Traditional jam tarts are simple, cheap and so much fun to make with children. A great way to use up any leftover shortcrust pastry.

For the Pastry Crust:
8 ounces all-purpose flour
1 pinch salt
4 ounces butter (cubed; or an equal mix of butter and lard)
2 to 3 tablespoons water (cold)
For the Filling:
1/2 cup strawberry jam (or any fruit jam or lemon curd)

Steps:

  • Gather the ingredients.
  • Preheat the oven to 350 F / 180 C Gas Mark 4. Lightly grease a 12-hole tart mold with a little butter.
  • Mix the flour and salt in a mixing bowl. Add the cubed butter.
  • Working as quickly as you can, use a pastry blender or your hands to rub the butter into the flour until the mixture resembles breadcrumbs.
  • Add the water to the mixture 1 tablespoon at a time and use a cold knife to stir and bind the pastry together. Stop when the pastry comes together.
  • Wrap the dough in cling film and chill for a minimum of 15 minutes or up to 30 minutes.
  • Unwrap the pastry onto a lightly floured work surface and roll to a 1/4-inch thickness.
  • Using a tart cutter or cup, cut circles from the pastry just slightly bigger than the holes in the prepared tart mold. Gently press the discs of dough into each mold.
  • Place a heaped teaspoon of jam or lemon curd into the pastry-lined tins. Be careful not to overfill as the jam will bubble out when hot and burn.
  • Repeat until all the pastry is used up-you can squish the pastry trimmings back together and reroll as needed.
  • Bake in the preheated oven for 15 minutes or until golden brown. Remove from the oven and leave to cool completely.
  • Once cooled, serve and enjoy.

1 pack ready-rolled puff pastry, chilled ((preferrably light/low calorie pastry))
plain flour (for dusting)
3 1/2 tbsp apricot jam
3 1/2 tbsp blackcurrant jam (or strawberry, cherry, raspberry, blueberry jam)
1 free-range egg (for glazing)
icing sugar (to dust)

Steps:

  • Take the pastry out of the fridge 30 mins prior to baking.
  • Preheat the oven to 200C/180C fan.
  • Lay out a sheet of baking paper onto a large baking tray.
  • Dust the work surface with some plain flour.
  • Roll out the puff pastry onto the dusted surface. Using a rolling pin, roll it gently to all sides, so that it's even and a little bit bigger than how it came out of the packet.
  • Using a sharp knife, cut the pastry into halves horizontally, those halves into quarters and then do the same vertically - so that you get a grid of about 24 squares.
  • Grab two teaspoons, one in each hand. Add about 1/3 spoonful (teaspoon) of jam onto each square of pastry. Make half of it with apricot jam and the other half with blackcurrant or strawberry jam.
  • Take one square, bring two and two opposite corners together (diagonally), twist and turn, so that you get a little knob on top. This will help the pastry parcels to keep their shape. Repeat with the rest of the pastry squares. Place the pastry parcels onto the prepared baking tray.
  • Break an egg into a mug and whisk it with a fork until smooth. Using a pastry brush, glaze the pastry parcels with the beaten egg from all sides.
  • Place in the preheated oven and bake for 20-25 mins or until risen and golden on top.
  • Enjoy as it is or serve lightly dusted with some icing sugar.

1 sheet puff pastry, thawed
3 tablespoons raspberry jam
1 egg wash
1 powdered sugar, to taste

Steps:

  • Preheat oven to 400˚F (200˚C).
  • Cut the puff pastry into 9 equal squares.
  • Taking one of the squares, place 1 teaspoon of raspberry jam in the center.
  • Brush egg wash on each side of the square.
  • Take each corner and bring them together the seal the jam inside the dough
  • Flip so the pinched side is on the underside. Flatten with the palm of your hand until the patty is about 1-inch thick.
  • Make 8 even cuts around the circle making sure the cuts do not touch in the center.
  • Take 2 of the cut sections and turn them inward to create the heart shape. Repeat with the other 6 sections.
  • Repeat with the remaining pastry squares.
  • Bake for 15-20 minutes until pastry is golden brown and puffed.
  • Serve with a sprinkle of powdered sugar.
  • Enjoy!

2 cups all-purpose flour
1 cup shortening
3 teaspoons white sugar
1 teaspoon salt
½ cup water
1 cup jam

Steps:

  • Mix flour, shortening, sugar, and salt together in a food processor until mixture resembles coarse crumbs. Add water and mix until a ball is formed. Refrigerate pastry until well chilled, at least 30 minutes.
  • Preheat the oven to 400 degrees F (200 degrees C). Grease 24 shallow muffin cups.
  • Roll pastry out thin; cut into rounds with a cookie cutter. Place each round in a muffin cup. Add 2 teaspoons of jam to each cup.

After the price of Danish went up again at my local bakery, I thought, 'I could make that'. So here's a nice easy recipe for a yummy pastry treat using ready-made puff pastry. You can use any type of jam (jelly) that you like - ie - apricot, blueberry, plum, etc.

2 sheets puff pastry, thawed
8 teaspoons jam (jelly)

Steps:

  • Grease an oven tray and preheat oven to 200 degrees Celsius (400 Fahrenheit).
  • Cut 8 squares of equal size from the puff pastry sheets (or circles if you prefer).
  • Place two teaspoons of jam (jelly) on 4 of the pastry squares. On the other 4 pieces, cut criss-crosses for ventilation and for prettiness.
  • Press the criss-crossed pastry pieces on top of the jam covered pieces, and press together all around the edge using a little oil.
  • Bake in oven for 20 minutes until puffed and golden.
  • Allow to cool and enjoy.

