4 teaspoons chili powder
1/2 teaspoon garlic powder
1/4 to 1/2 teaspoon cayenne pepper
4 boneless skinless chicken breast halves (4 ounces each)
1-1/2 cups shredded Mexican cheese blend, divided
1/3 cup mayonnaise
8 slices sourdough bread
1/2 cup salsa

Steps:

  • In a small bowl, combine the oil and seasonings. Rub over both sides of chicken. Grill, covered, over medium heat for 6-8 minutes on each side or a thermometer reaches 170°. , Meanwhile, combine 1 cup cheese and mayonnaise; set aside. Grill bread on one side until lightly browned. Spread with cheese mixture; grill until cheese is melted., Place chicken on four slices of toast; top with salsa, remaining shredded cheese and remaining toast.

6 large skinless, boneless chicken thighs (about 2 pounds)
Kosher salt
2 teaspoons ground cumin
1 chipotle chile in adobo sauce, chopped, plus 3 tablespoons sauce from the can
1 cup canned crushed fire-roasted tomatoes
1/2 medium onion, grated
2/3 cup ketchup
3 tablespoons plus 1 teaspoon packed light brown sugar
1/4 cup apple cider vinegar
1 tablespoon Worcestershire sauce
1/4 cup vegetable oil
2 cups shredded red cabbage
2 radishes, thinly sliced
3 scallions, thinly sliced
1 avocado
4 sesame hamburger buns
8 thin slices Monterey Jack cheese (about 4 ounces)

Steps:

  • Season the chicken with salt and the cumin; transfer to a 6- to 8-quart slow cooker. Add the chipotle and adobo sauce, tomatoes and onion; toss to coat. Cover and cook on low, 6 hours.
  • Remove the chicken to a plate and set aside. Transfer the cooking liquid to a fat separator. Pour the liquid into a small saucepan, leaving any fat in the cup. (Alternatively, skim off the fat from the cooking liquid with a spoon.) Add the ketchup, 3 tablespoons brown sugar, 2 tablespoons cider vinegar and the Worcestershire sauce to the saucepan. Bring to a boil, then reduce the heat and gently simmer until the sauce is slightly thickened, 3 to 5 minutes.
  • Meanwhile, whisk 2 tablespoons vegetable oil and the remaining 2 tablespoons cider vinegar and 1 teaspoon brown sugar in a large bowl. Add the cabbage, radishes, scallions and ½ teaspoon salt; toss. Set aside.
  • Heat the remaining 2 tablespoons vegetable oil in a large nonstick skillet over high heat. Add the chicken and cook, stirring occasionally and pulling it apart with tongs or a fork, until browned and crisp in spots, 3 to 5 minutes. Stir in all but ½ cup of the sauce; season with salt.
  • Preheat the broiler. Slice the avocado. Put the roll bottoms on a baking sheet; top with the chicken and cheese. Broil until the cheese melts, about 2 minutes. Top with the slaw, avocado and roll tops. Serve with the remaining sauce.

  • Using a fork, mash beans in skillet to course paste.
  • Season to taste with salt and pepper.
  • Arrange French roll bottoms on plates; spread with bean mixture.
  • Sprinkle chicken with cayenne pepper and salt.
  • Heat oil in a large heavy skillet over medium-high heat.
  • Add chicken to skillet and saute until just cooked through, about 4 minutes per side.
  • Top chicken with cheese slices.

6 each skinless, boneless chicken thighs, or more to taste
2 each skinless, boneless chicken breast halves
2 tablespoons ground cumin
2 tablespoons chili powder
1 tablespoon garlic powder
1 tablespoon dried oregano
2 teaspoons salt
½ teaspoon ground black pepper
¼ cup water
2 tablespoons cornstarch

Steps:

  • Fill a 6- to 8-quart pot halfway with water.
  • Wash and rinse chicken thighs and breasts thoroughly and place into the pot with cumin, chili powder, garlic powder, oregano, salt, and pepper. Bring to a boil and cook, uncovered, for 20 minutes. Reduce heat to a simmer, cover, and cook for 30 minutes.
  • Remove the lid and simmer for 10 minutes. Shred chicken in the pot with 2 forks so it can absorb some of the moisture. Simmer until stock has reduced, 20 to 30 minutes.
  • Mix 1/4 cup water and cornstarch together in a small bowl. Stir into the pot and cook until sauce is thick, about 10 minutes.

