GUACAMOLE APPETIZER SQUARES
For ages, my brother's family and I have gotten together on Christmas Eve, and always eat snacks while we open our presents. This Tex-Mex spin on classic appetizer pizza is one we have again and again. -Laurie Pester, Colstrip, Montana

Steps:
- Unroll both tubes of crescent dough and pat into an ungreased 15x10x1-in. baking pan; seal seams and perforations. Build up edges. Prick dough with a fork; sprinkle with taco seasoning. Bake at 375° for 10-12 minutes or until golden brown. Cool completely on a wire rack., In a large skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels. In a small bowl, beat cream cheese and guacamole until smooth., Spread cream cheese mixture over crust. Sprinkle with bacon, tomatoes and olives. Refrigerate until serving. Cut into squares.

- Preheat oven to 375°. In a small bowl, mix cracker crumbs and butter. Press onto bottom of a greased 9-in. springform pan. Place pan on a baking sheet. Bake until golden brown, about 10 minutes. Cool on a wire rack. Reduce oven setting to 325°., In a large bowl, beat cream cheese until smooth. Beat in cream and oil. Add eggs; beat on low speed just until blended. Fold in cheese, tomatoes and green onions. Pour over crust. Return pan to baking sheet., Bake until center is almost set, 35-40 minutes. Cool on a wire rack 10 minutes. Loosen sides from pan with a knife. Cool 1 hour longer. Refrigerate overnight, covering when completely cooled., Remove rim from pan. Serve cheesecake with crackers.

GUACAMOLE WITH SWISS CHEESE & SALTINES (APPETIZER)
A new take on typical guacamole recipes, adding saltine crackers, swiss cheese, and onions. A favorite prepared by my dad for years. Sounds weird, but the flavors go great with each other!

Steps:
- Cut the avocados in half length-wise; discard the pit.
- Scoop out the avocado, and put into a medium-sized bowl.
- Add the lemon juice, and mash well with a fork. Add the mayo and salt & pepper.
- Chop 1/2 a red onion finely and add to the bowl.
- Mix all ingredients together well (mashing again to make sure it's well mixed).
- Cut the swiss cheese into 2" square pieces.
- Assemble your crackers.
- Layer a saltine, a tsp of the guacamole mix, and a piece of the swiss cheese.
- Enjoy!

DELICIOUS ITALIAN AVOCADO APPETIZER
My mom gave me this reciped years ago. It is so different from guacamole. Here in west Texas, we get our share of guacamole and this is a welcome change. The flavor of the Italian dressing adds the zing, and the green chilis add a little punch. If you like it hotter, just add one chopped jalapeno. The avocadoes need to be firm enough to chop and not mushy like you want them to be for guacamole. Buy firm, not hard as a rock, avocadoes. Cooking time is for refrigeration. Enjoy!

- Peel and seed avocadoes, dice.
- Dice tomatoes.
- Chop green onion.
- Mince garlic.
- Add all ingredients to a mixing bowl.
- Stir gently together. Be gentle about this as you don't want to mash the avocado.
- Cover and refrigerate at least 4 hours for flavors to develop.
- Serve with tostadas or hefty chips.
- Enjoy all the compliments.
