SAUSAGE EGG AND CHEESE EVERYTHING BREAKFAST PUFF PASTRY



Sausage Egg and Cheese Everything Breakfast Puff Pastry image

This make ahead Sausage Egg and Cheese Everything Breakfast Puff Pastry is a savory breakfast that everyone will enjoy!

1/2 lb hot breakfast sausage
5 large eggs
1 ½ cups cheddar cheese (grated)
1 tsp poppy seeds
1 tbsp white sesame seeds
1 tbsp black sesame seeds
1 tsp dried onion
1 tsp dried garlic
1 tsp flaky sea salt
2 sheets puff pastry

Steps:

  • Preheat oven to 400° and defrost puff pastry.
  • Brown sausage and drain onto a paper towel lined plate.
  • In the same pan, scramble four of the eggs. Remove from heat and set aside.
  • Roll out puff pastry sheets onto a flour surface into approximately 12in by 15in rectangles.
  • Divide sausage and egg filling into 6 different sections on a sheet of rolled out puff pastry. Place the other puff pastry sheet on top and pat down around filling. Cut into 6 rectangles. Use a fork to press edges together around each pastry and poke four sets of holes on top of each pastry to allow steam to escape while baking.
  • Whisk remaining egg with 1 tablespoon of water. Brush egg wash all over the top of each pastry.
  • Mix together the poppy seeds, sesame seeds, onion, garlic and salt. Sprinkle generously on top of pastries.
  • Bake for 20 minutes, turning half way. Let cool a few minutes before serving, filling will be very hot.
  • If making ahead, stop at step 5. Par freeze the pastries by placing them onto a freeze safe plate or tray and freeze for one hour. Then transfer to freezer safe zip top bag and store for up to six months. When ready to bake, preheat oven to 400 degrees. Brush frozen pastries with egg wash and top with everything seasoning. Bake for 20-25 minutes until pipping hot.

1 package (12 ounces) frozen turkey breakfast sausage links, thawed
1 cup reduced-fat biscuit/baking mix
1 cup shredded reduced-fat cheddar cheese
1 teaspoon ground mustard
1 teaspoon Italian seasoning
1 cup egg substitute
2 large eggs
2 cups fat-free milk

Steps:

  • Remove sausage from casings; crumble into a large skillet. Cook until no longer pink; drain. In a large bowl, combine the biscuit mix, cheese, mustard and Italian seasoning; add sausage. , In another bowl, whisk the egg substitute, eggs and milk; stir into the sausage mixture. Transfer to a shallow 2-qt. baking dish coated with cooking spray. Cover and refrigerate overnight., Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 50-55 minutes or until a knife inserted in the center comes out clean.

I make these as weekend snacks and for parties, I strongly suggest to double the recipe if you are making these for a party. To save some time prepare the sausage mixture up to 24 hours in advance. These are simply delicious, and not hard to make!

1/4 cup fresh breadcrumb
2 tablespoons milk
1/2 lb Italian sausage, casings removed
1/2 onion, finely chopped
1 egg
1 -2 teaspoon fresh minced garlic
1 teaspoon dried oregano
1 sheet frozen puff pastry, thawed
1 egg, lightly beaten (to brush on pastry)
marinara sauce, heated

Steps:

  • Grease a large baking sheet.
  • In a small bowl combine breadcrumbs and milk; let stand until the milk is absorbed (about 5 minutes).
  • Transfer to a processor, and add in sausage meat, onion 1 egg, garlic and oregano; using on/off turns, process until blended.
  • Season with salt and pepper.
  • Unfold the pastry sheet onto a floured surface.
  • Roll out into a 20x10-inch rectangle.
  • Cut pastry crosswise into 10x4-inch strips (I use a pizza cutter for this!).
  • Brush each strip with beaten egg.
  • Spoon 1/3 of the sausage mixture in narrow strip lengthwise down the center of each pastry strip.
  • Fold the long sides in covering the filling and overlapping slightly.
  • Transfer and arrange the rolls seam-side down on the prepared baking sheet.
  • Cover and chill until rolls are set (at least 1 hour).
  • Set oven to 425°F.
  • Cut each roll crosswise into 8 pieces.
  • Separate pieces on the baking sheet.
  • Brush with remaining beaten egg.
  • Bake until rolls are puffed and golden (about 20-22 minutes).
  • Serve warm with heated marinara sauce.
  • Delicious!

