2 ripe bananas
1/4 cup pumpkin puree
1 teaspoon pumpkin pie spice
Two 3.25-ounce cups store-bought vanilla pudding
2 graham crackers

Steps:

  • Mash one of the bananas with a potato masher or fork. Combine the mashed banana with the pumpkin puree and pumpkin pie spice in a bowl. Divide the pumpkin mixture between each of the pudding cups and stir until combined.
  • Slice the remaining banana and add to the top of the puddings. Crush the graham crackers and sprinkle over the top.

2 ripe bananas, mashed
2 eggs
⅓ cup vegetable oil
1 ⅓ cups canned pumpkin puree
½ cup honey
½ cup white sugar
2 ½ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
2 teaspoons pumpkin pie spice
1 teaspoon ground cinnamon
¾ cup raisins
½ cup walnut pieces

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 9x5 inch loaf pan.
  • In a large bowl, stir together the mashed banana, eggs, oil, pumpkin, honey and sugar. Combine the flour, baking powder, baking soda, salt, pie spice and cinnamon, stir into the banana mixture until just combined. Fold in the raisins and walnuts if desired. Pour batter into the prepared pan.
  • Bake at 350 degrees F (175 degrees C) for 45 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Cool loaf in the pan for 10 minutes before moving to a wire rack to cool completely.

We love pumpkin bread and banana bread, so why not combine them. I was experimenting the other day, came up with this recipe. Wife and kids loved it.

1 cup sugar
4 ounces butter
2 eggs
2 ripe bananas, mashed
1/2 cup pumpkin (canned)
1 teaspoon baking soda
1/4 teaspoon salt
2 cups all-purpose flour
1/2 teaspoon pumpkin pie spice

Steps:

  • Preheat oven to 300 degrees. Butter and flour a loaf pan or a jumbo muffin tin (holds 9 muffins).
  • In a mixing bowl, cream together the sugar and the butter. One at a time, add the eggs. Add the bananas and pumpkin. Mix until everything is well combined.
  • In a second bowl, sift together the baking soda, salt, four and spice. Mix the moist ingredients into the dry ingredients. Pour the batter into the loaf pan or muffin tins. Bake in the oven one hour to 1 hour 12 minutes. Cover with aluminum foil if/when turns brownish. Done when toothpick inserted in the middle comes out clean.
  • (NOTE: If wish to just make banana bread, omit the pumpkin, add one additional banana, omit the spice, follow directions as is).

This quick rice pudding doesn't just taste great--it looks great, too, with its creamy not-to-sweet orange-colored rice, plump raisins and topping of caramelized bananas, aka bruléed bananas. It will make you look like a pro chef just in time for the holidays.

1/2 cup short-grain white rice (I used sushi rice)
2 cups whole milk
1 cup canned unsweetened pure pumpkin puree
3/4 cup sugar
1/4 cup raisins
2 teaspoons pure vanilla extract
1 stick Mexican cinnamon
Pinch kosher salt
2 bananas, sliced into 1/4-inch rounds

Steps:

  • Combine the rice and 1 1/2 cups water in a medium microwave-safe bowl. Microwave on high until most of the water is absorbed and the rice is mostly cooked through but still has a bite to it, about 8 minutes.
  • Meanwhile, heat a medium saucepan over medium-high heat. Add the milk, pumpkin puree, 1/4 cup plus 2 tablespoons sugar, raisins, vanilla, cinnamon stick and salt. Let the mixture reach a steady simmer and maintain that steady simmer through completion of the recipe.
  • When the rice finishes cooking in the microwave, add it and any remaining liquid to the simmering milk mixture. Cook, stirring occasionally, until the rice is completely tender and the pudding thickens, 12 to 14 minutes. Slow, large bubbles will rise to the top towards the end of cooking.
  • Remove the saucepan from the heat, discard the cinnamon stick and divide the pudding between six 6-ounce broiler-proof ramekins. Refrigerate until completely cool, about 30 minutes. The pudding will continue to thicken as it cools.
  • When ready to serve, arrange a rack in the top position of the oven and heat the broiler on high (see Cook's Note).
  • Place a single layer of sliced bananas on top of each pudding. Evenly sprinkle 1 tablespoon of sugar over the top of each pudding. Broil until the sugar forms a hard, caramel layer, about 30 seconds, checking every 10 seconds. Serve.

1/2 cup brown sugar (packed)
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ginger
1/4 teaspoon clove
2 cups pumpkin puree (16 oz tin)
3 eggs
1 cup evaporated milk
3/4 cup whole milk
1 cup whipped cream

Steps:

  • Heat oven to 350 degrees F and butter a 1 1/2 quart casserole dish.
  • Peel and slice the bananas lengthwise and cover the bottom of the casserole with the sliced bananas.
  • Mix together the brown sugar,salt, cinnamon, ginger, nutmeg and cloves.
  • Beat the spice mixture into the pureed pumpkin.
  • Beat together the eggs, evaporated milk& the whole milk.
  • Gradually stir the liquid into the pumpkin mixture, mix well.
  • Pour over the bananas into the casserole.
  • Bake for apprx 1 hour or until a knife comes out clean when inserted in the center Serve with a good dollop of whipped cream on top.

1-1/2 cups sugar
2 large eggs
1 cup mashed ripe bananas (about 2 medium)
3/4 cup canned pumpkin
1 teaspoon vanilla extract
1-3/4 cups all-purpose flour
1-1/2 teaspoons baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped walnuts or pecans

Steps:

  • In a large bowl, cream shortening and sugar. Add eggs, one at a time, beating well after each addition. Beat in bananas, pumpkin and vanilla. Combine the flour, baking power, baking soda and salt; gradually add to creamed mixture. Fold in nuts. , Pour into five greased 5-3/4x3x2-in. loaf pans.   • Remove pudding mixture from refrigerator and stir in pumpkin and pumpkin pie spice. Set aside.
  • Whip cream in large bowl until stiff peaks form. Add pumpkin pudding mix to cream by the spoonful, folding in each time. No streaks of cream or pudding mix should remain.
  • For assembly, select a large bowl, serving dish or trifle bowl with 4 to 5 qt. capacity. Using a large ice cream scoop, add three scoops of pudding to the bottom and spread. Top with a layer of gingersnap cookies and one sliced banana. Layer with one third of remaining pudding, more cookies and one banana. Continue this layering pattern two more times until you have no more cookies or bananas. Top generously with remaining pudding, being sure all bananas are covered. Cover with plastic wrap and refrigerate at least 8 hours or until cookies are completely soft.
