1 cup canned chickpeas, drained and rinsed
1/2 lemon, juice and zest (about 2 tablespoons juice)
1/4 cup minced shallot or red onion
1/2 English cucumber (2 cups diced, or substitute a peeled standard cucumber)
2 roasted red peppers from a jar or 1/2 fresh red bell pepper (1/2 cup diced)
1/3 cup chopped dill, plus more for garnish
1/3 cup chopped mint
2 tablespoons white wine vinegar
3 tablespoons extra-virgin olive oil
1/2 teaspoon Dijon mustard
1 teaspoon dried oregano
1/2 cup feta cheese crumbles
1/3 cup Kalamata olives, halved
Black pepper

Steps:

  • Prepare the orzo according to the package instructions. Taste the orzo a few minutes before completion to ensure it's 'al dente' (chewy, but with a little firmness in the center). When it's done, drain it and then rinse it under cold water until it comes to room temperature.
  • Place the chickpeas in a bowl with the lemon zest, lemon juice, and 1/4 teaspoon kosher salt.
  • Mince the red onion, then place it in a bowl with water (this helps to remove the sharp onion taste). Dice the cucumber. Dice the roasted red pepper. Chop the herbs.
  • Stir together the orzo, chickpeas and bowl of lemon juice, red onion, cucumber, red pepper, dill, mint, white wine vinegar, olive oil, Dijon mustard, oregano, feta crumbles, black olives, and several grinds of black pepper. Taste and if necessary, season with more kosher salt.

  • In a large saucepan, bring broth to a boil. Stir in orzo; cook over medium heat for 6-8 minutes or until tender. Remove from the heat., In a small skillet, saute onion in oil until tender. Add garlic; cook 1 minute longer. Stir into orzo mixture. Stir in 1 cup cheese, spinach, red peppers, squash, salt and pepper., Transfer to a greased 13-in. x 9-in. baking dish; sprinkle with remaining cheese. 6 boneless chicken thighs (skin removed)
250 g orzo
1 stick celery (diced)
1 carrot (diced)
1 tsp salt
1 onion (diced)
1.5 tsp paprika
4 mushrooms (roughly sliced)
6 cloves garlic (left whole)
1 handful cherry tomatoes
1 lemon (juice only)
500 ml chicken stock (made with 1 chicken stock cube and boiling water)
1 handful flat-leaf parsley leaves (roughly chopped)
1.5 tsp ground allspice
0.5 tsp ground turmeric
low calorie cooking spray

Steps:

  • Coat the chicken thighs in the paprika, ground allspice, turmeric and salt and leave for 10 mins. In the meantime chop the vegetables.
  • Spray a large pan with some low calorie cooking spray and heat gently.
  • Cook the chicken thighs until they start to brown. Turn them over and brown the other sides.
  • Set the chicken aside.
  • Add a few more sprays of low calorie cooking spray to the pan, then fry off the onion, carrot, celery, garlic and mushrooms until the onion is soft.
  • Add the tomatoes, lemon juice and 100ml of the chicken stock. Return the chicken back to the pan and place in the oven with a lid on (or covered with foil) for 30 mins at 180°C.
  • Carefully remove the pan from the oven, add the orzo, parsley and the rest of the stock, stir, and return to the oven for 20 mins with the lid off

For the best flavor, dress the Mediterranean orzo salad while the orzo is still a little warm. Pasta that hasn't cooled completely will drink up the dressing really well. And allow the salad to sit for at least a few minutes (or up to an hour in the fridge) for the flavors to meld before serving.

1 pint grape or cherry tomatoes, (halved)
2 green onions, (trimmed and chopped (both white and green parts))
½ green bell pepper, (seeds removed, chopped)

½ cup packed chopped fresh dill, (about 0.5 ounces)
¼ cup sliced pitted kalamata olives, (about 1 ounce)
2 teaspoons capers
Feta cheese, (to your liking)
1 lemon, (zested and juiced)
¼ cup extra virgin olive oil
1 garlic clove, (minced)
1 teaspoon oregano

Steps:

  • Cook the orzo pasta according package instructions (mine took about 8 minutes). Drain and cool briefly.
  • In a large mixing bowl, combine the grape tomatoes, green onions, bell peppers, parsley, dill, olives and capers (hold the feta for now). Add the orzo pasta.
  • Make the dressing. In a small bowl, combine the lemon juice, lemon zest, extra virgin olive oil, garlic, oregano and a good pinch of kosher salt and black pepper. Whisk to combine.
  • Pour the dressing over the salad and toss until well combined and the orzo pasta is well coated with the dressing.
  • Top with pieces of creamy feta cheese. Cover and refrigerate for a bit before serving.

  • In a small bowl, whisk the canola oil, olive oil, lemon juice, oregano and salt and pepper until mixed. Pour the vinaigrette over the pasta mixture and gently fold until the pasta and veggies are coated. Taste for seasoning and top with the remaining feta cheese.

2 celery rib (chopped)
2 medium carrots (chopped)
1 small onion (chopped)

1/4 cup white wine or additional reduced-sodium chicken broth
1 carton reduced-sodium chicken broth ((32 oz))
1 tsp minced fresh rosemary
1 bay leaf
1 cup uncooked whole wheat orzo
1 tsp grated lemon zest
1 tbsp lemon juice
Minced fresh parsley (optional)

Steps:

  • In a large saucepan, heat 1 tablespoon oil over medium-high heat. Add chicken; cook and stir 6-8 minutes or until no longer pink. Remove from pan.
  • In same pan, heat remaining oil over medium-high heat. Add vegetables, salt, oregano and pepper; cook and stir 4-6 minutes or until vegetables are crisp-tender. Add wine, stirring to loosen browned bits from pan. Stir in broth, rosemary and bay leaf; bring to a boil.
  • Add orzo. Reduce heat; simmer, covered, 15-18 minutes or until orzo is tender, stirring occasionally. Return chicken to pan; heat through. Stir in lemon zest and juice; remove bay leaf. If desired, top each serving with parsley.
