A wonderfully delicious shredded chicken salad perfect for sandwiches, salads, and crackers! This is one of those things that gets more delicious the more it sits chilling.

4 cups shredded cooked chicken
4 stalks celery, minced
2 large carrots, peeled and minced
1 cup mayonnaise
¼ cup sweet relish
1 tablespoon spicy brown mustard
½ medium lemon, juiced
¾ teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Mix chicken, celery, carrots, mayonnaise, relish, mustard, lemon juice, salt, and pepper in a bowl until well combined. Place in the refrigerator to chill for at least 1 hour before serving.

1 small roasted chicken , about 1kg
½ red cabbage , cored and finely sliced
3 carrots , coarsley grated or finely shredded
5 spring onions , finely sliced on the diagonal
2 red chillies , halved and thinly sliced
small bunch coriander , roughly chopped, including stalks
2 heaped tbsp roasted salted peanuts , roughly crushed
3 ½ tbsp hoisin sauce
1 ½ tbsp toasted sesame oil

Steps:

  • Combine the dressing ingredients in a small bowl and set aside.
  • Remove all the meat from the chicken, shred into large chunks and pop in a large bowl. Add the cabbage, carrots, spring onions, chillies and half the coriander. Toss together with the dressing and pile onto a serving plate, then scatter over the remaining coriander and peanuts.

Warm Shredded Chicken Salad image

6 boneless, skinless chicken breasts
1/2 cup sesame oil
2 tablespoons peanut oil
Juice of 1/2 lemon
1/4 cup soy sauce
3 tablespoons freshly grated ginger
1 tablespoon cornstarch
1/2 cup extra virgin olive oil
2 tablespoons fresh lemon juice
3/4 teaspoon salt
1/4 teaspoon freshly ground pepper
5 large bunches watercress, stems removed, leaves washed and well dried
2 ripe avocados, halved, seeded, and peeled
1/2 cup peanut oil for frying

Steps:

  • Trim chicken of any excess fat or sinew. Slice, across grain, into 3 by 1/2 inch strips. Stir marinade ingredients together in a medium bowl. Add chicken strips and toss to evenly coat. Set aside at room temperature, uncovered, 30 minutes. It's important not to marinate any longer, or the acid in the lemon will break down the fibers of the chicken.
  • Meanwhile, prepare the salad. Whisk together olive oil, lemon juice, salt, and pepper in a bowl. Tear watercress into bitesized pieces and toss with dressing. Divide salad among 6 serving plates. Thinly slice avocado halves into strips lengthwise and arrange on salad. Reserve in refrigerator.
  • To cook chicken, heat a large dry cast iron skillet over high heat 15 minutes. (Yes, 15 minutes.) Heat peanut oil for frying. Lift chicken strips from marinade, one at a time, and add to pan, standing as far away as possible to avoid splatters. Fry until dark golden brown and crisp, about 1 minute per side. Arrange about 8 hot chicken strips on each salad in a spoke pattern. Serve immediately.

1 head iceberg lettuce, chopped
2 cups shredded cooked chicken
1 (15.25 ounce) can sweet yellow corn, drained
1 (15 ounce) can black beans, rinsed and drained
1 medium green bell pepper, diced
2 medium ripe avocados, diced
2 medium Roma tomatoes, diced
4 stalks green onions, sliced
¼ cup chopped fresh cilantro
⅔ cup plain Greek yogurt
½ cup mayonnaise
1 tablespoon taco seasoning mix
1 tablespoon dry ranch dressing mix
1 cup crushed tortilla chips

Steps:

  • Combine lettuce, chicken, corn, beans, bell pepper, avocados, tomatoes, green onions, and cilantro for salad in a large bowl.
  • Stir yogurt, mayonnaise, taco seasoning, and ranch dressing mix for dressing together in a small bowl.
  • Pour 1/2 of the dressing over the salad and toss to combine. Gradually add more dressing until it is dressed to your liking. Top with tortilla chips before serving.

4 cups shredded cooked chicken
2 cups shredded lettuce
1 cup julienned carrots
1 cup julienned cucumber
2/3 cup green onion strips (2-inch pieces)
1 cup canned bean sprouts
DRESSING:
2 tablespoons vegetable oil
2 tablespoons lemon juice
2 tablespoons sesame seeds, toasted
1-1/2 teaspoons light soy sauce
1/4 teaspoon pepper
1/4 teaspoon ground mustard
Hot pepper sauce to taste

Steps:

  • In a large salad bowl, toss the chicken, lettuce, carrots, cucumber, green onion and bean sprouts. Refrigerate. In a small bowl, combine dressing ingredients. Refrigerate. Just before serving, pour dressing over salad and toss gently.

Try making this tasty chicken salad with bulgur wheat and courgette during the week for an easy midweek meal. It's ideal for serving a small crowd.

6 skinless and boneless chicken thighs
2 tbsp olive oil
6 garlic cloves , skin on
200g bulgur wheat
1 courgette , peeled into ribbons
small pack parsley , roughly chopped
small pack dill , roughly chopped
100g crème fraîche or Greek yogurt
1 tsp Dijon mustard
1 tbsp cider vinegar

Steps:

  • Heat oven to 200C/180C fan/gas 6. Toss the chicken in a large roasting tin with 1 tbsp oil and the garlic, season well and bake for 35 mins until cooked through and browned a little.
  • Meanwhile, cook the bulgur wheat following pack instructions. Drain, tip in a bowl, pour in the rest of the oil to stop it sticking together, then set aside. Whisk the dressing ingredients with a splash of water (it should be runny enough to drizzle), and season to taste.
  • When the chicken is cooked, squeeze the garlic cloves out of their skins into the tin. Leave the chicken to cool a little, then shred with a fork. Add the bulgur wheat, courgette ribbons and herbs to the tin. Toss together well, coating everything in the juices in the tin. Transfer to a serving dish and drizzle over the dressing to serve.

Remake a street-food favourite, pulled pork, with juicy chicken thighs to cut the calories for a healthy taco filling

8 bone-in chicken thighs , skin removed and discarded and trimmed of any big bits of fat
2 tbsp chipotle paste
250ml passata
75g barbecue sauce
1 onion , chopped
juice 3 limes , plus extra wedges to serve (optional)
2 x 400g cans black beans , drained and rinsed
215g can refried beans
1 small, ripe avocado , diced
½ small pack coriander , leaves only
3 Little Gem lettuces , shredded
8-12 tacos , or cooked rice, to serve

Steps:

  • Heat oven to 180C/160C fan/gas 4. Rub the chicken thighs with 1 tbsp of the chipotle paste and some seasoning. Mix the remaining chipotle paste with the passata, barbecue sauce, 100ml water and half the onion. Spoon the sauce into a roasting tin that will fit the chicken snugly in a single layer and add the chicken thighs. Cover tightly with foil and bake for 1 hr, then uncover, increase the oven to 200C/180C fan/gas 6 and bake for another 20 mins.
  • Meanwhile, mix the remaining onion with the lime juice and some salt, and set aside while the chicken cooks. Mix all the beans in a saucepan with 100ml water and heat, ready to serve.
  • When the chicken is really tender, use two forks to shred the meat into the sauce (discard the bones). Keep covered with the foil while you heat the beans for 5-10 mins until piping hot and not too wet, and warm the tacos following pack instructions. Stir the avocado and coriander leaves into the lime-onion mixture.
  • Serve the pulled chicken and beans with shredded lettuce and tacos, or rice and lime wedges to squeeze over, if you like. Top with a spoonful of the avocado salsa.
