Pulled Flank Steak in Red Wine Sauce (Ropa Vieja o Carne Ripiada) image

Pressure cooking flank steak makes shredding this lean meat really easy. The red wine rounds out the sauce in this quick version of the traditional Cuban stew.

Yield Serves 6

Number Of Ingredients 15

3 cups (710 ml) water
1 1/2 lb (680 g) flank steak
2 bay leaves
1 tbsp (18 g) plus 2 tsp (12 g) kosher salt
1/3 cup (80 ml) canola oil
1 medium Spanish onion, cut into 1/2" (1.3-cm) julienne
1 medium green bell pepper, cut into 1/2" (1.3-cm) julienne
1 medium red bell pepper, cut into 1/2" (1.3-cm) julienne
4 cloves garlic, minced
1 tsp (1 g) dried oregano
1/2 tsp ground cumin
1 cup (245 g) tomato sauce
1 cup (235 ml) dry red wine
1 tbsp (15 ml) white distilled vinegar
1/8 tsp freshly ground black pepper

Steps:

  • Add the water, flank steak and bay leaves to the cooker. Season with 1 tablespoon (18 g) of the salt. Close the lid.
  • Stovetop Pressure Cooker: Set to high pressure (15 PSI) and set the timer for 30 minutes. Cook over high heat until the pressure point is reached, then lower the heat to medium and
  • Electric Pressure Cooker: Use the meat setting and adjust the time to 35 minutes, or set to high pressure (10-12 PSI) and 35 minutes.
  • When done, remove the stovetop cooker from the heat and apply quick-release, or cancel cooking for the electric cooker and apply auto-release. When all the pressure is out, open the cooker and transfer the flank steak to a carving board, using tongs. Allow the beef to rest, about 5 minutes. Reserve 1 cup (235 ml) of the beef stock for later use and discard the rest. Do not discard the bay leaves. When ready, manually shred the beef, pulling it apart into 1/2-inch (1.3-cm) wide pieces. Heat the oil in the stovetop pressure cooker over medium-high or use the sauté setting for the electric pressure cooker. Sauté all of the vegetables and garlic, adding the oregano and cumin, until the onion begins to soften and the mixture is fragrant, about 2 to 5 minutes. Stir in the tomato sauce, red wine and reserved beef stock. Add the shredded beef, vinegar and black pepper, and adjust for salt. Stir well, cancel cooking for the electric cooker and close the lid.
  • Stovetop Pressure Cooker: Set to high pressure (15 PSI) and cook over high heat for 10 minutes total.
  • Electric Pressure Cooker: Use the meat setting and adjust the time to 15 minutes, or set to high pressure (10-12 PSI) and 15 minutes.
  • When done, remove from the heat or turn off the cooker and allow the pressure to release on its own (natural-release), about 7 to 10 minutes. If the pressure is not fully released after 10 minutes, apply auto-release. Serve immediately.

Provided by Chef Ron

Categories     Meat and Poultry Recipes     Beef     Steaks     Flank Steak Recipes

Time 8h25m

Yield 6

Number Of Ingredients 12

1 (1 1/2-pound) flank steak, fat trimmed
¾ cup olive oil
½ cup light brown sugar
½ cup dry red wine
¼ cup soy sauce
3 tablespoons onion powder
3 tablespoons honey
3 whole green onions, coarsely chopped
4 cloves garlic
2 tablespoons garlic vinegar
1 ½ teaspoons ground ginger
1 ½ teaspoons garlic powder

Steps:

  • Score the flank steak by making shallow crisscross cuts on both sides.
  • Place the olive oil, light brown sugar, red wine, soy sauce, onion powder, honey, green onions, garlic cloves, garlic vinegar, ground ginger, and garlic powder in a blender. Puree until smooth; pour mixture into a resealable plastic bag. Add the steak, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator overnight.
  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  • Allow the flank steak to rest at room temperature for 20 minutes. Remove the steak from the marinade, and shake off excess. Pour the marinade into a small saucepan and bring to a boil over high heat. Reduce heat to medium-low, and simmer for 10 minutes; set aside.
  • Grill the steak on the preheated grill until it starts to firm, and is reddish-pink and juicy in the center, about 7 minutes per side, basting often with the sterilized marinade. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C).

POUNDED FLANK STEAK WITH ZUCCHINI SALSA

Pounded Flank Steak with Zucchini Salsa image

A little meat-mallet action transforms this tough cut of beef into a quick-grilling all-star.

Provided by Amiel Stanek

Categories     Bon Appétit     Summer     Grill     Steak     Oregano     Zucchini     Quick & Easy

Yield 4 servings

Number Of Ingredients 6

1 1/2 pounds zucchini, cut into 1/4-inch pieces (about 5 cups)
1/2 cup red wine vinegar
1 tablespoon coarsely chopped oregano, plus leaves for serving
1/4 cup olive oil, plus more for steak
Kosher salt, freshly ground pepper
1 (1 1/2-pound) piece flank steak

Steps:

  • Toss zucchini, vinegar, chopped oregano, and 1/4 cup oil in a medium bowl to combine; season zucchini salsa with salt and pepper. Set aside.
  • Prepare a grill for high heat. Meanwhile, flatten your steak. Cover a cutting board with a long piece of plastic wrap and set steak on top; fold plastic over steak to cover. Using the smooth side of a meat mallet, pound steak to about 1/2" thick. (Don't hold back; you want it good and roughed up.) Pat steak dry with paper towels; season generously with salt and rub a bit of oil all over. Grill until browned, about 2 minutes per side for medium-rare. (You might not get that much color on this steak because it's so thin, but you don't want it to be overcooked.) Transfer steak to a cutting board and let rest 5-10 minutes. Cut in half lengthwise with the grain, then slice thinly against the grain.
  • Arrange steak on a platter and spoon half of reserved salsa along with some juices over steak. Top with oregano leaves. Serve remaining salsa alongside.
  • Do Ahead
  • Zucchini salsa can be made 1 day ahead. Cover and chill.