12 ounces canned chicken breasts (or 1 large cooked chicken breast)
3 ounces shredded cheddar cheese
1 avocado, diced
1/2 medium onion, diced
1 cup corn (frozen or canned)
1 large roma tomato, diced and seeded
4 leaves lettuce, sliced into shreds
3 tablespoons salsa
1/2 lime
salt and pepper
2 teaspoons taco seasoning
1/2 jalapeno, seeded and diced fine
4 flat bread (or 8 bread slices)

Steps:

  • Run your knife through the chicken breast to break up the larger chunks. Place this mixture in a large bowl.
  • Add cheese, onion, corn (thawed, but not heated), tomato, salsa and jalapeño.
  • Drizzle avocado with juice of 1/2 lime, then add avocado to the bowl.
  • Add 1/2 tsp salt, 1/2 tsp pepper and 2 tsp taco seasoning to the bowl, then toss to mix well.
  • Assemble your meal by warming a piece of flat bread, then adding a layer of lettuce shreds before topping with 1/4 mixture. Fold and enjoy taco-style.
  • **These are pretty large, filling serving sizes. If I was serving this with other dishes, I would probably estimate this would serving 5 or 6, depending on how hungry you are.

2 garlic cloves, minced
1 (15-ounce) can pinto beans, rinsed
1/2 cup reduced-sodium chicken broth or water
4 large soft white rolls, such as Portuguese (preferably oblong)
2 cups shredded roast chicken or pork
4 tablespoons crema or sour cream
12 to 16 slices pickled jalapeños with 2 teaspoons juice from can or jar
1/4 cup crumbled queso cotija (aged white cheese) or parmesan

You start with the famous soft oblong Mexican sandwich bread roll called "Bolillos" but any soft sandwich roll will do. It's sort of a burrito on a bun. You can also make them with seasoned ground or shredded beef (leftover taco meat perhaps?). I hope you like them!

4 (4 ounce) chicken, beef or 4 (4 ounce) pork cutlets
salt & freshly ground black pepper
1 cup all-purpose flour, for dredging
1 cup plain breadcrumbs, for dredging
2 eggs, beaten
vegetable oil, for shallow frying
4 telera rolls or 4 French bread
4 lettuce leaves (optional)
tomatoes
avocado
12 thin slices white onions
12 pickled jalapeno peppers
8 lime wedges, for garnish
1 canned chipotle chiles in adobo or 1/2 teaspoon hot sauce
1 teaspoon fresh lime juice
1/4 cup mayonnaise
salt & freshly ground black pepper

Steps:

  • Season the cutlets with salt and pepper, to taste. Put the flour in a dinner plate and season with salt and pepper. Put the bread crumbs in a second plate and the beaten eggs in a shallow bowl. Dip the cutlets into the flour, then the eggs and finally into the bread crumbs, pressing down on both sides so that the bread crumbs adhere to the meat.
  • Heat 1/2-inch oil in a large skillet to 350 degrees F. Pan-fry the cutlets in batches until golden, about 2 to 3 minutes per side depending on the thickness. Set aside to drain on paper towels.
  • To assemble the sandwiches, halve the rolls horizontally. Pull out the soft center of the slices and discard. Spread each roll evenly with the chipotle mayonnaise. Put the cutlets on the bottom halves of the rolls and top with lettuce, tomato, avocado, onion and jalapeno. Arrange the sandwiches on serving plates and garnish with lime wedges.
  • Chipotle Mayonnaise:.
  • In a small bowl mash together the chipotle chile, lime juice and mayonnaise. Season with salt and pepper, to taste.