You can prepare the pie a day ahead and refrigerate overnight, or freeze pie for up to one month. Although I have only made this using puff pastry, I would think that you could use a plain pie pastry for this instead of the puff pastry. This is delicious! If you want cut the sausages in half after browning.

1 1/2 lbs country-style breakfast sausage (I use Johnsonville breakfast sausages for this)
1 small onion, finely chopped (can use 1 shallot, minced)
1/2 lb fresh mushrooms, sliced
1 (8 ounce) package cream cheese (cut into chunks)
8 large eggs
3 tablespoons whipping cream (can use half and half or milk)
1/4 cup breadcrumbs (unseasoned)
1 frozen puff pastry sheet, thawed (thaw according to package direction)
3 -4 tablespoons butter, melted

Steps:

  • Brown the sausages in a skillet for about 5 minutes, turning occasionally; remove from pan and set aside.
  • Add in onion or shallot; saute for about 3 minutes or until softened.
  • Add in mushrooms; saute for about 6 minutes.
  • Add in cream cheese and the sausages back to the skillet; cook, stirring until cheese has melted (about 3 minutes).
  • Spoon the sausage/cheese mixture into an 8 x 8-inch square baking dish.
  • In a bowl whisk eggs with 3 tablespoons whipping cream or half and half cream OR milk.
  • Add to the skillet and scramble (leaving slightly undercooked).
  • Spoon eggs over the sausage.
  • Sprinkle with breadcrumbs (do not mix in).
  • On a floured surface roll out pastry to a 9x9 inch square.
  • Brush with melted butter.
  • Place on top of the baking dish (butter-side down) and "crimp" edges.
  • Brush the top of the pastry with more melted butter.
  • Cut about 5 steam vents in top of pastry.
  • Bake in a 350 degree oven for about 30 minutes, or until pastry is golden brown and the filling is bubbly.

Muffin cups are lined with puff pastry and filled with bacon and egg - a really easy and fun way to serve breakfast. I make it whenever there is a special brunch. It's best if you use more than 1 muffin pan so you can space out the puff pastry squares.

2 teaspoons butter
1 sheet frozen puff pastry, thawed
2 teaspoons Dijon mustard
3 slices thin-sliced bacon
4 large eggs
salt and freshly ground black pepper to taste
2 teaspoons chopped fresh chives

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease 4 muffin cups with butter (leave space in between the muffin cups).
  • Cut puff pastry sheet into 4 squares and place into the greased muffin cups in such a way that the 4 corners are draping over the sides. Brush bottom and sides of the puff pastry with Dijon mustard.
  • Cut each slice of bacon into 4 pieces and drape 3 bacon slices around the tops of the muffin holes.
  • Break eggs individually into a small bowl without breaking the yolks and slide into the muffin cups.
  • Bake in the preheated oven until puff pastry is lightly browned and eggs are set, 22 to 27 minutes.
  • Remove from oven, season with salt and pepper, and sprinkle with chives.

  • Heat a little oil in a medium skillet on medium-high heat. Cut open the sausage casings and add the sausage meat to the skillet, breaking it apart with a spatula. Fry for about 5 minutes, until the sausage meat is cooked through.
  • Push the sausage meat to the sides of the pan. Heat a bit more oil in the middle of the pan. Pour in the beaten eggs. Stir the eggs and sausage together, and add in the black pepper, fennel seeds and salt. Cook until the eggs are just set, stirring frequently. Remove from heat and mix in 1/4 cup of the cheese.
