beat the eggs with the yogurt, cheese and 1 tbsp water. Spoon the remaining ratatouille into a shallow ovenproof dish, top with the aubergine slices, then cover with the yogurt mixture and scatter with thyme. Bake for 10-15 mins until the topping is set and starting to colour. Serve with dressed rocket on the side.

1 large eggplant (1 1/2 pounds), diced into 1/2-inch pieces (about 9 cups)

Steps:

  • Heat 1/4 cup olive oil in a medium saucepan over medium heat until shimmering, about 1 minute. Add the bell peppers, onion and 1 teaspoon salt and cook, stirring often, until the onions are translucent and the bell peppers have softened slightly, about 10 minutes. Add the eggplant, the remaining 2 tablespoons olive oil and 1 teaspoon salt. Cook, stirring often, until the eggplant is very soft, about 8 minutes. Add the zucchini and continue to cook, stirring often, until beginning to soften, about 5 minutes. Add the garlic, tomato paste and red pepper flakes, if using. Cook, stirring often, until the zucchini has softened, about 5 minutes.
  • Stir in the tomatoes, bring to a simmer and then reduce the heat to low and cover the pot. Simmer, stirring occasionally, until the ratatouille has reached a thick stew-like consistency, about 10 minutes. Stir in the parsley and basil with salt and pepper to taste. Spoon into a bowl and sprinkle with more fresh parsley and basil before serving.

1/4 cup red wine vinegar

1 Japanese eggplant, halved lengthwise
1 medium red onion, unpeeled, thickly sliced
1 red bell pepper
1 yellow squash, halved lengthwise
1 zucchini, halved lengthwise
Canola oil, for brushing
1/2 loaf ciabatta, split in half horizontally
12 cherry tomatoes, cored
2 ounces baby arugula or spinach
1/4 cup coarsely shredded Parmesan

Steps:

  • Heat a charcoal or gas grill to high.
  • Put the basil, parsley, red wine vinegar, garlic and some salt and pepper in a medium bowl. Whisk in the olive oil. Set aside.
  • Brush the eggplant, onion, pepper, squash and zucchini with canola oil on all sides and season with salt and pepper. Brush the cut side of the ciabatta with canola and season with salt and pepper.
  • Place the zucchini, squash and eggplant on the grill, flesh-side down. Place the onion slices and the pepper on grill. Cover and cook until the cut vegetables are charred, about 4 minutes; then flip and cook, covered, until they are tender, another 2 to 3 minutes. Transfer the cut vegetables to a cutting board. Cover the grill and continue cooking the pepper, turning occasionally, until it is charred all over and tender, about 10 minutes more. Remove the pepper to a bowl, cover tightly with plastic wrap, and let steam for 10 minutes.
  • Put the tomatoes in a grill basket and grill, covered, shaking the basket occasionally, until charred and softened, about 5 minutes. Grill the ciabatta, cut-side down, until golden and toasty, about 3 minutes. Flip and grill 1 minute more. Transfer to the cutting board with the vegetables.
  • Seed and chop the bell pepper; remove the peels and coarsely chop the red onions; cut the zucchini, squash, eggplant and bread into 2-inch cubes. Combine the vegetables and bread in a large bowl, season with salt and pepper, and toss with some of the dressing. Mound the salad on a serving platter, top with some of the arugula, and drizzle with the remaining dressing. Scatter the Parmesan over the top, and serve immediately.

6 roma tomatoes

1 onion, diced

28 oz can of crushed tomatoes
2 tablespoons chopped fresh basil, from 8-10 leaves

Steps:

  • Preheat the oven for 375˚F (190˚C).
  • Slice the eggplant, tomatoes, squash, and zucchini into approximately ¹⁄₁₆-inch (1-mm) rounds, then set aside.
  • Make the sauce: Heat the olive oil in a 12-inch (30-cm) oven-safe pan over medium-high heat. Sauté the onion, garlic, and bell peppers until soft, about 10 minutes. Season with salt and pepper, then add the crushed tomatoes. Stir until the ingredients are fully incorporated. Remove from heat, then add the basil. Stir once more, then smooth the surface of the sauce with a spatula.
  • Arrange the sliced veggies in alternating patterns, (for example, eggplant, tomato, squash, zucchini) on top of the sauce from the outer edge to the middle of the pan. Season with salt and pepper.
  • Make the herb seasoning: In a small bowl, mix together the basil, garlic, parsley, thyme, salt, pepper, and olive oil. Spoon the herb seasoning over the vegetables.
  • Cover the pan with foil and bake for 40 minutes. Uncover, then bake for another 20 minutes, until the vegetables are softened.
  • Serve while hot as a main dish or side. The ratatouille is also excellent the next day--cover with foil and reheat in a 350˚F (180˚C) oven for 15 minutes, or simply microwave to desired temperature.

3 -5 tablespoons olive oil
1 large eggplant, peeled and cut into 1/2-inch cubes
2 teaspoons kosher salt
1 large onion, chopped
5 -6 garlic cloves, minced
1/4 teaspoon hot red pepper flakes
2 red bell peppers, cut into large pieces
2 green bell peppers, cut into large pieces
1 lb vine-ripened tomatoes, seeded and chopped fine
1 cup canned cooked chickpeas, drained
1 cup fresh basil, chopped (loosely packed, divided)
1 cup fresh Italian parsley, chopped (loosely packed, divided)
fresh ground black pepper
1 lb parmesan cheese (whole wedge)
1 teaspoon vegetable oil
freshly cracked pepper

Steps:

  • Sprinkle Eggplant pieces lightly with salt and pepper. Allow to rest salted in a colander for about a half hour.
  • In a large deep sided frying pan heat 1 to 1 1/2 tablespoons oil until hot.
  • Cook half the eggplant in the hot oil until lightly browned on all sides, transfer to a dish to reserve and repeat with the other half of the eggplant and reserve that on the side as well.
  • In the same frying pan, heat another tablespoon of olive oil and add the onion, garlic, pepper sand red pepper flakes. Sautee' till slightly softened but not limp.
  • Add the eggplant back to the pan and then add the chick peas, tomatoes and half of the basil and parsley.
  • Cook on low until vegetables are softened and sauce has thickened somewhat. Adjust seasonings with salt and pepper to taste.
  • Parmesan crisp:.
  • Preheat oven to 425 degrees.
  • Grate the parmesan cheese using the large holes of a box grater or using the grater attachment to a food processor.
  • Oil a baking sheet well with vegetable oil (nonstick cooking spray can be substituted or use silpat if you are lucky enough to have it).
  • Pile cheese in cookie sized rounds of about 1-1/2 inch diameter.
  • Sprinkle over with freshly cracked pepper.
  • Bake in oven about 5-7 minutes (keep an eye on it, it'll burn fast) until golden brown. Remove from cookie sheet and place on cooling racks.
