- Prepare rice according to package directions; set aside. Step 2
- Drain pineapple and reserve juice. Mix 1/4 cup juice with cornstarch; set aside. Step 3
- Heat oil in a large skillet over medium-high heat. Add chicken and brown for 5 minutes. Step 4
- Add the bell peppers and cook for an additional 3 minutes. Step 5
- Stir in plain pineapple juice, hoisin sauce, soy sauce, brown sugar, garlic salt, ginger and cook for an additional 5 minutes, or until the internal temperature of the chicken reaches 165°F. Step 6
- Add pineapple chunks, tomatoes and cornstarch/juice mixture, Cook until the sauce thickens. Step 7
- Serve over rice and top with cashews.

- Stir in rice and cover. Reduce heat to medium-low and simmer for 5 minutes. Remove saucepan from heat. Let stand for 5 minutes or until almost all of the liquid is absorbed and rice is tender.

Steps:
- Brown chicken in a bit of oil.
- Drain and return to pan.
- Drain pineapple tidbits, reserving liquid.
- Add water to liquid to make five cups.
- Add water/juice mixture to pan.
- Add vinegar, salt, garlic, and sugar as well.
- Stir and bring to a boil.
- Reduce heat, cover& simmer over low heat for 15-20 minutes.
- Remove cover, stir in rice.
- Return cover and wait 5-10 minutes or until liquid is absorbed.
- Stir in pineapple bits and chopped pepper.
- Heat through and serve.
- Can also add water chestnuts, bamboo, etc.
- at end if desired.

EASY CHICKEN & MINUTE RICE CASSEROLE
Very much a comfort food dish. Easily prepared by ingredients most of us have on hand in our pantry. So easy to make. You can also easily edit the recipe choosing soups you prefer, this is my favorite combination.

Steps:
- Preheat oven to 350 degrees (see baking instructions for alternate methods).
- Mix the 2 cans of soup, 1 can milk, and 1 cup of uncooked rice together. Add salt & pepper to taste.
- Pour above mixture into a 13x9x2 casserole dish.
- Cut the chicken into strips (about the width of a chicken tender/finger).
- Push the chicken strips down into the soup & rice mixture in the casserole dish so they are completely emerged.
- Sprinkle top with lemon pepper/salt/black pepper.
- Bake at 350 degrees 35-40 minutes or until chicken is finished. NOTE that cooking time will vary depending on how you choose to cut up the chicken. If using whole chicken breasts cook at 375 degrees for 45 minutes, or until finished.
- You may also choose to make this in a crock pot, if so, cook on low 7-8 hours.
- My family loves this recipe and it is SOOOO easy to make, plus I usually have all of these ingredients on hand which makes for a quick meal.
- I love the flavors of the rice so much that sometimes I will make it without the chicken as a quick and easy side dish!

- cook chicken until it is done, boiling is quicker. ( may also use chicken with the bone in & skin on but will need to boil until cooked through then clean & seperate, for this method use either 4 thighs or 2 breasts).(use more chicken if feeding more than 3 persons, and increase amounts of salsa & preserves to make up the difference).

- Place uncooked rice in 9 x 13 glass baking dish.
- Top with uncooked chicken breasts.