All-purpose flour, for dusting
1 sheet (1/2 a 17.3-ounce package) all-butter frozen puff pastry, thawed
3 cups fruit, nuts and/or cheese (ideal for roasting)
3 tablespoons unsalted butter, melted
3 tablespoons brown sugar
1/2 teaspoon cinnamon or other spices
1/4 cup warmed honey, if desired
Puff Pastry Variations, recipes follow

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper or grease with nonstick cooking spray.;
  • Sprinkle the cutting board with flour. Roll-out the creases.;
  • Unfold the pastry onto parchment paper. Using a fork, pierce a 1/2-inch border around the edge of the puff pastry. Prick the center of the pastry as well, about 10 times all over.
  • Arrange the fruit, nuts, and cheese on top of the pastry in a uniform manner, avoiding the border. Brush the fruit with the melted butter and top with the cinnamon and sugar. Bake 15 minutes, until the pastry is golden brown and beginning to puff.
  • If desired, brush the honey over the fruit and bake for an additional 5 minutes. Serve warm with fresh whipped cream or vanilla ice cream.
  • Puff Pastry Variations:
  • Apricot Plum Tart: Cut 2 plums and apricots into 1/4-inch thick slices. Arrange on top of puff pastry and brush with melted apricot preserves rather than honey.
  • Rhubarb Tart: Thinly slice 8-ounces rhubarb stalks on the diagonal and marinate in 1 cup orange juice and 1/2 cup sugar for 10 minutes. Strain the rhubarb, reserving the juices. Arrange the rhubarb slices on top of the puff pastry. Sprinkle with white sugar. While the pastry bakes, reduce the rhubarb juices until it becomes a syrupy glaze. When the pastry finishes, brush the pastry with the glaze.
  • Pear, Pecan and Blue Cheese Tart: Slice 3 cups Bartlett pears and place on the puff pastry. Top with 1/2 cup chopped pecans. After brushing on the honey, top with 1/3 cup blue cheese crumbles.

FRUITY ALMOND PUFF PASTRY TART

We are making frangipane. It sounds super fancy, but it's code for a tasty tart filling times ten. It is most classically made with almonds, but is also tasty when you sub in the same amount of hazelnuts or pecans. The tart is usually either strawberry or raspberry with some sweet apricot jam to coat the fruit, but you can get creative with what you have on hand. Nuts with buttery puff pastry topped with tart fruit with a dash of jam? It takes me straight to the streets of Paris...

1 sheet frozen puff pastry (approximately 9.75 by 10 inches)
3/4 cup slivered almonds
1/2 cup sugar, plus extra for finishing
3/4 stick (6 tablespoons) unsalted butter, melted
2 tablespoons all-purpose flour
1 1/2 teaspoons almond extract
1/2 teaspoon ground cinnamon
1 large egg, lightly beaten
2 tablespoons apricot jam
2 pints fresh raspberries

Steps:

  • Preheat the oven to 425 degrees F.
  • Place the sheet of puff pastry in the center of a baking sheet fitted with parchment. Top the puff with another sheet of parchment. Place a baking sheet directly on top of the parchment on top of the puff pastry. This weighs down the puff as it bakes and makes it uniform.
  • Place the baking sheet in the center of the oven and bake until the puff pastry is partially cooked and lightly browned, 20 to 25 minutes. Remove from the oven and take the baking sheet and top sheet of parchment off the pastry.
  • While the pastry is baking, make the frangipane. In the bowl of the food processor, pulse the almonds until they become like a coarse, wet powder. Add the sugar, butter, flour, almond extract, cinnamon and egg and pulse until it forms a paste.
  • Gently spread the frangipane in an even layer over the puff pastry, leaving a 1/2-inch border, and place the baking sheet back in the center of the oven. Reduce the oven temperature to 400 degrees F. Bake until the frangipane and pastry are browned, 20 to 25 minutes. Let cool to room temperature.
  • In a small pot, warm the jam over low heat until it melts slightly, about 30 seconds.
  • Transfer the puff to a flat surface and use a serrated knife to gently cut into 9 even pieces. Arrange the pieces close together on a serving platter as if they make a whole tart. Drizzle some of the warmed jam over the top edges of the pastry and frangipane to create a "glue" for the raspberries to stick to the pastry. Arrange the raspberries over the top of each piece. Drizzle the remaining jam gently over the raspberries and finish with a sprinkle of sugar for added texture. Serve at room temperature. Refrigerate the leftovers (if there are any!!).

Bake our easy jam tarts and they'll instantly become a family favourite - plus, you can make them in less than half-an-hour if you use ready-made pastry.

250g plain flour, plus extra for dusting
125g butter, chilled and diced, plus extra for the tin
1 medium egg
1 vanilla pod, seeds scraped (optional)
100g jam, fruit curd or marmalade of your choice

Steps:

  • Put the flour, butter and a pinch of salt in a bowl and rub them together with your fingertips (or you can pulse these ingredients together in a food processor if you have one). When the mixture looks and feels like fresh breadcrumbs, stir in the egg and vanilla seeds, if using, with a cutlery knife. Add 1 tbsp cold water, then start to bring the dough together in one lump with your hands - try not to knead it too much. Add 1 more tbsp of water if it's not coming together, but try not to add more than that. Wrap in cling film and chill in the fridge for 30 mins.
  • Heat oven to 200C/180C fan/gas 6. Butter a 12-hole tart tin, then dust your work surface with flour. Unwrap and roll out the chilled pastry so it's about the thickness of a £1 coin, then use a straight or fluted round cutter to cut out 12 circles, big enough to line the holes in the tin. Dollop 1-2 tsp of your chosen filling into each one and, if you like, cut out little pastry hearts (perfect for Valentine's Day) and pop them on top.
  • Bake for 15-18 mins or until golden and the filling is starting to bubble a little. Leave to cool in the tin for a few mins then carefully transfer to a wire rack to cool completely.
